dreaming about for years years you know know guys that I'm a GE when it comes to pizza but I'm also a big fan of pizza like just on my phone I've got 464 photos of pizza right now on my YouTube channel I've released two entire series just about pizza I've traveled for pizza I've made the absolute best pizza chef on the planet learned from them but I've also cooked with them and I've tasted obviously their Creations you get it pizza is a sacred dish for me between my professional and my personal life I've probably cooked hundreds and hundreds of pizza any style thick thin round Square crispy chewy you name them now I must say that there is one style that I particularly cherish and it's the Neapolitan style puffy edges a leopard spotted crust and steamy melted cheese when it's done right it's absolute perfection now the main problem is that this style relies heavily on temperature you can't bake a neapolitan pizza unless your oven can reach 400° C or 750° F no domestic oven can do this unless of course you're willing to I don't know make your own oven out of the domestic oven unwire rewire everything void all warranties unless you want to do this you can't make neapolitan pizza and that is exactly how how I've been thinking for years because I did not have an outdoor space if you have one there is a solution besides of course building a massive brick Neapolitan oven out of the question but there is a very simple affordable is solution and it's called a portable Pizza Oven they are compact metal construction Ovens that can reach very high temperatures in a short time while consuming relatively very little fuel there is a brand that immediately comes to mind uni before going any further uni is not sponsoring this video honestly I wish they were considering how just the oven I want to see how much the oven impacts the pizza that I bake okay so the temperature seems to be just right let's just slide in the very first pizza excited [Music] yes [Music] my pizza ever with my un oven I got a few comments about it I know I burnt this bubble in the oven badly but it still looks better than most pies I've done in my life if you're wondering why I'm whispering while being outside it's because I'm I just moved in I'm a little shy I don't want to be that neighbor i' said that the dog could be cooked a little further especially on the [Music] floor it tastes like a pizza you would have in Naples it's soft it's jewy it's fragrant it's very light still is a bit crispy on the edges When I See This and the very minimal amount of effort required to create this beautiful na napolitan Pizza I feel a little ashamed because in the past I've been through Hills and Valley tweaking thing has been reengineering my oven and here I did nothing I'm going to hand one to my camera b l the bottom is a little undercooked yeah does it feel like a pizza very much I'm looking at this pie and I'm thinking for a very first pizza this is promising now I'm going to try another pie to see if I can get the bottom to be cooked a little further let's do [Music] [Applause] this same player shot again I feel like I did a much better oh yeah so we got something that is almost impossible to get with a normal oven this this is very hard to get also you've got all these little spots usually we call them the leopard effect also I should mention that I love my pies to be cooked a little further I love when they go slightly beyond the expected up I forgot the basil one for each slice there you go this is not looking exactly like an air poan pie it looks more like a New York style Neapolitan a Neapolitan you can never get it to stand like this much much better as a good YouTube host I'm supposed to describe what I'm sensing but as a human being I just want to dig in I might never go back to making pizza in my domestic oven why would I I'm Amazed by the look of this piz especially by the crust puffed up Airy it's bubbly but to really understand how much of a Wonder this is we need to get back to Pizza Basics pizza dough is traditionally made from flour water salt and yeast when you mix these ingredient together you create a dough and if you let it rest it rises basically what happens that the yeast consumes the sugars in the flour and then it just burps and it farts creating thousands if not millions of small gas bubbles it's a little disgusting I know but it's devilishly effective for what's coming when you bake this though in the oven two things happen simultaneously the first one is that the heat causes these small bubbles to expand and turn into real air pockets that's what makes pizza so Airy and so fluffy the second thing that happens is that the heat also solidifies the dough it turns a soft lump of raw dough into a solid piece so between these two things it's a bit like a race if the structure solidifies before the bubbles have time to expand you will end up with a flat and crunchy Pizza my but if if the bubbles expand before the entire structure asigned to fully solidify you'll get a well puffed Airy soft and chewy Pizza in the end a great way to make sure the bubbles win is to apply intense and sudden heat when baking the pizza it makes it Go puff and that's exactly what's happening in a portable Pizza Oven okay let's go back to cooking more and more pizzas as with everything my pizzas got better with time like the second was better the third even better and the fourth was probably the best even though the shape was a bit weird but I think the thickness of the dough and the width of the disc before I place it in the oven was just just right so in the end I wouldn't say that I'm satisfied with this pizza oven I am ecstatic the pizzas that I've made were great sure they could probably be a little closer to the Neapolitan Perfection with a slightly better heat control better timing but in the end if you consider that this was my very first time using a portable Pizza open they were amazing and I'm usually pretty critical especially with myself I mean now I understand perfectly why these pizza oven are so popular and why they have changed the the pizza game so much it's quick it's easy and also it just allows any cooking Enthusiast to make fantastic pizzas I guess these are things I expected somehow but there is something I did not expect this is almost like a magnet for people people I was cooking my pizzas and everybody started stopping by people were just Dragged In by the smell by the action just drags people in now obviously with a bit of perspective it's logical everybody loves pizza everybody loves a party making pizza with an oi oven is a pizza party so everybody loves that I just moved here very recently and it was a great excuse to meet my neighbors you know like conversation seems to be smooth with a slice in the hand and sometime a glass of wine as well but a slice works pretty well so I guess that's it for me uh we'll catch up in the next episode I promise I'm going to
