hey everybody Welcome to t- Roy Cooks I really appreciate it thought I would bring you along we're going to make some pepper jerky I've been hungry for some homemade jerky we're going to do it in the oven for you let me show you what the ingredients are we're working with I'm going to try to keep it real simple for you folks it's going to be good though in the end y'all check this out okay everybody as you can see I'm keeping it really simple this is the meat that I'm using this is a beef top round and I chose it because it doesn't have a whole lot of fat and gristle in it and I went ahead and had my butcher uh trim this up and slice it up for me if you're going to try to slice the steak yourself or the roast yourself a top round would be an excellent choice a flank steak would be excellent but I've got this uh top round you can use bottom round too doesn't matter or uh eye of round will work fine again anything that doesn't have a whole lot of uh gristle and fat in it cuz that fat will turn rancid on you but if you need to slice it up yourself put this meat or put your roast into the freezer for 30 to 40 minutes kind of firm it up a little bit that'll make it a whole lot easier to slice by hand uh that's another reason I want to just had my butcher slice this for me keeping it simple with the ingredients you'll notice there's no soy sauce here I have some lry seasoned salt uh Li imp peran Wy Shear sauce some red pepper flakes crushed this is some lry seasoned pepper and I've also got some regular fresh cracked black pepper um and again I'm going to use some kind of cola you use your favorite cola this 12 oz can I hope that's enough if it's not I got some more Cola we can add to it let me get these parts measured up out and click show more down beneath the video and put my meat in the marinator here as you can see and um I'm not going to use this CRA cracked black pepper back here in the back quite yet I'm going to use that right before we put it in the oven I got my Cola here I'm going to mix in some Wier Shar okay throw in my seasoned salt you can use any brand seasoned salt you want that be fine black pepper seasoned black pepper red pepper flakes whisk all this together real quick when it feels like everything's mixed together and every all the different seasonings are absorbed into the liquid we're just going to pour right over just like this what we're going to do is uh marinate this probably I'm thinking at least 4 hours but over overnight probably work too I'm not sure I've never marinated beef overnight with some coal in it so I'm not sure if it'll overcook it or not but uh now it's time to get dirty make sure your hands are clean folks and dig in and mix all this together okay once you have it all mixed together we're going to put the lid on it give it a nice Shake try to separate these different lengths right here you know just separate all the meat so that the marinade can penetrate all the different slices and uh again put the lid on give it a nice Shake we're going to leave this marinating I'm saying at least 4 hours and we're going to probably flip it over every hour to hour and a half maybe and uh we'll meet you back here when we're getting ready to put it in the oven I want to thank all of you who were just hollering at me saying hey man you're doing in in the oven where's the smoke flavor coming from man I put the lid on I was shaking this baby up real good see it's all nice and mixed up I forgot to add some liquid smoke so let's do that right now give this a good shake and I like this brand this colan brand it's pretty good uh I've got natural pecan right here that I'm using and let's just let's just put maybe a tablespoon in here doesn't take a whole lot this is concentrated stuff right here there you go now put the lid on it give it a nice few shakes put it in the fridge we're going to let that marinade we'll catch you back when we're fixing to dry it out and put it in the oven all right everybody this has been marinating for like 4 hours you can definitely let it go longer but I just want to show you got a layer of paper towel down here and I put just layered by layer I'm going to put layer of meat another paper towel another layer of meat and we're just going to keep doing this just to kind of get the meat a little bit dry and if you got a really little really long piece just bust it up like that right there so that's how we're going to do it and we'll meet you back here after we get all the paper towels and layers going we fixing to throw it in the oven now I've got this uh this cookie sheet here and I sprayed it down with some cooking oil and also have one of these cookie cooling racks and I spray that down with some oil as well so let's go ahead and see how we're going to do this take your paper towels off of there all right and we're just going to lay each of these pieces of meat across like so and I'm going to do this with the whole batch and then we're going to put it in the oven I got my oven preheated to 170 F which is is the lowest that my oven will go and it is a convection oven but I do not have the convection going it's just using it as a regular oven right now so once we finish putting all the meat on here and I've got another tray as well we're going to uh see if that's going to be enough trays and uh we're going to let this cook until it's done and and right now it is 3:15 p.m. and we're going to see how long this takes to cook and these pieces again they're individually uh cut so depending on the thickness and the size of the slices that you're putting in you know your your yours may vary a little bit as far as cooking times go but all in all it's going to be fabulous we'll catch y'all back here I'll let you know how long it cooks let me get the rest of this uh this other tray going and we'll be right back okay everybody I wind up with three trays we're going to go ahead and put in a little bit of a fresh cracked black again this is peppered jerky so you want some fresh cracked black on it sprinkle it on all of the [Music] jerky and what we're going to do again pop this in the oven oven's uh 170 F I'm going C this bottom tray right here but I just want to show you real quick see if I can show you what we got what we're working with here again you can see the time up there it's now 3:24 let me zoom in a little bit 324 folks 325 170 I'm going to go ahead and start putting some of this in there it won't go that way that way going that way and let's see I may be able to go may not be able to go okay we're going to save the other tray for another time we got two trays in there we're going to let those go until they finish and I'll bring you back here in a little bit we'll show you what time it is see how long it took it's going to be good got stick around it's been 4 and 1/2 hours let's go ahead and pull this out and uh I'll show you what it looks like here very shortly be right back folks that's what we've got folks it's uh again 4 and 1/2 hours into it and uh it looks really really nice you know there's no shiny stuff on top you know the the the moisture itself is gone and as you can see it's still flexible tears just like jerky let's give it a taste let's see what this looks like here we go down the [Music] hatch you get a lot of Sweetness from that Cola and I'm not a huge soy sauce fan so I'm liking that it doesn't have a lot of soy sauce and doesn't have any um but you get that Wier sheer sauce [Music] flavor it's really peppery and that red pepper flakes actually give it even more pepper flavor that's good stuff what do you think about it Karen I like that it's um still tender and you don't have to yank it off with your tee it's chewy um and it's fre the way I like it I think it's really good that's thumbs up thumbs up that's good stuff folks again the cooking time depends on the thickness of your meat so this is just something to judge you by really peppery I love
