hello y'all chef Jeffrey back here with another video hey I'm doing something very simple very southern very old-school country old-school fried chicken who doesn't like old-school fried chicken who doesn't like fried chicken I'm gonna show you the way I'll do it my method and we'll go from there I got Nathan sighs my favorite teen cooks eggs inside I love my legs and thighs anyway I'm gonna season with salt and pepper I do white pepper in mind some people use black pepper but my mixer people always add what are you I use kosher salt and ground white pepper that's my mixture with all my season make sure you got to make sure you season it very good the chick survey Devon you see what I'm doing I let this chicken sit some time 24 hours is best but 6 out 6 to 8 hours is even better six hours 8 hours is best 24 hours is even better because you want to marinate and all that to get all into the into the bone the chicken okay I got eggs here I got Louisiana Hot Sauce I'm gonna put in the eggs think I'm crazy but if you do this you gonna have the best play before thigh cheeping your application I've been doing this for years like this mix that up in there so what I got here again this let's go back and rewind here I got eggs hot sauce salt and white pepper this on top of this it's gonna be for this afternoon fry this chicken off so anyway and then sit in this marinate 8 hours 24 hours is even better be more to the bone so anyway I'm gonna let this marinate and I'll be back in about 8 hours we're gonna Friday solve this is best of all I've got some crispy whole school fried chicken with me right back all right y'all I'm back here ok I had my chicken marinated about 8 hours here hold that all that good marinated went all the way to the bone like I say you can do it for 12 hours you want to 24 hours the longer the better so what I'm gonna do now mix it up a little bit more and I'm gonna drain this off marinate off in the sink and it's all under like I said I always use these bags I like to shake my get your hand left dirty you know I use that for my braiding also I got my skillet heating up here with best of all okay got all-purpose flour then I'm gonna put baking soda in it in my flour what this does it creates a little crispy or crunchy crust on your chicken I found out this chicken they're just off the towel and put in oil there we go all this heating up there nicely nothing like bill fried chicken of course you know you don't want to overcrowd your skin one whole piece in there there we go another thing I do it says chicken seems to get too dark now put it on the sheet pan and finish them in the oven but it's gonna take about 15 minutes inside for the chicken they get completely done so I'm gonna be right back when I turn the chicken but we gonna see how it look on a turn down the side I'm gonna do the whole process and finish all this chicken I'll be right back all right y'all we back here chickens ready B turn okay look how golden brown chef what you want nice golden brown color on that sofa see that that's what you want is golden brown that's what you want she's gonna let that cook a little here 50 milliliter like I say sometimes it's not cooking properly I'll finish it off in the oven on my sheet pan with right but this new chicken is doing very very good so anyway we'll be right back when I take this one out I'll put the other one in we'll be right back [Music] all right and I see a photo wallet though I mean baking powder baking powder in the flower not baking soda okay just one here frying make sure you shake all the excess flour off I mean who has an eighth cook fried chicken very simple to me if I can get these other two in there all in one shot here [Music] one more in there there we go alright alright we're gonna let these brown off here I'll come back later when we turn them I gotta say we got these nice pieces here drainin nice and crispy and we'll be right back when we flip these over alright y'all here turn this one over just a second batch here let's play nice golden brown color that's what you want on you keep a nice golden brown one more piece here nice and crispy okay turn the fire on just a little and let it cook on this side and we'll be right back made it cooking huh night good old smell a fresh fried chicken fresh old-school fried chicken I'll be right back all right Riley back okay nice all the brown and what I do like I say I'm gonna put these another about ten minutes we'll be right back I'm gonna clean it up and we're gonna taste this good old chicken and see how it is why
