every challenge this week will be based on one of the four classical elements earth air fire and first up water standing here looking at this setting being by this river and the smell you smell the eucalyptus trees i mean it's just beautiful it's absolutely beautiful i want to see you suck up every single bit of sensory kind of awareness your environment be in the moment and that for me is that's a dream [Music] so guys all the ingredients in the mystery box today have been especially chosen by heston himself and inspired by water they all come from the murray catchment except for one show us what you've chosen some crackers there we've got some corn got some olives some oranges yep the legend that is the murray cod it's so beautiful here we've got some vine dried currants salt bush oats and i'm fairly famously known for making porridge so of course the addition special ingredient some snails heston snail porridge is famous for it in every book and it's the perfect example to show off his way of cooking so brain's wearing away you've got 75 minutes you have the usual pantry of staples and because heston's here a couple of little extra things we've got some agar agar tapioca multidextrin soy lecithin liquid nitrogen and dry ice so something to smile about something to get excited about now we're only tasting the three most appealing dishes so a lot rides on this challenge and there'll be just one winner and of course that winner gets the all-important advantage in the next challenge the invention test [Music] ten seconds nine eight seven six five four three two one that's it time's up well done i'm really confident with this dish but to be honest when i suddenly look to my left and look to my right awesome oh so so beautiful the competition is fierce fishing bit over i think definitely not one of my best dishes i've put up yeah doubtful of being top three [Music] what a fabulous first cook along the marvellous and wonderful banks of the murray river and of course you have those beautiful ingredients selected by heston remember we're only picking the top three dishes to taste the winner gets that all-important advantage in the next challenge the invention test the first dish we like to taste belongs to diana wow [Applause] i can't believe it i'm actually getting my dish tasted by hassan today so i'm really really proud right diana what did you cook so today i made a steamed cot rolled in salt bush dust smoked corn puree and some sauteed snails walking along the benches the reason we liked it was just bright you know it's colorful and the fact i think too that used an interesting dust and that corn puree looks silky smooth and yeah and beautiful let's taste [Music] i really really enjoy that dish the snails are nicely cooked delicious exciting dish there's some real sophistication there the beautifully cooked murray cotton and that really is just impeccably cooked in a beautiful looking dish i love it congratulations on taking that risk cooking snails for the first time um because they can be quite daunting for a lot of people and snails are delicious beautiful well done thank you well done thank you thanks so much i am beaming inside i'm so happy um to hear those words coming from hassan is incredible the next dish we'd like to taste belongs to sarah [Applause] [Music] today i've cooked a butter poached cod with charred corn and dehydrated olives as well as an orange and salt bush vinaigrette in the dressing fresh salt bush orange juice vinegar orange zest and some of the fresh olives as well [Music] [Music] i love that kind of you know dark caramelized corn the olive i think is absolutely delicious for me all that crispy salt bush is brilliant the fish is still a little bit kind of pulley marginally under it's still an enjoyable plate of food though yeah thank you well done hold on thanks guys [Applause] i've had great feedback but there were some points of improvement i don't think i've won the advantage this time we're also in our top three connie what [Applause] thanks [Music] i've made pan fried cod with salt bush cakes olives and an orange sauce it looks really interesting i think that's one of the reasons we picked it the deep fried or crispy salt bush it's kind of riverbank you know the eucalyptus leaves thrown across this you're quite happy yeah really happy i just i just that's great for me makes me want to eat that even more oh good [Music] sounds nice [Laughter] [Music] as you can see gary's still eating we're all nibbling i love it to bits these got a beautiful lightness to them you know spring onion pancake and using it with salt bush i think you've nailed the flavour i think it's because it's interactive because getting in there with your your fingers and and eating it it's just really delicious i love the fact that you brought us something from your experience to china but you've combined it with two ingredients they're really quintessentially australian the murray cod and the salt bush and that fish planet can be cooked better you've certainly made this a very difficult decision thanks carl thank you so much thank you [Applause] to have my dish tasted by heston is something i would never have imagined in a million years and for him to actually like it is another thing so i'm feeling really amazing [Music] not a long deliberation and it's quite easy when we love what we're eating so well done to the three of you carly loved that salt bush pancake light crisp love that tumble of salt bush itself and the fish beautifully cooked thank you diana again the fish cooked beautifully and that hint of olive and salt bush and orange that ran all the way through the dish sarah these lovely caramel flavors you achieved on that corn with the olive it was delicious but we only love one and that belonged to diana well done is that the first mystery box win yes fantastic what a week to win a mystery box i'm super stoked i can't wait to see what's in store you
