welcome to Mimi's kitchen well it's the first day of spring but I'm going to tell you if you walk outside you certainly will not believe it the sun is shining that's true but y'all it is cold and you can't get out there without a sweater so we're just making the best of it though we're just thankful spring is here so we love the sunshine y'all today we are going to be making a pound cake everybody loves pound cake and you can serve it in all kinds of ways so if you have my cookbook turn to page 102 and that said Memphis pen pound cake because that is my mother and this was her pound cake and I just I love it it's I've tried lots of recipes but I'm going to tell you this one is the best all right now today we are going to just get started right here and guess what we don't have to set the oven today um this is called a coal oven pound cake so what you do is you mix it you get it in your pan you put it in the oven and then you set the oven so that will come later all right the first thing is three cups of sugar so we'll just get that started so that's one two and three okay that's a little hard for KK to try to get in there and get that tiptoes all right now unsalted butter two sticks of unsalted butter and it needs to be at room temperature so I sat this out this morning so it would be soft enough so we're gonna drop that just right in there and then drop the other stick and this also calls for Crisco so all right a half a cup of Crisco now if you use the Crisco sticks like I do they're different from butter now um the Crisco stick is one cup for a whole stick so a half of that stick is a half a cup and so a half a cup of Crisco and I'm gonna tell y'all when you look at those Crisco sticks eyeball what is half because a lot of times they have wrapped that thing and it's not a half is not actually a half all right we're just gonna put our beater on here and we just go turn this on okay and let that mix with just a few minutes until it gets well Blended and that butter and sugar gets acquainted with one another oh y'all I do the jumbo the jumbo puzzle in the paper and guess what one of the jumbled words was today butter oh it just threw on me will it this this calls for five eggs and so what it says is to put them in individually so all right we're gonna put that in there so what you do is once the yellow breaks that's good enough so we're gonna put these other four in there and we'll be right back okay here's our last one number five and y'all I use egg lens fast extra large eggs all right put that in there and then we're just gonna let that mix around yo what do I have to mix this a whole lot at this stage of the game because at the end of this you let this thing mix for 10 minutes so all we're trying to do is get the ingredients and that we don't just dump them in there but we're gonna get the ingredients in there so all right the next thing is three cups of all-purpose flour and one cup of buttermilk now if you don't have buttermilk you know you can make your own so it's what you do is just a cup of regular milk and a teaspoon of vinegar just white vinegar all right so what we do is we alternate here so I'm gonna put in one cup of flour and then I'll put in half of this buttermilk I'll put in another flour the rest of the buttermilk and then the third cup so and all right I want y'all to see me do this one cup but then you know I have to watch every cup all right I cut my mixer also a little I mean KK don't get a flower bath all right so you cut it on kind of slow because if you don't it's gonna go flour all over you it's so pretty all right we'll be right back okay I put in a cup of flour then I put in a half a cup of the buttermilk then I put in another cup of flour and y'all that's all-purpose flour I think I said that but just in case and then we do one more cup of flour here at the end [Music] okay that let them get acquainted with one another and then we're gonna put our vanilla in there and y'all know I don't measure so that's a good generous teaspoon of vanilla all right now we're gonna let this mix a minute I'm gonna scrape the sides of the bowl down so everything is incorporated into the fetus of the mix and then we'll be back and I'll show you we'll set our time okay we're going to set our timer now because this beats for 10 minutes and y'all that's very important and so that's why I said when you're mixing it along you don't have to you know feed it in tween and all that we're just trying to get all the ingredients in the bowl and get them well acquainted with one another and then we set our timer on 10 minutes and then you just let it mix you you don't have to stand you don't have to do anything to it you don't have to be doing anything just let it mix and when that timer goes off we'll be ready okay y'all that was the magic sound okay yo this is funny KK who does not cook much her husband always says if he needs to hide anything from her he puts it in the oven so that'll give y'all some idea all right we're just gonna get as much of this cake batter off of here as we can oh goodness y'all remember when we used to lit the The Beatles I don't guess anybody licks the Beatles anymore tell them about the mixer that's what she started to tell oh yeah yeah one of those good times it was KK knows something she said well mama she said what if you don't have one of those mixes well good news for you you can use a hand mixer you just mix it in a bowl and you use the hand mixer like we use this the only thing is when you come to that 10 minute part guess what you cook you stand there and you do it 10 minutes because y'all that's what makes the consistency of this pound cake so wonderful and it is so light oh my goodness y'all it is so good and I just love to take it to people when it's warm oh my son and his wife over here one day and I took one out of the oven I just sliced it and put it right there on a plate for them and they had it right out of the oven oh no that's next to Heaven Too the truth all right I always keep a pound cake on on my camera so if you come by to see me guess what we'll have a pound of cake and iced tea all right all right there in the oven we're going to set this on 300 degrees 300. okay and then we're gonna set our timer for an hour and a half voila so I guess we could just do something this afternoon but um but anyhow we're gonna let this cook and we'll just let you see the end results after a while okay y'all oh this house smells so good yes it does okay yes oh y'all look at that in that beautiful I'll sit it right there on that cooling rack and then what I'm gonna do is I'm just going to push these in a little bit okay and then we're just going to let it cool for a little bit okay oh y'all this thing smells so good yo look at that pretty little plate that was my husband's mother's China isn't it pretty all right oh y'all I'm gonna tell you this thing Kayleen it smells so wonderful y'all yes oh my goodness I wish I were here and you could have a piece of this cake I keep a pound cake on my counter so if you ever come by to see me we can have a piece of pound cake now you can serve this in a number of different ways now when we think about Easter coming up and we'll think about things you know that we need to have on hand for dessert this is perfect because you can serve it just plain just like this you can put strawberries on it you can put ice cream on it you can put Peaches on it just any number of things and dress it up put your little whipped cream on it and maybe drizzle some chocolate syrup over it I want y'all to look at my my snowballs now they're green right now but y'all this is Chinese Snowball next week they will probably be white they'll be Snow White and I'll get Kayleen to go out and um take a picture of the bush Okay can tell you it is beautiful well I have two of them actually and they're about 25 feet high and they probably have a thousand snowballs on them so it really is a beautiful sight so it's something that I enjoy my neighbors enjoy it everybody that rides by enjoys the snowball so it's just something that everybody can um just look at and it's one of God's wonderful Creations that's what we love so about it all right I hope all of you have just a good rest of the week now we'll tell you one thing after this since a day or two slice it put plenty of butter on it broil it toast it oh that's the way a lot of people like it so it's good and with sweet tea coffee whatever you prefer we like sweet tea here so everybody have a good rest
