[Music] sweet Ontario maple syrup the liquid gold of spring [Music] tramping through the sugar bush to collect SAP in the spring is a tradition passed down from generation to generation [Music] throughout history the source has always been the same the glorious maple tree whose leaf adorns a national flag of Canada sugar and black maple are the most common trees in sugar production red maple and silver maple are also used these trees native to eastern Canada and the northeastern United States are used to produce maple syrup in short that means all the world's maple syrup is produced in North America with over 80% coming from Canada also like the wine vineyards the taste of the syrup not only varies from region to region but also from farm to farm it is a change from season to season that produces a SAP we've grown to love in the summer sunshine the growing trees produces food for itself through photosynthesis the SAP travels through the SAP would up the length of the tree and into the branches in the autumn the excess food is stored in the base of the tree and in the roots where it remains frozen during the winter months with the rise in temperature as spring approaches the SAP begins flowing the tree is tapped by drilling a hole into the SAP wood to release the SAP each season is as important as a next in the production of SAP [Music] with tab abode trees range in an age from 40 to 150 years it is important to ensure proper tapping in no way harms the tree today's farmer not only takes great care of the sugar bush year-round but he's also able to use more advanced techniques in SAP collection and processing most syrup producers use plastic tubing that runs from tree to tree and finally down the line to the storage tank [Music] the tubes not only cut down on the manual labor they allow today's farmer to tap trees that were once too difficult to reach the workload of the season is now spread out over many months tubing is set up before the season and cleaned after the season reverse osmosis is a process that removes the extra water it removes 50 to 70 percent of the water present in the SAP prior to boiling which greatly reduces boiling time and the amount of fuel needed for the evaporator it takes about 40 liters of SAP to produce 1 liter of maple syrup the evaporator is the heart of the maple syrup operation it churns maple sap into maple syrup all the pans are stainless steel the first one is a large flue pan designed for fast evaporation of the sap the small pan has a flat bottom to help with the criminalization of the syrup for finishing it is important to keep a constant watch on the boiling process to ensure the sap reaches the proper density as the SAP moves through the pan we can see the change in the color and texture as it becomes syrup maple syrup is thicker than water so it boils at a higher temperature the Finnish syrup is drawn off after has reached 4.5 degrees Celsius above the boiling point of water this ensures a syrup is 66.5 bricks which is the industry standard unit of density this syrup is filtered to produce a clear product and packaged hot at 85 degrees Celsius into containers designed for maple syrup [Music] there are four grades of syrup golden with a delicate taste amber with a rich taste dark with a robust taste and very dark with a strong taste the darker grades have a more distinctive maple flavor [Music] there are many fine products produced from maple syrup maple sugar maple butter maple cream and granulated maple sugar and we must not forget about maple baked goods maple syrup and sugar have been used in cooking for hundreds of years including everything from baked beans to rice pudding from maple tarts to maple popcorn as well as candy all you need is the recipe and some pure maple syrup whatever the product the most exciting time to buy is during the sugaring season in early spring many areas of festivals during this time of the year for offering trips to both the sugar bush and sugar house and of course there is always time to have a taste the largest of these festivals is held in Elmira Ontario as with the other festivals it is a perfect chance to get a taste of everything maple weekend is held the first weekend of April every year this event allows you to go directly to the farms and see how maple syrup is made [Music] maple products can be purchased year-round in farmers markets and specialty stores remember sweet Ontario pure maple syrup as a taste second to none a pure 100% natural sweetener [Music] you you
