hey guys it's maple syrup season and these trees are ready for tapping i'm here at the courtright center in the heart of a sugarbush and we're going to learn how to turn this into this hi heather jonathan i'm the education coordinator here and uh today i'm going to show you with making maple syrup now the first thing is actually tapping the trees flow sap so right now the sap is 97 water and like three percent sugar in there uh so we're gonna have to boil off that water this is the first nations method of making maple syrup they didn't have the metal pans that we're gonna see later on so they're gonna use the hollowed out log i saw you put some stones in the fire as well that's right they're warming up in the fire and uh what we're going to do is use some antlers pick up the rock dump it in there so there's the steam coming off so that's the water reducing so they boil it down until it's uh pretty pretty thick yeah we're gonna use some birch bark and you can pour it in there it'll cool down into basically a solid chunk like a maple sugar yeah exactly awesome definitely a really long hard long arduous process and no matter what when it was finished what was in here would have been treasured oh yeah for sure they're working the sap out of me this maple syrup is hard work it is it is you don't need any exercise classes down here you're an educator here at the courtroom that's right and what i'm thinking is how this is preserving kind of a lost art kids are having fun they're outdoors they're gaining an appreciation for really incredible it's wonderful hi boys and girls my name is pioneer and i've got an assistant here jonathan and i i hear he's a very good cook and he's down here to learn about maple syrup too how long does this take to produce 24 hours 24 hours 24 hours sometimes we sleep down here in the woodshed these kettles hold 60 liters of salad and how much you left with in the end one and a half that's incredible if the level of the sap goes down in volume and the sugar concentration goes up i'll show you number two keto yeah so it's a little more caramel in color and i notice there's a little bit of fragrance here number three kettle we're left with wonderful liquid gold liquid gold maple syrup canadian tradition it's like heaven can you believe how much work goes into making maple syrup one two three cheers cheers to all the people okay i think i think you're gonna be wired if i give you any more looking good there jonathan welcome to the sugar truck thank you robin is going to show us the modern way to make maple syrup oh it's a lot easier nowadays jonathan we get the sap that wonderful sap through our tubing system i can be talking to you and the sap is coming to me you and i don't have to go up and down that hill it beats the pioneer way let me tell you then we've got this wonderful machine it's called an evaporator how long does 40 buckets take to go through this about four hours about four hours so you're talking about cutting that time immensely from the old ways oh for sure yeah this is pure maple heaven going on here i'm fascinated by the different colors of the maple syrup it all has the same amount of sugar and it gets darker as the season goes on a lot of people may use the lighter syrup for pancakes and traditional uses but the darker it is it really speaks to using it in cuisine it really has quite a body to it this is what i love about it it all ends up in one tap that's right have a try wow look at that it's hot it smells incredible this whole sugar shack is full of steam we don't want all that steam here jonathan so we open our special roof yeah open the doors to the maple spa and there goes all the state so this is what you see when you're driving down the road you see those clouds coming from trigger shots that's right that's what this is i learned so much about maple syrup today and i hope you did too i can hardly wait to get into the kitchen and start cooking with it as a matter of fact i think i'm going to keep a little bit of this on me at all times i can make maple glazed salmon maple and brussels sprouts maple sugar pie maple baked beans i can make maple with anything you
