Before anyone thinks of building a foundation this way, know what the hell you're doing because it's not a good choice >90% of the time.

Can any builder, mason, or structural engineer explain to me the advantages and disadvantages, aside from pure aesthetics, of this type of foundation vs just a normal concrete pour?

In case anyone is as confused as I am, the 'zero concrete foundation' part is the part in the ground, the masonry above ground is a wall, like an above ground stem wall on a footer.
I assume the reason they do this is because they live in an area with extreme frost heaves and the stones in the ground retain their stability even as they move, and are water permeable. They use mortar above ground because it saves material and is easier than dry stacking, saves interior space as well.
I wonder what they were using as mortar.
How in the hell the European nobility turned stone masons into weird guys wearing robes, chanting mumbled incantations, and giving each other secret handshakes in wine cellars, sewer tunnels, and graveyards is beyond me...
