let's use the humble blackberry to make blackberry wine hi I'm Charles and welcome to DIY fermentation your site for doing fermentation I'm a shoestring budget of course as always if you like what you see here please click on a subscribe button and I will try and do one of these every week this is what we're using to make this wine we've got four pounds of blackberries you can use either fresh or frozen we've got about a gallon of water four pounds of sugar one lemon packs wine east peptic enzyme if you don't have it don't worry about it straining bags optional something to firming it in primary fermentation a demijohn carboy jug he is your own home word that makes you happy airlock with and also a hydrometer all right first thing we need to do is that we need to rinse off these blackberries give it if you're gaming up leaves or twigs or stands or whatever it doesn't look like a blackberry now would be a good time to hear something like that oh they look good now that we've been boiling that gallon of water earlier and only wanted at this point it's just enough just poured enough to cover the berries and we're gonna let we're gonna let that sit until the temperature comes down a bit quite a bit real temperature would be nice and then we'll mash up the berries and start the process of putting them in the fermenter okay none of the tips just come down the bed it's to pretty warm but I think now would be a good time to go ahead and first add all of that sugar warm the warm juice is gonna help I'll help dissolve it and to probably gonna mash up the berries a bit then zoom in just a little bit so we'll see what's going on and we'll just dump it all in there this is stuck we didn't dissolve it in there helps to have a nice good size a pan you can do all this in all right now I think we're just going to mash up a couple of these bearings just to help the process out a little bit melt the berries like mash completely that's no big deal if you feast it's still gonna work the end result is going to be blackberry wine but if you got a minute and you don't mind going through the effort and you still got a potato masher and a potato ricer not a food processor not a blender not a stick blender and certainly not your feet just go ahead masters berries up any way you can back up a spoon whatever you got get the job done go for it all right I think that is quite enough of that now all we have to do is go ahead and let it cool down just a bit more you know now that I draw my rivers have come down to room temperature it's a little warm but it's cool enough we can go ahead and dab just our lemon the melon is acting as our acid black you've got acid blend in please by all means we can use it for those of us who are trying to keep it as simple as possible and we're adding juice that bad boy and let's just go ahead and pour this in there blackberries shall we strain out in your seeds which if you're using a straining bag like I am I'm going to it's not gonna be that big of an issue but if you're not using a string bag then yeah you ain't trying to do your best to keep those seeds out of there give that a little stir now then once again if you're not using string bag if you don't have one it's no big deal just won't be as clean of a clean that bad later on but if you are you go ahead and get this process started very tie this off by the way this is a one gallon straining bag if you're looking for a string bag I would strongly suggest getting a 5 gallon string bag or at least a 3 gallon straining magnet e25 it ok it's in there that's that next thing we want to do it now if you're using peptic enzyme we go ahead and put that in now if you're not using a peptic enzyme you can go ahead and picture yeast but since I am using a peptic enzyme what's a little after my peptic enzyme like I don't even need to measure it cuz I don't like running running out enough for this batch like it's great small ankle that in time for this apply that answer more yeast okay where's my spoon because I want to give this a stir coorporate that in there all we have to do now at this point is just put the lid on and just give that 12 hours to do its thing after that then we can picture we have a quarter of a teaspoon of yeast that we're going to be using and as always and my wines just gonna sprinkle this out around this much as possible cap back on and for the most part that is going to be that every day for the next three days we're going to go ahead and just give it a stir make sure that all the BlackBerry pope is being fully incorporated we'll let the Pope stay in the in the mixture for the seven days and then we'll go ahead and rack it into our secondary carboy I do have two observations I need to make about this recipe after taking my original gravity reading I ended up with a gravity reading of 1.15 - which is which is pretty high I think a question that I'm going to make there is sevens in 4 pounds of sugar three pounds of sugar would have been more ideal if this thing goes to dry at 1.15 - it's looking at a potential move thinking we have about 20% now yeah I like my white a bit on the strong side but 20% that's that's the kind of strong I can handle it cuz you know I'm a man but 20% is a bit high the other observation is that when adding the sugar instead of just dumping it all in there dump it in half and we made adjustments based on the gravity readings that we're going to get at each step Mississippi adding additional search like that to a point where I would have been more comfortable with I mean I can have over 1.15 - ok but I'm just saying if you're making this at home want to start with 3 pounds of sugar and you might want to start taking your gravity readings that even somewhat less than that so that the ones going to end up being where you'd like it beyond that if this is a Mystere for the next 3 days make sure everything is is incorporated put it in the carboy in about a week 3 months minimum 6 months probably this is this one will be ready to drink so there we go you
