what I got for you guys today certainly made my wallet a little bit lighter but that's all right you know I'm happy to do it for you when you think of a true beast in the sea what do you think of and no it's not a shark I'm talking about a beast that crawls along the ocean floor a king of the sea if you will today we've got a live King Crab so there's definitely something about this that really excites me when you got a box that says alive animals keep cool Handle With Care and this side up you know it's about to go down I'm not exactly sure what this is but I'm a big fan of this graphic over here we know what's inside let's open it up this right here is a true Beast this is a beautiful king crab it is so difficulty hard to get these live you've probably only ever seen one of these in the store with that pre-cooked red meat but let's take him out and get a closer look now this crab is utterly beautiful now he may not look too alive but I can tell you right now he is very much alive for a crab of this size for him to even move at all unless he's in the ocean is a pretty big deal and as you can see he's moving his mouth his face all over the place which is the way to tell if the king crab is truly alive some of these larger animals like king crabs or lobsters are just so big that it takes them a lot of energy to actually move around you can see here how beautiful he really is instead of that red color you see in stores his shell is almost this dark purple color and just look at the wingspan on this thing the legs don't even fit within the frame of my camera now today we're actually going to be making some sushi with him but because I don't even have a pot in my apartment that can fit this crab no normal person would I'm gonna have to cook him in a few parts at a time there is lots and lots of meat spread across the this entire crab the legs the head the claws it's all delicious and on a good day these are about 40 45 dollars a pound and I really can't stress enough how appreciative I am to get amazing ingredients like this these crabs are so so hard to find and for me to be able to get something like this in my kitchen is amazing and I want to thank all the people that helped me get ingredients like this the fact that his entire body is moving right now really shows me how fresh this thing is I have a pretty long wingspan that goes right out of the screen not bad right no same thing with this crap look how far out his legs stretch it's beautiful but it's time to cook and it might take a while because again I'm gonna break this apart as always we're letting these beautiful flavors speak for themselves now I don't want them to feel any sort of pain so as with all beautiful creatures like this I'm gonna put Mr Krabs Down Easy we love you Mr Krabs now I've put them down peacefully and I've broken them into his individual Parts one last time I just want us to appreciate how beautiful this is I'll be the first to say that killing animals really does make me sad and I'm not just saying that but in order to teach people about food I really want to show everything and this is a beautiful fascinating species oftentimes they're actually caught at Sea and tossed right into boiling salt water to cook them immediately and those legs are frozen and distributed across the entire country and that's what you'll typically find these big frozen king crab legs that quite frankly don't taste all that good I'll place them in two boiling pots of water and let that cook for about 15 minutes until we got that perfectly cooked meat so our beautiful crab is looking pretty done to me and what I immediately like to do with lobster crab anything that can overcook quickly is wash it really well under cold water this will halt the cooking process and keep it at that perfect level of doneness for you now it's always been fascinating to me that we go from that beautiful purple color to this sudden orange red color to me I actually feel that they're equally beautiful but now that we have to cut this open there's one thing you have to to watch out for look at those spikes a king crab can really mess you up so I'll teach you how to do this without getting cut and no gloves are needed let's start with a nice big claw the first step is to actually separate out those plasticky like strands that go up through each leg of the craft to do that you want to crack back and then gently twist and pull at the same time you can see that these will come out really easily but keep in mind there are more so we'll do the same thing here and then twist and Pull and as you can see they came out perfectly now I actually learned from Morimoto one time a super famous Iron Chef who was on TV all the time many years ago how to properly break down a king crab so hopefully I don't mess it up too much I remember him cutting right here with the knife through the joint to make a nice clean cut and now I'm just going to take my knife and cut right along the edge of the meat which will allow us to just peel and open up this meat ultimately leaving us with one long beautiful piece of king crab I'll tell you right now that we're going to be making some fat sushi rolls with this I'm not kidding when I say I want to keep this very simple but crab does go really well with avocado I'm gonna be honest this avocado wasn't very ripe and I literally just cut right through the pit but come on that's actually pretty cool I actually think I can still Salvage this avocado and then just take a few nice thin pieces that I'm confident will go perfectly with my king crab sushi and now we are ready to assemble I'll start with my piece of nori and then I'll spread some of my beautiful sushi rice all over it I sometimes find that if you wet your hands it helps a lot to prevent stickiness I know oftentimes people flip this over and then build the sushi the other way I want to try the different style here where the Nori's on the outside from here I'll put down my piece of king crab followed by just a few pieces of my avocado a light painting of soy sauce sesame oil and mirin three very Japanese style things that I think make for a very delicious coating and then just a tiny dusting of nori and sesame seeds I'll then go ahead and roll this up you start by pressing in once you've fully covered the meat inside and then continue rolling until you finish the entire roll and this right here is a beautiful sushi roll now we'll just make some really nice clean cuts with my knife and take a good look at the inside of that roll that's Perfection I'll take a few nice slices and lay out my beautiful pieces of sushi this is a great example of keep it simple but let me tell you I couldn't be more excited to try what we've made this right here is a gorgeous piece of sushi I took a little nibble of the crab I know a little bit of a naughty move and without hesitation I can tell you it's the sweetest most beautiful king crab I've ever tasted I think that's an important step always taste your food before you go ahead and mix in other ingredients it's good to know what it tastes like by itself and as a good Chef or cook you need to have a really good understanding of the product that you're working with before you work in other flavors but I can't wait any longer let's try this that is really really good now if it were just me and I'm being completely honest with all of you I might mix in a little creamy aioli or to put it bluntly just a little bit of Japanese mayonnaise to perfectly round this out but as it stands this piece of sushi right here is a bite that cannot be beat let me try it one more time and then I'll give you that journey of flavors that I try to give you every time so what I love about this is that the surface area or the ratio I should say of the crab is very substantial overall the bite is very sweet I like that the sushi rice is cooked perfectly and soaks up a little bit of that three bun sauce I painted on because that dressing has a little bit of salt a little bit of fat a little bit of acid all packed in one little brush now the crab itself is sweet almost a little bit creamy and doesn't have that really really salty overwhelming taste that you get from a store-bought king crab with those previously frozen legs it's truly something special and when you get that blast of cream along with your avocado that perfectly rounds out that bite it's mind-blowing now as always thank you for watching please don't forget to like the video that's literally all the support I'm
