today i am making a donut filled with a lime curd topped with a passion fruit glaze and some toasted coconut i think this um combination is quite tropical i mean it's a really fun flavor combination and i know it tastes good together i am liking the ingredients i'm seeing very colorfully yep now georgia is also not the biggest donut fan in the world so tell us you know how are you approaching this well i've got to make sure that this donut is also appeals to me i probably would eat this doughnut because great i like pretty um top flavors yeah this balance is going to be crucial because obviously being these fruits they can be quite sour make sure it's not too tangy just tangy enough best of luck and i can't wait to taste it absolutely donut hold back good luck thank you morgan's concern is that my donut is going to be too tart so i really have to make sure that i have a good balance of tightness and sweetness so the judges like it as well i really really want to be in the top three i want to join them up in the gantry they don't want to leave this competition stop georgia [Applause] [Music] georgia tell us about your donuts so i have filled them with a lime curd a top with a passion fruit glaze and then i just sprinkled it with some toast and coconut [Music] georgia for somebody who doesn't really like donuts that was choppy cool absolutely delicious that curd was really zesty and bright and vibrant and it was exactly what you needed to kind of keep it from being heavy and a little bit too sweet you've really thought about how everything would play together i think i might finish this donut hold you to that go oh he starts off with a bang georgia that was very very impressive from a flavor profile it really shows that you not only understand flavor you know how to execute what you want to do so well done as soon as i bit into it that lime curd just jumped out at me and i was left just wanting more and more of it flavor and the balance was perfect it was really delicious what was clever about your donut was acidity both from the line and from the passion fruit i loved everything about it well done georgia thank you georgia what have you cooked for us so today i have made a deconstructed lemon tart so it has a lemon curd a pistachio cookie crumble cream and a lemon thyme and honey granita i can't wait to try it let's eat it shall we absolutely look how beautiful it looks isn't it it's like a very sophisticated looking trifle [Music] all right i'm going to eat my other bowl [Music] georgia that was a multi-layered multi-textured wonder all the way from the chewy candied lemon on the top that crunchy granita crumbly cookie the gooey curd you know how to play with flavour and texture in a way that is so much more mature than your years that was everything that i love in a glass bowl my mouth is still watering the cream i wouldn't even have been worried about that the cream just fell into the grenada and just made the mouth feel absolutely perfect i loved it georgia i loved that the crumb still kept a bit chunky so it had a lot of texture and just a beautiful dessert well done where are the judges [Music] [Music] wow so cool [Music] are those noodles oh my god look at that he's stretching them to do that by the looks of his hand making some noodles wow i went for the wine noodles which are the widest noodles that you can get here because i'm making a charcoal towel choco is a really smoky noodle dish that you cook in a wok it has chinese sausage in it prawns garlic chives eggs lots and lots and lots of different ingredients what are those georgia dry turnips hey georgia hi so you went with some flat flat-ish noodles and i'm seeing lots of very familiar things going on here do you want to fill me in on what you're cooking so i'm making chocolate amazing choco is normally made with rice noodles yes okay fresh rice noodles and you have wheat noodles have you thought about the difference in texture but it would have crossed your mind yeah it's pretty much a play on chocolate it's not the traditional one you do it's because i would normally use rice noodles but these wheat noodles they will still be really nice with these flavors this is a dish i grew up with one of my very very favorite noodle dishes of all time is something i feel very very very passionately about it's a bit worried i hope it's going to be perfect good luck thank you oh my gosh it definitely puts the pressure on that mel had this dish when she was growing up because i mean she knows what traditional choco towel really tastes like i'm absolutely terrified i just i'm just worried about the noodles and if mel's gonna break it i could be the thing that stops me from having any chance of getting a spotlight immunity georgia georgia hi how you doing good that wok is nearly bigger than you yeah yep you confident with that look at this oh you've done this before haven't you yep look at all this goodness it's just lined up ready to go yeah it's gonna be quite a quick cookie yeah so the single chocolate top it's a very smoky dish yeah it's what i love about it this dish is literally going to come down to the last 10 minutes absolutely just walks on so we'll let you go i have all my prep set up i can finally put in my ingredients but you cannot throw all the ingredients in at the same time you need to make sure you put them in a specific time so smoky i add my noodles my laptop and my sources [Music] it's so sweet there's a lot of smoke coming from my walker it's making me cough a lot but it's looking really good the noodles are being coated really well by the sauces thank goodness that the smoke alarms are not too close so i'm going to add in my eggs and my dried turnips and finally i'm going to add in my garlic chives and my bean sprouts it smells amazing thank you i'm happy with the way my noodles are looking i'm tasting it it's definitely nice and smoky and charring i just really hope that i can prove to myself that this is a good dish what about the chili all right georgia let's go have so many things i've seen through my mind mel had this dish when she was growing up and the judges eat this dish a lot wow look at that they have high standards all right jojo tell us what you did with your noodles so i chose the wider noodle yup chose it because i'm doing charcoal towel it's not really like your traditional charcoal towel because a traditional charcoal towel would be made with rice noodles so i'm putting the same flavors you'd have in a normal chocolate towel and just using a different noodle which just means a different texture all right i can't wait any longer georgia over the years i've eaten hundreds and hundreds of choco when you said that you were going to use wheat noodles instead of rice noodles i was skeptical however you managed to balance all of those flavors so well that the noodles have just sucked up all of that flavour especially of that really you know that smokey bacony lactone and i have to say i'm pretty convinced that was a really amazing effort
