[Music] today we're going to make these jars of torsi which are pickled vegetables i'm nikki gluckas and this is nikki's modern mediterranean so to get started on making our tour see of course first we need the vegetables so this is not something that you have to use a specific vegetable to be honest this is what people did in greece to preserve their vegetables from their garden they would make it and pickle them so you really can be creative on whatever you can find in the grocery store so today i'm going to use cauliflower mushrooms peppers pearl onions celery carrots and parsley so i remember this growing up my grandmother used to make tons of these jars all winter long and then all of a sudden my mom and dad's basement they had all these jars lined up downstairs my dad would eat this almost every night the jars can stay on the shelf once you open it you'll have to put in the refrigerator but this was something that we had in our house every single day growing up so i'm really excited about doing these jars now and then i'll be able to share it with my family so i have gotten all these vegetables ready next we're gonna get ready with our celery and our carrots so i'm gonna peel now carrots let's talk about this okay so we get our carrots from a distributor these are massive not normal sized carrots so if you're buying your carrots at a grocery store for this recipe i would say you need about three or four normal sized carrots um i'm gonna use this one giant one so i'm gonna peel this so for our carrot you can i remember growing up my grandmother used to just cut some rounds for the carrots just like that which is perfectly fine so we're gonna do that today or you could cut them on an angle be creative on the way you want to cut these so we have our carrots right here on the side here i have some parsley so we're going to add parsley to this you could also add if you liked you could add the greens the leaves at the top of the celery that will also give it really nice flavor into your jars but i'm just going to take the leaves of the parsley here and i'm not even really i'm just going to give it like just a rough chop because we're going to add these right to our jars i'll put that right over here next we're going to do our celery so if you remember this recipe growing up or you make this at home i would love for you to leave me a note and tell me what vegetables you like or what is your favorite to use in tour see so for the celery i'm going to kind of just give it i'm going to cut these on an angle [Music] great so now we have all of our vegetables ready i also have some whole garlic here so i'm not going to blanch this we're going to blanch all of our other vegetables but we're not going to blanch the parsley and the garlic the garlic i suggest using two cloves of whole garlic per jar so it depends on how many jars you're going to be making today that's how many cloves of garlic you're gonna use so we're gonna go over to the stove and blanch these vegetables so i have a pot of boiling hot water here so first i'm gonna blanch our cauliflower so for our cauliflower we just want this to cook for about three to five minutes blanching is really just softening our vegetables before we put them into our jars so our cauliflower is ready and you can tell by just you know you want to make sure the vegetable is softened the cauliflower will take a little bit longer than some of the other vegetables we're going to take these out and put them right into this big bowl and we're ready for to blanch our next set of vegetables so i'm going to do our carrots next next we're going to add in our celery next we're going to add in our peppers we're going to take our peppers out strain these [Music] next we're going to add in our pearl onions which will take a little bit longer because you want to make sure that they get nice and soft so our onions are ready we're going to take these out [Music] our last vegetable we're going to plant our mushrooms so we're going to do these last because this will get all the dirt off the mushroom anyway so you want to use these last so our mushrooms are ready we're going to take these out and now our vegetables are all blanched i'm going to dump this water from our pot and bring it back so that we can make our vinegar mixture ready for our our jars so we have our hot pot i'm going to add five cups of water and i'm going to put in on low heat here i'm gonna add in one and a half cups of white vinegar one tablespoon of peppercorns one tablespoon of sugar and then we're going to do three tablespoons of salt so the salt and the vinegar is going to give it a delicious pickling flavor and now we're just going to put this on medium heat so we can have all of our sugar and our salt dissolve before we stuff our jars so i have these nice big jars and all of our vegetables are ready so this is pretty simple we're just going to take i like to of course do everything even here so i'm going to put a couple onions in each jar and a couple peppers and you just mix this up we want to make sure we get some of each vegetable in all of our jars and we're going to fill them all the way to the top with vegetables [Music] so now we've filled our jars with our veggies and we're going to take two cloves of garlic i'm just going to kind of shove them in each jar so put those in there on that side garlic over here and then we have our parsley so our parsley i'm just gonna kind of again put a little bit in each one and this is just for flavor while it's pickling a little of that look how colorful this is so pretty i'm gonna take these jars and give one to all my friends i'm gonna give one my mother-in-law one my mom maybe to one of my friends that will actually eat it but next step is adding our vinegar and our water here so we have i'm just going to take a ladle and when i'm ladling the water into this i want to make sure i get some peppercorns as well we're going to fill this all the way to the top i'm filling the water all the way to the top and the way to test that to make sure you have enough is you're going to seal this at the top there we go i'll seal this nice and tight and you're going to flip it upside down and if you get the water all the way to the top then you know it's ready and this is a great appetizer actually too when i do my fun grazing tables you can really add whatever you like so this is a great one because this will go really nicely with some great cheeses when i was growing up my mom used to serve this every night with feta and some other greek cheeses and some kalamata olives and have very fond memories of this as a kid i hated it as an adult i love it so we're gonna close these up and we're gonna nice and tight and flip them upside down and we're gonna leave them upside down until they completely cool and then flip them upside the right side up and you can store them in your pantry for as long as you like but once you
