hello everyone and welcome back to my kitchen and my Channel today I will show you how to use prepared masa for your tamales during the holiday season you can easily find prepared Masa in most grocery stores especially those that carry Latin products by adding a few simple ingredients your tamales will always taste delicious let's start by preparing the filling first I will be using rahas de chilas which is a mix of red bell peppers polanos and jalapenos to add some spicy first I'm going to prepare the peppers by rubbing each one with a little bit of olive oil or you can also use any other oil you prefer then I'm going to roast them over an open flame since I don't have a gas toe my portable burner is going to work just fine it will take a little bit longer because I do have to do one at a time but it will be well worth it you you can also roast them on a gal or in an air fryer but if possible I highly suggest roasting them over an open flame since it does add much more flavor to the dish as I'm done roasting each pepper I'm going to place them in a plastic bag this is going to help the peppers to sweat and it's going to be much easier to remove the skin and while we wait for the peppers to cool down I'm going to remove the stem from five to six jalapenos going to cut them in half to remove the seeds and then I'm going to cut them into long strips like these I'm also going to use one small white onion and three to four garlic cloves once the roasted peppers have cooled down remove them from the bag and use your hands to rub off the skin rubbing them with oil before roasting them makes it much easier to remove the skin it can be a little bit messy but after removing the skin rinse your hands and rub each one again to remove any remaining skin avoid rinsing the pepper as it will reduce the roasted flavor if you have sensitive hands I highly recommend to use gloves when peeling the peppers next I'm going to trim off the stem from each one of the peppers then we're going to cut them in half to scrape out the seeds and then we're going to cut them into long strips and then into 1in strips cut the remaining peppers in the same way and then we're going to move on to the cheese I am going to use monster cheese because it's what I have on hand but you may also use any other kind of melting cheese of your choice mé Jack queso wahaka or queso Chihuahua are also a great option I always keep plenty of this cheese on hand because it's perfect for making quesadillas cut the cheese into 1/4 in slices and then into long strips like these now before we get started with the Masa we're going to soak the OAS first separate them and remove any residue on them then stack the OAS in a large bowl fill the bowl with hot boiling water and place a heavy object over the OAS to ensure that they're completely submerged in the Water by using hot boiling water your OAS will be ready in 30 minutes or less and now let's move on to the preparation of the masa for the preparation of the Masa instead of lard or Mana I am going to use 1 and 1/2 cups of vegetable shortening for the 5 lbs of Masa that we're going to use first I'm going to whip the shortening over medium high speed for about 5 minutes to whip the veget shortening you can also use a hand mixer or Whip It by hand the Masa that I'm using I purchased at a super supermarket they always have a variety of masas including some that are ready to use all you have to do is take it home dump it into a bowl give it a light mix and begin preparing your tamales it also comes with instructions on how to prepare it at home but not all of them do which is why I'm making this video during the process using a spatula scrape the vegetable shorting back to the bottom and continue mixing until you have a creamy like consistency once the vegetable shortening reaches a fluffy consistency like this add 2 tablespoons of baking powder 1 tbspoon of baking soda and 1 tbspoon of salt and continue mixing to mix these ingredients once it's well combined turn down the speed to low and add the Masa a little bit at a time by using prepared Masa it's going to to save you a lot of time when making your tamales because the mixing process takes less time I only used half of the bag of the Masa which is about 5 lb now to get the consistency that we're looking for I'm also going to add a little bit of vegetable broth a little bit at a time you can also use chicken broth if you'd like the total amount of vegetable broth that I used was about 1 and 1/2 cups at this point we're going to continue mixing until it reaches a fluffy consistency and the best way to know if your Masa is ready is by dropping a small amount of the Masa into a glass with water if the Masa floats to the top that means your Masa is ready once it reaches this point we're going to stop the mixing process and we're going to cover the Masa with a clean kitchen towel while we prepare the filling for the tamales in a medium pan heat up two to 3 tablespoons of vegetable or olive oil to sauté the garlic and the onion sauté for a about 1 to 2 minutes or until they become slightly fragrant and translucent and before adding the jalapeno season with black pepper and salt to your taste then mix in the jalapenos and cook for an additional 2 to 3 minutes or until they become a little bit pliable to give it more flavor I'm also going to use the seasoning mix with paprika chili and garlic powder and then we're going to mix in the roasted Peppers you can also use regular filling like chicken beef or pork cook for an additional 5 minutes and now let's prepare the tamales before you begin to prepare the tamales remove the water from the OAS and place them in a strainer to soak off the excess water if they're still too wet when preparing your tamales Pat them dry with a clean paper towel and begin by adding a hefty spoonful of the Masa and spread it over the smoother side of the OHA add some of the filling and one to two pieces of cheese fold in the flaps and then fold in the tip with the amount of Masa we used we made about two dozen tamales depending on the size of your tamales you can probably make more fill the steamer with hot water then cover the bottom with the remainder of the OAS since I'm out of the wax paper I'm not going to wrap these but I did tie a little bit of OA on each of the tamales so they don't come apart and begin by arranging the tamales in a standup position starting on the Outer Edge and working your way in to hold the tamales in place I'm also going to place a large ball of aluminum foil you can also use corn husk or a small bowl and then we're going to cover the top of the tamales with more OAS this is going to help to holding the Steam not only to cook the tamales a little bit faster but to make them nice and moist place the steamer on the burner and once it reaches a boil turn it down to low medium heat and steam for an hour and 15 minutes once your tamales are ready remove them from the pot and allow them to cool down for about 10 minutes if you remove the Hut right away the Masa is going to feel a little bit soft and it's going to give you the impression that they're not done yet so you have to give them enough time to cool down so the Masa can set and now to enjoy your delicious tamales I hope you enjoyed this video or found it useful and if you did
