It does not matter. But if you fry these vegetables, this salsa will be divine. There is no doubt about that. Nothing will be raw. We will add Jalapenos. I like salsas that are not very spicy. So I do is remove the seeds and the membranes of the jalapenos. In those parts, is where everything is spicy. You can also use Serranos Chiles if you want. You can also use Chipotle chiles. The idea here is to grind all these vegetables. when we do that, more flavor comes out of the vegetables, like aromas. This will be divine. I will be using one bunch of cilantro. A big one or a stack of cilantro. Then I begin to grind with stone. Until everything comes together. Near where I live, I bought a salsa, which was a molcajete salsa. I brought home and I was very disapointed The salsa which I bought was very spice but did not any good taste at all. Then, I said. I am going to make my own salsa. To show some people how to make a real one. You can use a food processor. But, that will be a different type of salsa. I have some videos where I have used a blender or a food processor. The idea here is to continue mashing with the stone. Long time ago, our ancestors use to make salsas this way. Or use to grind the corn too to make tortillas. And they use to take their time and food was very delicious. We will add the juice of two or three limes. I use tree limes. You can use lime or lemons. But citric juice gives a sensational flavor to this salsa. You know that this salsa is a heavy one. It is not one of those watery salsas. And you know what, we will make this salsa creamy by adding two avocados. Avocado is divine. And it is delicious in this salsa. We will use a spoon to scoop out the meat of the avocado. you to have make one batch and then another batch. Because we can not put all five tomatoes in there. We will scoop out the rest of the avocado. Sometimes when I buy avocados in there, they are not riped. I have no choice but to use what I have like these avocados.
