hello everyone welcome to come sit at my table we are Tom and Melissa and we are thrilled that you have joined us for this video today we are cooking one of our Derby favorites we're going to make a Kentucky Derby pie now the Kentucky Derby is next Saturday but we wanted to go ahead and make this ahead of time so you could have this recipe in case you wanted to make a pie to have for the Derby I have been making this pie for 40 years I think the first time I made it was in 1983 and I could not tell you how many of them I have made in the past 40 years I've made a bunch I used to make a lot of these I would make several each year and take them to school to share with our faculty so this is a recipe I have used a lot let's talk about what you're going to need to make your own Kentucky Derby pie first you're going to need an unbaked pie crust now I have used just a Pillsbury pie crust that you get in the refrigerated section at your grocery store I've made my own pie crust for years but when these things started coming out I started using them I really believe these are about as good as homemade crust so I see no reason to go to the trouble to make a homemade crust when you have one this good now if you don't want to go to the trouble of letting that come to room temperature and rolling it out enough to fit your pilot plate and forming it in your pie plate you can just buy a frozen pie shell and that works perfectly fine in fact when I was doing six eight ten of these at a time to take to school with me to share with our faculty I bought the frozen pie shells it was just quicker and easier for me but these are really good pie crust so you're just going to need one unbaked pie crust do not bake it ahead of time it will bake in the oven with your pie this looks deep this is a deep dish pie and I am not increasing the pie filling um it's funny you brought that up normally I would increase the pie filling by 50 percent for this size pie crust but I didn't want to confuse people so I'm making the pie the way it says in the recipe that I use but this is a deep dish pie so it probably will not fill this well I know it will not fill this pie crust but that's okay the recipe I'm giving you today works perfectly fine with a regular sized pie crust you don't need a deep dish but Melissa has a good eye she caught that okay for the pie filling you're going to need one stick which is half a cup of melted butter please don't use margarine use real butter you need real better so one stick of butter you're going to need one cup of sugar one half cup of all-purpose flour you're going to need two whole eggs and we are going to beat those lightly before we put them in you're going to need about a teaspoon of vanilla I use Clear vanilla you do not have to do that if your vanilla is the dark variety it's perfectly fine I just like light vanilla the clear vanilla you're also going to need 3 4 of a cup of pecan pieces and 3 4 of a cup of chocolate chips sometimes I use milk chocolate which is what I have here today sometimes I use semi-sweet it just depends on what I have in the refrigerator whichever one I have I use now I don't use dark chocolate chips in this because it really does kind of change the flavor and for a traditional Derby pie I guess you really should use semi-sweet but milk chocolate's delicious in it before I start putting this together I am going to put just a little spoonful of flour over the chips and the pecans it doesn't matter if it's all-purpose or yeah it should be all-purpose and I'm just going to stir that in and you can see how those have gotten coated with that all-purpose flour that is to keep them from sinking to the bottom of the pie during baking it it won't hurt your pie that you've got a little extra flour in there it just it really does help them stay suspended in the pie filling so they don't just all sink to the bottom and make a layer of chocolate and that's on the bottom all right so we're done with that now all we have to do is put the first five ingredients the butter sugar flour eggs and vanilla in a mixer mix it up and then stir in the nuts and chocolate chips so let's go do that we're going to fit in our butter I should have gotten a spatula ounce because I want every drop of that out of there melted my butter probably 10 minutes ago and the bottom of it has solidified a little bit but that's not going to hurt it that won't hurt anything okay and we're going to add our sugar now let's put in our flour and I need to eat our eggs just a little bit just to kind of break them up they don't have to be well beaten you don't have to use a mixer or a whisk or anything just kind of break them up a little bit and put those in and I know I'm doing this backhanded and you can't see can you Melissa all right sorry I'm left-handed and that always gets in the way of the video all right and the last we're going to put in about a teaspoon of vanilla you don't have to measure it just put some in it's pretty good and then we're going to mix this up that doesn't take long you just want to make sure that everything is combined make sure that sugar has started to dissolve just want to let that mix and I really like the paddle attachment that I bought for my mixer because it has scraper blades on the side so I don't have to stop to scrape down my bowl if you don't have a scraper blade you will need to stop and scrape down the sides of your bowl just I don't know a time or two to make sure you're getting that flour and sugar all Incorporated all right now I'm going to turn that off and add my nuts and my chocolate chips and I know most people do not use the mixer to stir those in they take the spatula and they fold it in I don't do that it doesn't hurt at all to mix those in with the powder just let it mix a time or two get those in there good and that's all you need to do okay I already smells quite delicious it smells good enough to eat doesn't it three and you know what we're going to eat it in just a little bit okay forget that my fingers work better to scrape this off I was trying to be really proper and doesn't work as well we went all that off there okay every last bit that we can get off off there we want in okay there we go rinse off my fingers now this is thick I want you to look at the consistency of this it is thick it is not runny it almost looks like cookie dough yeah yeah almost as thick as cookie dough maybe not quite but close that's what you want that's what a Derby pie looks like I don't remember where I got this recipe I believe if I'm not mistaken I got it out of a newspaper when I was just starting to teach it may have even been my very first year teaching that I got it or it could have been the last year I was in college but I'm pretty sure I got to have a newspaper I wish I had written down where I got it but I know I've been making it since about 1982 or 83. so this recipe's been around for a while and it's made a few people all right yeah I should have probably been 50 percent more for this pie shell because it is deep dish all right so we're just gonna kind of spread it out now let me promise you that as it bakes it will spread and even itself out you don't have to make it perfect just kind of make it close anyway all right now I do use a pie Shield to put around the crust because I I don't want the edge of the crust to burn and the edges will burn before the center of the pie is ready and I already know I am not the best pie crimper in the world so you don't have to point out my weakness I think it looks fun I am I'm not a great pack Ripper but I Do cover the edge of it with a pie Shield you do not have to do that if you don't have a pie Shield you can just use a piece of aluminum foil just take a long strip of aluminum foil fold it a few times wrap it around kind of crimp it around your the edge of your pie crust and that'll keep it from from over baking before your pie is ready okay we're going into a 350 degree oven for 30 minutes at the end of that 30 minutes I will check it it will not seem like it's completely done in the middle it'll be a little Jiggly in the middle but 30 minutes should do it for this size pie now if I increased the filling for a deep dish I would have to increase the baking time by probably five to ten minutes but for this 30 minutes should do it okay we're going in and we will be back to show you the pot when it comes out in about 30 minutes stay tuned we baked our pie for 30 minutes took it out of the oven and we have let it almost completely cool it is still just a little bit warm right in the very center of the bottom of the pie now this is not a pie that you want to cut straight out of the oven if you do then the filling is going to run a little bit it needs to sit and cool so that that filling can firm up and not be so runny this looks like it's cold enough so we're going to try to cut it before we do we would like to ask you to do us out correctly let me see how big I need this measure my spatula there oh my gosh I can smell this I love this pie it is one of my favorites I hope I'm not getting it too soon but I just could not wait any longer and somebody else I know couldn't wait either oh my look at that yum and look at this this is beautiful look how it's just a little gooey right here in the middle can you see how that's kind of running right there that's perfect you want that to be just a little gooey okay let me grab some reddi whip move this back here because this pie is really good all by itself but it is rich it is Rich and I'm going to tell you in my opinion it's even better with a little squirt or two of ready whip tell me what kid you know that hasn't scored had to have a squirt of ready whip straighten their mouth look at that looks good enough to eat I know you want the first bite because she has talked about this pie this is definitely one of our favorites it is it is honestly I like pie and I started to say better than cake I like it as well as cake and of all the pies I make and I do make a venture pies this is one of my favorites all right babe I hope this is not too big of a bite yeah I mean this is the perfect consistency it's gooey it's rich it's not runny here here get a picture of that isn't that beautiful look at that bite of pie folks you're gonna have almost awake to get it ready for the Derby it's an excuse to have a derby party um good idea I hate to admit it I could eat that entire pie you would have a belly ache I know people have kind of laughed because I say it in
