two pieces of bread piece of chicken no pickles you want more pickles you gonna pay for it yeah we're going to talk about Fried Chicken in LA we have to talk about hot chicken it's a dish made by taking fried chicken pieces and dousing them in hot oil and spices and it's something that inspires crazy obsession by everybody who tries it including me in the last five years hot chicken has a blown up in Los Angeles the place is popping up all over the city but the true queen and king of hot chicken in LA Ark imprints of hot Vil hot chicken and chops in Crenshaw and Johnny ray zone of Holland raised right here in Chinatown Kim's family actually invented hot chicken in Nashville and Johnny ray was the first one to bring it to Los Angeles if you guys want to learn about this stuff these are the people to teach you so I thought it'd be a good idea to bring them both here to howl and race to make me some real Nashville hot chicken [Music] so what I did was I went ahead and started marinating our chicken I'm a fan of bony and I don't do that bone stuff I don't like boneless chicken I like the bone-in cuz the bone has a marrow in it and then Merrill gets into the meat Jeff later than me okay so we got a wet hands since your right hand and slit hand dry he'll be our right hand wet hand dry hand okay so I'm gonna do the first one for you we got a lovely breast in here dry hand just fold it over this is awesome better be watching I know it's actually tingles when it smells that I'm going right here and let it rest Jenni ready yeah ready Bank out my guitar off and these something stick to shake shake shake with half the chicken already so we got a breast got a thigh all right we're gonna let that sit we're gonna go on the top right there right because this has been sitting and you can also tell the difference yeah this is a we call this temper and he lets it rip this temperate let it rest for a second you don't want to like flour and throw it straight into the fryer because then what happens all that you just put on his fries right off we're gonna let that rest for another little second but if you know to see how it's changing like so okay we're gonna do wings here these have been marinated chef Ben's gonna do one for you okay he's dropping it in our dry mix he's gonna grab it by the tip we like we do it like that because the least most of the time you're not eating as much right there you're eating this so we want to keep all that flour on there we're gonna go into our wet again a lot of love in that wet yeah yep and then we go right in there yeah he's gonna go in he's not gonna Pat it too much he'll shake off that flour we do like flour in this and that's it it's super straightforward super simple and we're gonna let those hang out same like how yours are hanging out over there just try with three wings and this you can give it that one hand how you do it you have to be to now dunk all the way [Music] so carry kids here's the important thing about dropping your chicken I'll call it baptizing it the breasts the meaty Heaviside I drop that in down this way okay okay so I drop it in and I put the breasts in first cuz they take a little longer to fry the more meat got a little fry so I'll do that get those in it's important thing when you're dropping is you're going in we like to kind of like let it sit a little bit and then we go away away from you because yeah it will it will burn the love and care that you apply to this chicken is what makes it really good and that's what's apparent to the customers and then the staff and and that's why people come back you know whether it's with the technique or even the execution or even the ingredients like getting really good ingredients people can taste it you know it's a happy place we all day long yeah and do that all day I go home smell like it I think like when we first started out there was zero whereas you know hot chicken zero right and I think that was missing in the market because people like fried chicken they also like spicy food the culture of LA is like so diverse you have Thai restaurants that are amazing you know chef - we already a lotta like when he was a he was killing it with his stuff his stuff so spicy and I felt like there's often in the market no one was doing it you know there's only a few really really good you know like stole food southern food places in LA and there needs to be more you know la is I'm just an untapped market you know there's a mother plate people who's kind of playing around putting Nashville hot chicken thing on their menu but a dedicated Nashville hot chicken chefs like I call this a Shack so that's not Chicken Shack join you put it you put something like this together and LA is starving for something that's authentic yeah yeah not watered down they don't want water down they want you to give me give it to me give me the punch and if you're gonna put the natural label on it which a lot of people are doing obviously I think that any Vinny Danny City needs a national hot chicken joint I think la really really is happy to have hot chicken here yes we are the obvious welcome it's like a warm southern hug that's what I call it la has embraced this thing Johnny and Amanda and the crew here raise you guys have done something that's revolutionized what I feel my great-great uncle Thornton Prince and my great-grandfather boys his brother even mine Andre is amazed Andre Prince in Nashville my father mark press amazed at what you know some 80 something years at the family what they started so long ago we're very very touched by the fact that so many people around the world are inspired some wanna dis chicken you know it's just fried chicken but no it's more than that hot chicken is typically served at different heat levels so the first question they're gonna ask you when you're ordering is how hot do you want to go it can range from no spice at all to so spicy that it literally feels like your face is melting off different heat levels would be at different spots but just rest assured that if you go above medium you are going to feel the burn hot feels hot it's called the veal the bill welcome to the veal you have to make sure that you need some bread with that there's a big fight Johnny axis wangus it's a medium wing somebody go from plain to hide no they think it's the signature they're like oh let me get the hot he'll chicken let me get the hell do you want to chicken go in between the child straight to it bond I love I love your straight down your I'm sweating I'm not splashing Emma no one another bite that was my thing when I'm cooking in our kitchen whenever remember we do pop up when we get our kitchen if the cooks if those guys aren't if they don't speeds at least three times I'd like some wrong wrong wrong I mean something's not in the flour water signs are nixed right I sneeze at least three times and I know my flowers right here's right notes when the drool kicks in that's when you know that it's activated you know what I tap out at medium Johnny me I'm chopping I'm tapping out anything I like you're hot yeah are you yeah I'm not I'm not gonna mess around with the head of the staff do it count you guys want to do that Allen for the cameras okay [Music] I see there's sweat sweat on your upper lip you just look like you're in pain this one looks fine oh oh wait I'm supposed to do the dab wait there we go faster I supposed to do the dab sure your other tab then the one that you can't dance my one is it the dance move separate yeah yeah the brittle in your mouth guys are my super heros hot chicken is super delicious and super addictive but it's way more than just good spicy fried chicken if you really want to understand it think of it as a food that has a specific genesis and a place in a family and in a people if you're going to try it and I highly recommend that you do it will become a part of you and I am NOT just talking about what it's going to do your stomach the next morning as Kim says just don't go on a date or get on a plane after you eat it you go no you married it because you don't feel it the next morning too and yes for everyone asking of how and raise is worth the long lines it is every single time if you guys like this episode and you want me to eat more fried chicken be sure to like and subscribe to our YouTube channel at and tell me or write in the comments if you want to see me to go to different oh you guys guys want to see more fried chicken make sure you like this video subscribe to our YouTube channel and comment below and let me know your favorite fried chicken spots mother as soon as I got it
