- 30 minute meals, we are gonna try his peri peri chicken, dressed potatoes, rocket salad and quick Portuguese tarts
I think pastel de nata is the authentic, proper term, but I think it's a little bit of a twist on that. All--

chicken. (clicks tongue) Nice meal-- are you gonna
go for the potatoes? And the rocket salad?
And the Portuguese tarts? All in 30 minutes, this is
your challenge and remember. (book smacks shut) If you can't do it, a certain nine year old buddy
Oliver can in 28 minutes, so, get that oven on
boy, get your stuff out, get ready, come on boy, let's get cooking! You can do it. - So, pressure, from the big man himself. But, we can do it. We're gonna be rolling the
camera in real time but, it might be a bit boring, Mrs.
B is gonna have the camera. - Sorry.
- But any boring bits, in the edit we'll probably
just speed up a little bit, but we'll be doing it to half an hour, if it takes 32 minutes hey, come on. - Okay. - This could be one of the
longest videos I've ever done, this isn't probably a regular
thing it's just a test experiment to see if we can
(claps in rhythm with speech) do it! - [Mrs. B] Right. - Okay.
- Go. - Official time adjudicator there, I'm allowed to warm up my griddle pan. Mrs. Barry just plucked
one of my eyebrows. - [Mrs. B] It was a white one. - I know, but this is
gonna be really weird I'm so used to talking to
the camera, are you ready? - [Mrs. B] Yep. - Set, you tell me when
to go. Gimme a countdown. - Three, two, one, go! - Okay uh put the chicken thighs on a plastic chopping board skin side down. Okay, duh-duh-duh-duh-duh
these are my chicken thighs. Slash the meat a few times. (upbeat whistling and drum music) Olive oil, on the chicken. Okay.
- Okay. - Uh, season with salt and pepper. Uh, duh-duh-duh-duh-duh, heat it up skin side down
cook until golden underneath, alright so this is the
griddle pan that's heating up, it gets very very smoky this thing so. - [Mrs. B] Good and warm. - Oh gosh it's cooking already, yes. - [Mrs. B] Right, hands! - Wash my hands. (yelps) (Mrs. B laughs) - [Mrs. B] The chicken's cooking nicely. - Dust a clean surface with flour unroll the sheet of pastry, okay straight onto pudding. Okay. - [Mrs. B] Move that. You're like running! (laughs) - I'm trying to run I
feel like I'm doing-- - [Mrs. B] Careful,
careful! Cause it's just, are you alright? - Oh no I didn't get this out the packet. - [Mrs. B] It's okay, it's okay. Calm down.
- Bit of flour. - [Mrs. B] And I'm sorry I'm trying not to chop your head off. - [Barry] That's okay. Alright alright alright.
- Alright, flour. - [Mrs. B] Just breathe, breathe or you're gonna make mistakes. - I just need to get stuff going, once I'm going I'll be fine. - [Mrs. B] You have,
you've got the chicken on. - [Barry] Every second counts
though, know what I mean? - [Mrs. B] I know! - Wasting, like I just
lost thirty seconds. - [Mrs. B] Why, from opening a packet. - [Barry] Yeah. - [Mrs. B] You'll be fine. You're doing great. - [Barry] So this is
gonna be for the tarts. - [Mrs. B] Okay. - [Barry] And, what we do oh my gosh, I need me book. Dust, two squares, actually I'm gonna go a bit bigger. This is spare pastry, Pheebs. Nice one eh. (Barry
and Mrs. Barry snicker) Bit of cinnamon, ta-da-da-da,
oh too much cinnamon. - [Mrs. B] See, slow down. - Roll it in. And then--
- Yeah. - Roll it into a swiss roll shape. - [Mrs. B] Okay. - Like a tube and cut into six rounds, put these in the muffin tin. Okay. - [Mrs. B] Okay. So roll it. (catchy rhythm music) - Alright didn't need
any of that flour, okay. Get that in the sink. - [Mrs. B] So you want your knife. Thought you had a knife
that you got out this one? - Okay I got one. - [Mrs. B] Okay, okay. - So this goes in like this. (catchy rhythm music) - [Mrs. B] You've got six there. - Six, oh there's a knife there whoops. - [Mrs. B] I just what

- Oof. Potatoes wash the potatoes
and the sweet potatoes and halve lengthways, put them in a large microwave safe bowl with half a lemon cover with cling film and
put into the microwave on full power for 15 minutes
I'm presenting I've got time. - [Mrs. B] I wanna clean that. - Oh. - [Mrs. B] I wanna clean that. - Says half the lemon. - [Mrs. B] Yeah. Just just-- oh should you
not be doing that on a board? - [Barry] Yes. - [Mrs. B] Then why aren't you? - I don't want the cut worktop. - [Mrs. B] No! Okay. (bouncy string music) - I think they're supposed
to be lengthways but-- I don't know. - [Mrs. B] It doesn't

turn the chicken over. See, needs to be warmer. (cheery upbeat music) - [Mrs. B] Have you
turned the griddle pan up? - Yes. Spoon the creme fraiche into a bowl so we're going back to our
tarts we're making a mix (pants) for the filo alright. - [Mrs. B] Right. - We prepped this a little bit. - [Mrs. B] Great. So here you've got-- - This is the filling for the
- Creme fraiche. - [Barry] Tarts. Spoon the creme fraiche into a bowl. - [Mrs. B] Can I just say? - Yeah. - [Mrs. B] Do you wanna move those tongs cause in a minute they're metal they're gonna get really hot. - That's okay. That's the least I've
gotta deal with right now. - [Mrs. B] Okay. - Alright, creme fraiche, egg. - [Mrs. B] Creme fraiche and an egg. - [Barry] Vanilla. Just gonna wing it. Worcester sauce and white wine vinegar. - [Mrs. B] That is gonna be a hot sauce. - One, two. - [Mrs. B] I love your estimating. - When we're about ten minutes in mate can you tell me cause I left the pastry tarts will be done. - [Mrs. B] Did you not
put the timer on the oven? - No I didn't put the timer on the oven I'm a bit busy right now. (pants) - [Mrs. B] That's a step it says to do. - Zest of lemon and juice
of half a lemon. Okay. - [Mrs. B] Okay. - Oh gosh. - [Mrs. B] Right breathe
breathe breathe. Zest. - Yep. - [Mrs. B] In it goes. - And then the juice. (breathes heavily) - [Mrs. B] I'm quite
aware I keep chopping off the top of your head I'm sorry. - Don't worry. - Okay.

- That's a little-- (Mrs. B's words drown out Barry.) We'll go for that-- - [Mrs. B] Splash, that'll be a splash. - All the while the potatoes are cooking. - [Mrs. B] They are. I'm quite impressed. - Okay, come here. - [Mrs. B] Okay, excuse me Chlo. (fantastical marching band music) - That look a little bit strong. (giggles) - [Mrs. B] That looks very strong. - I'm gonna make it more watery. - [Mrs. B] Okay. (fantastical marching band music) - [Phoebe] You've got 20 minutes! - 20 minutes that means the pastry cases we should've timed should be
another couple of minutes. Ooh, yeah. I think we're alright. - [Mrs. B] Okay. - Alright, Chloe, take that mate. Chicken, slice the peppers into strips and add to the griddle pan, yes. Let's turn this chicken over. - [Mrs. B] Yeah, turn
it over again, told you! - [Barry] Oh yeah look at that. - [Mrs. B] That looking better? - [Barry] Yeah we need
to crank that heat up. It's alright it's gonna cook
through in the oven as well. (sizzling) - [Mrs. B] Where are you now? - [Barry] Gonna just take the cheeks off-- - Cheeks off.
- Of the pepper. - [Mrs. B] Okay. - [Barry] Like that. - [Mrs. B] Nice. Sorry. [Barry] That's alright. (laughs) - [Mrs. B] I'm just watching blank, sorry! I don't think I'd make

We're on part two! - [Mrs. B] Right! - Collect the muffin tin out of the oven and use a teaspoon to to press the puffed up pastry back down inside. Right, oh. What the heck's going on in there? - [Mrs. B] Uh. I think you, might just need to stop it I think the plate's come off. - [Barry] (laughs) Off the-- look at that! - Oh-oh-oh-oh-ho. Ooh! - [Barry] There we go. I
ain't got time to stop. - [Mrs. B] What's that? - That was funny. - [Mrs. B] It was funny. Right, what are you doing now? - I dunno! (chuckles) - [Mrs. B] Where are you up to? - Getting the things out of the oven. - [Mrs. B] Right. What are you gonna put them on? - This. - Those look good! - Uh, spoon the creme fraiche. - [Mrs. B] So that. (slow upbeat instrumental music) - [Barry] Cool! - [Mrs. B] Cool, that looks good! - [Barry] Woo! - [Mrs. B] Smells nice. - [Barry] Um, set them back
in the oven for eight minutes. (Barry pants as food sizzles) - [Mrs. B] Open the door. And there you go. Breathe, smile! - Ah, chicken. Alright. - Right.
- Pour the peri peri sauce into a snug fitting roasting tray. Okay. - [Mrs. B] So snug fit roasting tray. - Rest is good. - [Mrs. B] You got one of those out. - [Barry] Over here. - [Mrs. B] Over there? - Over here's my roasting tray. I need some herbs as well. - [Mrs. B] Nice. Nice nice. - Pour the sauce into a snug fitting tray. Ooh, oh, god! Oh no! (Chloe giggles excitedly) - [Mrs. B] Right. - Sorry.
- He didn't look! - [Mrs. B] No, he wasn't
- Scatter over the thyme. Okay we've got thyme guys we've got thyme. - [Phoebe] Half way there! - Half way there? Put it into the middle oven. Alright. - [Mrs. B] Are you not meant
to put the chicken in it? - I don't know I would've thought so! Yes. (laughs) - [Chloe] I like your laugh! - You like my laugh? so that the chicken's on show a bit more. - [Barry] (pained gasp) Ah-ah-ah-ah! - [Mrs. B] I told you they would be hot. You don't want the peppers
covering the chicken. And that, just move that one. - Does that really annoy you that bit? This could be make or break! There we go. Oh what have I done to
this worktop oh my gosh. - [Mrs. B] Well, yes. Mhm. You know it's a good job I'm filming you don't know how much I
wanna clean that right now. Right look it's all in the oven! (Barry pants)

- Finally put a saucepan onto heat squeezing the
juice from the zested orange and four tablespoons of
sugar to make a caramel. And we're gonna work it up, okay. - [Mrs. B] Nice. Right, where are you? [Barry] Oh my gosh, okay
here's my pan, here's my sugar. (exhales loudly) I feel like
I can slow down a bit now. - [Mrs. B] I think you can. How we doing for time, Phoebe? - [Phoebe] Um we've just hit half way. - Half way? I'm feeling good about this. Are you?
- Really? - It's really hot in
here, or is it just me running around like a madman? - [Mrs. B] It's you running
around like a loonie. - Alright okay so orange juice,
in there. (strained grunts) In with that sugar.
- Come a bit closer. - [Barry] See that? - [Mrs. B] Nice. Looks nice. - So we have to keep our eye on this we don't want in to burn
when we're making caramel-- (chuckles) I'm starting
to do a tutorial now it's not even my recipe. Right, low heat. Down. Just let it dissolve in. And then it'll just caramelise and then that goes on
the tarts at the end. - [Mrs. B] Nice. - [Barry] Okay? - [Mrs. B] Okay. - Try and clear down a
little bit right now. - [Mrs. B] Can I help? - No you have to keep filming. (chuckles) - [Mrs. B] Oh. - Cause people won't believe us. (funky jazz music) Just tidying up. - [Mrs. B] You are,
lemme um, put the lid-- I've got flour all over my hands somehow. - [Barry] Have you? - [Mrs. B] Yeah. Alright let me move. - I'm shocked about what
you did to that cookbook. (Mrs. B laughs) - [Mrs. B] At least we'll
never forget we cooked from that page now. (Chloe giggles) - [Barry] Alright, next
up this is gonna go with the potatoes.
(Mrs. B growls) - Yep.
- Wow. - [Mrs. B] Do you wanna clean
that peri peri sauce first? - I will. - [Mrs. B] Okay. Sorry.
- I just wanna-- So we've got coriander. - [Mrs. B] Yep. - Feta cheese, and this is a chilli. - [Chloe] Is it really spicy? - [Barry] It will have some kick mate. (Chloe mumbles) - [Mrs. B] Is it right
that that's bubbling-- (Barry yells)
and making a sizzling noise? - [Barry] Yeah that will
caramelise in a bit, I hope, I might need
need to add more sugar but I've gotta leave it. - [Mrs. B] Okay. - [Chloe] What about the potatoes? - [Barry] They stay there
mate look at the time we've only got two
minutes, that feels like I only put that in a minute ago. - [Mrs. B] I know! (fast chopping) Good chopping! - Thanks! (laughs) Thanks! - [Mrs. B] (laughs) I didn't
know what else to say. - Alright.
- So. - Duh-duh-duh-duh-duh. - [Mrs. B] That smells good. - Put the chilli and most of
the coriander on the board mix as you go add the feta
and keep chopping and mixing. Take the tarts out of the oven and move the chicken up to the shelf. Alright.
- Shelf? - That's the next step. - [Mrs. B] The top shelf. - I don't know. Okay. So this should, hopefully
caramelise eventually. - [Mrs. B] That looks
like it's caramelising-- - [Barry] No that's the orange zest. That's the-- - [Mrs. B] Oh alright. - So we've got this to
go with the potatoes, I'm actually gonna try and clean up. For like a second. Oh my gosh.
(Mrs. B groans) Look at that! Alright we'll get rid of that. - [Mrs. B] We don't need the cover. - We'll wash it, we don't get rid of it. (fast funky bass guitar music) - You've got about--
- How we doing for time? - [Phoebe] Ten minutes. - Ten minutes, alright. - [Mrs. B] Ten minutes? - I feel-- ten minutes!? - [Mrs. B] Ten minutes!? - [Barry] Look at that. - [Chloe] Ten minutes!? - I'll tell you what, look
at Amy, she's enjoying it. - [Mrs. B] You alright down there Amy? (Chloe giggles) Where's Boston? Watch out, Boston's after that.
- Ooh here we go. - [Mrs. B] Peri peri sauce. - [Barry] That's caught
that's caught, wow. - [Chloe] Don't eat that-- - [Barry] See look at this. - [Mrs. B] Oh wow, oh wow. - [Barry] I've got to keep that on a very, actually I might have to take that off the heat in a minute. - [Mrs. B] I think you might. - [Barry] Doo-doo-doo. We don't wanna burn it
but we do want it to be, you shouldn't really stir it either. Alright I'm taking it
down to a lower heat. Cause now it's gonna set and form a nice hard layer on the top right? - [Mrs. B] Sorry. - (laughs and mumbles)
Don't know what I'm doing. - [Mrs. B] I was going "Yeah", but not having the camera at you. - [Chloe] Dog's eating the sauce. - [Mrs. B] What? - [Chloe] The dog's-- - Don't let the dogs eat peri peri-- - [Mrs. B] Dog's eating
the peri peri sauce that's on the floor. Oh lovely Boston. - You might see his
nostrils going a little bit. (Chloe giggles) - [Mrs. B] Right so now, (Chloe and Phoebe squeak
and mumble at Boston) Do the tarts need to come out? - [Chloe] No. - [Mrs. B] Would you say? - We'll give it two more minutes. After that, pour some
caramel over each tart. Salad, oh we can make the salad-- (microwave beeps)
(gasp) Potatoes are done! - [Mrs. B] Careful that
bowl's gonna be steaming. - [Barry] Right. - [Phoebe] Might wanna stay out the way. - Okay okay. Wow, that is so hot. - [Mrs. B] Hot! - [Barry] Gotta just see
if they're cooked through. Yes they are.
- Yes! - [Barry] Okay cool, potatoes,
finely chop the red chilli Duh-duh-duh-duh-duh
potatoes, check the potatoes are cooked through then
use tongs to squeeze over the cooked lemon add coriander
mix from the chopping board and mix everything together. So I'm gonna let that cool.
That's gonna go in with that basically we might mash it up roughly. Alright? - [Mrs. B] Yeah, are you? - No! - [Mrs. B] You're doing
great! You're doing great. (Barry pants) - Ooh, yes. Look at them
tarts, they're done. They're actually done. - [Mrs. B] Oh oh oh. Sorry, hang on, let me move that. They're done? - [Barry] Oh no, my sugar. Is that, is that alright? Oh no that's not too bad. - [Mrs. B] Yeah, that's fine. (slow funky bass guitar music) - [Barry] There we go, so
we'll just leave them to cool, I'll take that flame off. (pants) - [Mrs. B] And you need to
change the chicken round, go put the chicken. - Yes.
- On the top shelf. - Yes I do Mrs. B, thank you. - [Mrs. B] Careful! Do not burn yourself. (oven beeps) And just for the heck of it I just turned it up a little bit
just because why not eh? - [Mrs. B] Yeah. - Alright? (pants) (laughs) - [Mrs. B] You don't need

bowl are you looking for? - I was gonna have a bowl to
serve it in like a grey one. - [Mrs. B] It's over
there by the Wrapmaster. - Right. So this has cooled down a teeny-- Ah no it hasn't cooled
down a very much at all! - [Mrs. B] It won't it's
been in the microwave for 15 minutes! - [Barry] Ay-ay-ay-ay-ay. - [Phoebe] Eight minutes. - [Barry] Ah okay. - [Mrs. B] Remaining? Yeah of course. - Eight minutes? - [Phoebe] Yep. - We are smashing this out the park. - [Mrs. B] What are you doing now, mashing it up--
- I'm just mashing the-- I'm not even reading I'm just guessing, yeah looks like yeah you squeeze the where's the lemon? (laughs) Is there a lemon in there? Is there a lemon did I
put a lemon in there? I did didn't I? I'm sure I put half a lemon in there. - [Chloe] Yeah you did I-- - [Barry] Did I? No I didn't! - [Chloe] Yes you did. - [Mrs. B] You did it's smells there it is is that it?
- Where? - [Chloe] Yeah it is-- - [Barry] Where's the lemon gone? - [Mrs. B] It smells lemony. - [Barry] Did I just put the juice in? - [Chloe] Yes you did put the juice in. - [Barry] Oh I'm supposed

- Chicken, pepper-- - Put the oven a bit higher next time, or my griddle pan a little higher, but you're starting to see
the char on the pepper but, yeah that's cooked through
that's the most important thing. We've got this crazy
salad thing with lemons, and the feta, and chilli
which might give a bit of kick for them. And of course those quick
Portuguese inspired tarts, which I'm really, really over the moon. - I am for you, I'm really
chuffed for you well done. (applause)

the chefs on this playlist, the other thing I did use some gadgets which might have saved me like a minute, if that but towards the end I had loads of time spare so, there's
no need to run around your kitchen like a mad man, I just wanted to prove that the concept worked. So uh, I think these guys are tucking in, once we're done here, let's
