This is how you make the demiglace the ingredients are diced tomatoes, onion, carrot, red wine, butter, flour, beef shoulder, and a bay leaf. The omelet is a bitch to get right it took me a full 18 count to finally get it and don't even think of trying if you don't have the most nonstick pan that ever existed i had to go get one. but it was worth it.
The chef's bonus omelette flip at the end was amazing. The placement and the split were so on point I had to go back and watch it a couple times to truly appreciate it. I really do like seeing the process and the practice that the American guy went through and I think he handled it well with a lot of respect. Such a cool dish to see being cooked by an expert and learned by the noobie.

He had a full menu. I arrived the first night and was told there were no spots for that day, so I reserved for the next one. The place had mainly spots looking at the open kitchen, to see him do his schtick. There was a small room also that sat 4 people. I would say 10-12 seats, which was on par to some other places I visited.
I love the directors choice of music. Smooth food porn jazz that comes back around 7 minutes when the chef takes the pan back to show how to toss the rice. I am smitten.

Edit: it was also awesome to see that his omelette technique is almost precisely the same as Jacques Pepin's French omelette here. One of my favorite culinary videos.
