I'm a little bit nervous today and I haven't really been nervous filming a YouTube video since I thought Rachael Ray was gonna sue me the other day I threw up a pole on my Instagram story you guys chose binging with babish azat Nashville hot chicken and a pond rewatching it it kind of hit me that a ton of great YouTube food channels have done variations of this needless to say I have never done not one not two but four different versions of the same recipe today I am putting up the heavyweights binging with babish BuzzFeed tasty Joshua Weissman and Sam the cooking guy against each other to see which chef comes out on top if you did it just happened to find your way here from what upset channels hello my name is David I'm a very average home cook but I try hard I already have my guests for who I think is gonna come out in first place today leave your guests down in the comments below and let's get right into this one all right we have a very long day of chicken frying ahead of us but I feel like it's only right to start with the reason we're here doing this in the first place and drew ray aka binging with babish it's recipe and before I even compiled any ingredients I wanted to get my chicken dry brining in the fridge overnight this is as simple as breaking out your chicken and loading it up with salt and pepper do not be afraid to be very generous here because a lot of this is actually gonna drip off as the chicken releases juices in the fridge the following day though I did grab my whole milk and Louisiana Hot Sauce some bread and butter pickles and garlic powder kosher salt and brown sugar black pepper and flour some plain old white bread and some paprika cayenne pepper a couple of eggs and our chicken now as we go through all of these I'm sure you will find that most of the procedure and the ingredients are pretty similar it's really just gonna be interesting for me and hopefully for all of you to dial in on those minor details where each recipe is different and see which variations are best for all we know by the end of this we could come up with like a Frankenstein version of all these recipes with the best of each one I finished throwing together both my wet and dry ingredients that I'm gonna dredge my chicken in this is mostly made up of the hot sauce and whole milk the eggs and the flour and salt I'd say one of the most unique parts of babish his version is the fact that he does a 50/50 split of regular old vegetable oil and vegetable shortening or lard I'm not entirely sure what the benefits of doing this are as opposed to a hundred percent vegetable or some different kind of oil I do know that the smoke point on shortening or lard is incredibly high so frying our chicken at about 350 degrees should work out just fine so long as your oil doesn't splash up on your hand and singe off half of your arm hairs a very small second-degree burn later a few pieces cooked up pretty nicely and I wanted to throw together my spice mix I vividly remember the first time I ever saw a recipe for this and I was kind of disgusted by the fact that they use the cooking oil itself as the base of this sauce upon further thought though we use oil-based dressings and dump it over salad and we glob mayonnaise on sandwiches which is pretty much all oil anyway so it does make sense all I know is that this is looking freaking delicious so let's try out recipe number one and the tasting portion begins with mr. babish himself I'm a little intimidated by this you know if any one of these for creators watches this like I don't want to rank on their food I mean not a stab my eye out Lee with the toothpick man fried chicken is just so good it's so unfair with how unhealthy it is but I can eat it every single day I'm pretty sure you're not supposed to eat it with the bread I think it's more for presentation or you just eat it kind of separately back and forth yeah this is just great I mean it's cooked really well the flavor is good I do have to say it's not as spicy as I was expecting with how much chili powder I dumped into this I kind of expected to be knocked on my butt a little bit and like be coughing but it's not too bad it's not that overbearing I think we started at a really good middle point I don't want to score them or anything I'll just rank them one through four so we'll see in the next one up second today is the old faithful pal of the channel tasty they usually come through with easily attainable dishes I'm just interested to see how they stack up against some of these pros so I grabbed some sunflower oil and plain breadcrumbs kosher salt and whole milk flour chicken breasts chili powder cayenne pepper paprika Breton butter pickles garlic powder some potato rolls eggs and some brown sugar we're only on the second recipe and we're beginning to see some huge differences in the preparation of these mainly the fact that we're using boneless skinless chicken breasts I thought it was kind of a sin to make Nashville hot chicken without a bone in it but honestly I can get on board especially because we're putting this on a potato roll so it'll end up more like a sandwich than like a fork and knife meal I just want to see how the Nashville errs Nashvillians what do you call yourself how the people native to Nashville react when they see these variations because I know with some other cuisines stuff like this doesn't fly too well I'm looking at you my French and Italian friends but anyways this is the only recipe that uses chicken breasts it's the only one that uses breadcrumbs instead of flour it uses a lot more eggs than the other ones so this is probably the most unique version we're gonna have today you might also have noticed that I could not help myself but to chop these mammoth chicken breasts in half they would have looked really dumb on a tiny little potato roll so I think this will make a much more functional sandwich not to mention I think these were bigger than the ones that used in the video anyways those get fried off at 340 degrees for a couple minutes on each side and then I whipped up the spice mix for this using the cold sunflower oil instead of the hot cooking oil and then brushing it on all of our chicken pieces once again with that recipe number two is complete let's start ranking these and angering some YouTube viewers I'm sure this one will get an interesting response by you guys in the comments it is not traditional whatsoever it looks like a completely different dish than the last one we just ate but you can't say it looks bad looks nice and crispy and appetizing you might have to unhinge the jaw for this one completely different outside of the presence of the chili powder taste everything from the texture the crunch the fact that there's a whole roll on this it's like completely different again it's cooked really well it's just not as like popping in flavor as babish --is i will admit more often than not i probably order something like this just so I can eat it kind of like carefree and not have to eat around bones and stuff but for right now this is definitely number two babish remains on top for now in the third position today is another returnee to the channel Joshua Weissman I have just recently made at one of his burger recipes and it was amazing and almost exactly like Babbage's we have two dry brine these in the fridge overnight the only difference the one I'm very excited about is the fact that these get MSG as well if you are afraid of MSG don't be there's nothing wrong with it it's in fact delicious and you should start using it in your cooking besides that though for Joshua's rendition I grabbed some buttermilk and pickles some more that crystal hot sauce and kosher salt flour our chicken cayenne pepper and eggs smoked paprika garlic powder and brown sugar I'm a little bit scared in saying this but based on my knowledge I'm gonna say it anyway I think this recipe is the closest to a very traditional classic Nashville hot chicken outside of the msg of course but besides that everything from the cuts of the chicken to our flour mixture to our wet batter everything seems very standard and pretty much normal with this including the pot of oil that he uses to cook these in obviously every recipe has small differences in like oil temperature and cooking time if you want to check out any of the recipes that I have remade today they will of course all be down in the description for you complete side note when the hell did L get so expensive I feel like I spent over like 50 bucks on oil products for this video either I've never been paying attention or it got randomly expensive i fried all my chicken to a delicious crispy golden-brown i plated a piece up on some more of that white bread and a pickle and now it is time to give this one a shot as well and here at a big bad number three Joshua Weissman's this one probably looks most similar to the original version I was going for and it smells just as good as the other two biggest observation here is that the oil spice mix seemed much more concentrated than the other two so maybe it'll finally give me that like punch in the face I've been looking for without a doubt the best one yet it's got a crazy good kick the meat is like super juicy and tender that could be because this piece is a thigh versus the like quartered leg I use for babbage's but man is this good oh my god between the flavor and juiciness of this and this sound babish or tasty if you are watching this I'm very sorry but right now it's going Joshua babish tasty in that order last but certainly not least is the homie Sam the cooking guy I feel like he is the most underrated chef here on YouTube if you've never watched him before please go do it for his recipe I collected some flour salt and pepper pickles and garlic powder buttermilk some boneless skinless chicken thighs crushed red pepper flakes paprika some biscuits and some crystal hot sauce yes people you saw correctly not only is this recipe going to end up on a biscuit as a sandwich well we're also using boneless skinless chicken thighs which is actually kind of genius because this is the go-to the gold-medal standard for any fried chicken sandwich so if you're gonna make this recipe into a full-blown sandwich anyway you should probably be using this it's also evident that both the flour and the wet batter here get the most stuff involved in it nobody else really seasons their flour to this extent but excited to see how it ends up hopefully by now you guys know the drill I quickly threw together my fourth and final oily spicy mix I feel like I might as well just like pour this up in a pint glass and drink it by now and ladies and gentlemen we have our biscuit we have our deliciously crispy chicken we've got our pickles and now it is time to give the fourth and final recipe today a try this one for whatever reason is kind of giving me flashbacks from the Popeyes spicy chicken sandwich I made if it's anywhere near as good as that probably pretty happy tie it down get it out goodbye see you later you get the benefits of it being a thigh with how juicy and tender it is you don't have to worry about breaking a tooth on a chicken bone but the fact that every single component down to the batter the dredge was so heavily seasoned it comes through that much more in the final product and who doesn't love a biscuit this is hard man I'm so scared viewers from all those channels are gonna find they're right here and be mad if I don't pick their favorite food tuber I think I'd be lying if I said I didn't prefer this and would order this over anything else I've eaten today because as extremely close as it is I have to go Sam the cooking
