How to Slice Meat for Delicious Beef Jerky. Tips from a Pro.

[Music] hey guys it's Brian here it's smoke outside you and I just want to shoot a short little video to kind of show you how you can fit up jerky at home something that's a little bit smaller scale when we do you know our mass produced or think maskavich that's not right but when we do large quantities of jerky we will use a commercial slicer to do that but when you want to do a small bangs at home whether you're going to be hydrated or smoke it I just wanted to give you a little insight ladies a little tips on how you can do that and it'll be nice and easy for you and and if you want to do some home jerky just help you get started with them today I have two different cuts of meat this right here is an eye of round and you can buy that at Sam's or you know if you're close to if your prior military or in the military you can get that at the commissary at winn-dixie even at Walmart I don't typically buy my meat at Walmart but if you want to I mean Sam's has a good good product I do believe so we do some purchasing from there but this is the eye brown okay and typically when they put it out on the counter they will do this when it first kind of like you bought this by the case it's going to be completely enveloped in and fat and silver skin you need to cut that stuff off okay but you can get it at the counter there and a lot of times they'll pretty much fully to neut it I like to cut a lot of this stuff off here this is little a little skin so this is not too time-consuming but you do want to kind of clean it up the best you can but look this is what I'm gonna do I'm gonna take and I'm gonna cut this about maybe about an inch slices all the way down all right that's gonna give us pieces to utilize this is a little bit thick so sometimes it's not uniform and you can cut your slices this way right you can go ahead and do that all the way through if you don't have one of these things right here I pick this up at Academy Sports just call it it's a made by game winter and you'll see what happens with this when we drop this piece in here we crank this handle it's gonna put out some real nice jerky slices so you can see these are slices that you can use on your dehydrator on your smoker it's going to make great jerky if you want to you can go ahead and cut them this way that way they're already pretty much cut up in bite-sized pieces throw that in there and then the second cut of meat that was a ground you can also use bottom round you'll see this is the way it's going to come okay it's gonna be sitting on it on the little piece right there and I'm gonna the way I'd do it if I could it close to an inch thick all right you're gonna have that piece right there and I typically try to get this bottom piece off some pieces have more fat than others [Music] you definitely triangle almost complete fat over there and look fat yes you know if you're making this at home and you're not trying to get a shelf stable product that's gonna last for six months you know you can leave a little bit fat in there that fats gonna give you some good flavor but if you're trying to get shelf stable a lot of times you need to get that fat off of there that piece is a little thing for our slicer and then you just run this right here [Music] and there you go there's some great jerky slices right there so anyway I just want to give you that tip and this will probably be just a little independent part of the video how how to do this we'll do some other other videos where we're talking about flavor different things you can use for your marinades or whatever but I just want to give you that little jerky slicing tip okay you'll have a great day over now we love our customers appreciate you hit that subscribe button talk to you later [Music]
