How to Make Beef Jerky with London Broil--Easy!

we're gonna make some jerky today homemade without all of the added preservatives and sugar so i'm glad you're along for the ride this is growing preserve i'm carter and i'm thrilled you're here with me today let's get started i was at costco yesterday and i was looking for eye of round i usually do this with eyebrow because it's the cheapest meat that is lean so they didn't have any so they hadn't had any and a month and a half i'm sorry a week and a half so i ended up getting some top round which is london broil and we'll have about we'll have a piece of this for dinner this week so what i'm going to do is cut this cut these down in half and then i'm going to stick three of my what will be four halves into the freezer for about an hour hour and a half let it get really cold throughout start to freeze a little bit on the outside make it much easier to slice i'm not going to pull out the meat slicer today sometimes i do that but you know i think this is such a short piece of meat it's going to be easy to cut with the knife so once i pull it out of the freezer then we'll slice it up and put it in a baggie with its marinade and stick it in the refrigerator overnight and tomorrow we'll do the dehydrating so while you'll see the results at the end of this video it'll actually be tomorrow when it's done i've sliced both of these pieces of meat in half and i'm going to just put one in a baggie and we're going to have this tomorrow night for dinner so this will go in the refrigerator get all the air out of that later now these last three pieces i'm gonna put in this baggie and this is gonna go in the freezer for an hour hour and a half i have some candy i'm gonna do while this is in there so the timing timing will be according to when i have a break in my panting session okay i'm going to be separated a bit all right so there we go that's what's going into the freezer they won't be in there long enough to freeze stuck together when these have just started to freeze we'll be back slice them up the meat is just starting to freeze you can see so we're going to get started getting this ready to be marinated let's start with the marinade so i have a big gallon baggie and this is more method than recipe so you do it how you like it i like to use this organic tamari it's gluten-free and then i use a little bit of coconut aminos a little bit of sweetness in there without adding sugar and then i use a little bit of this liquid smoke it does have caramel color in it which i think is one of those things it's not perfect but that's what i use i don't have a smoker so we'll get a little bit of smoked flavor in that so i'll probably end up with about a cup and a half total of marinade and this is oh my goodness this is probably three three and a half pounds of beef marinade in here and then we'll start slicing i'll bring you down to see how thinly i try to slice it i do like mine a little on the thicker side takes a little bit longer in than dehydrator but i like a little bit of chewiness to it i don't like to get too crisp and i don't like it to be so thin that it falls apart okay a little bit of coconut aminos now all right i try not to use too many of those because there are four grams of carbs and a tablespoon she tells you about the coconut sugar tree sap okay a little bit of liquid smoke i'm not going to use too much just enough to give it a good smoky flavor now you can put extra salt in here but the tamari is loaded with salt one tablespoon is 700 milligrams so i don't see any need to add any extra salt you can put you know steak seasoning you can feel like it's spicy you could put some cayenne pepper or some red pepper flakes so that's about what i have i might have to add a little bit more but let's get started and see how it goes see just a little bit of ice on the very beginning stages of freezing for this so i'm going to bring you down here and show you how i'm slicing this and how easy it is once it's kind of halfway frozen that piece is actually a little thicker than i'd like it to be so we'll start with this one a very sharp knife it's very important with this so maybe a quarter of an inch eighth of an inch i think maybe that's an eighth of an inch so i'm going to slice all of them like this if you had a piece of meat that had fat on it you would want to trim off as much of that fat as you can when i get the eye of round i do trim off the fat cap but this london broil essentially has no fat on it the fat can go rancid after it's dried plus it makes a big mess in the dehydrator all right i'm going to get the rest of these chopped up and into the marinade and then i'm going to put these in the refrigerator overnight so tomorrow probably tomorrow afternoon i will pull these out put them in the dehydrator they'll probably take about six hours in the dehydrator and then we'll have some jerky now a lot of people do leave theirs out you know in the pantry i i tend not to do that all right you know put it in freezer bags and i stick it in the freezer just to make sure it's safe so you do what feels right to you the meat is all sliced up and in its bag i have squished around to get marinade on everything but i'll flip it over a couple of times this evening i didn't need to add any extra marinade i like it to be relatively dry when i pull it out to put it on the dehydrator so this should be perfect i'm going to put it in a dish just in a baking dish so nothing leaks and put this in the refrigerator overnight and i'll see you back tomorrow when we have jerky the next morning the turkey's been marinating all night you can see it's nice and dark absorbed a lot of the marinade i would actually like it a little bit drier than that but i think i used a little more marinade than i needed so i'm gonna put it on the dehydrator trays and it'll probably go because it's wet it may go six or seven hours usually it's five or six hours for me i put this i use a nesco dehydrator and i get these little um you know they're for small things as they get smaller you don't want them to fall through the cracks of the regular dehydrator tray so the jerky obviously isn't going to fall through the cracks but it does keep the regular tray so much cleaner because those things are hard to they're hard to get clean you got to scrub it it's kind of fragile and this thing is just fantastic you just throw it in a soapy water and scrub so that's what i do that's what i use now i want to talk a bit about jerky safety because there are so many different ways to do this you're going to read lots of books that have different ways to do it i don't know i don't know who's right i don't know if anybody's right i certainly don't know that i'm right but i'm going to show you this is how i do it and then i store mine in the freezer or the refrigerator just to make sure that it's always safe there are people who will stick it in a jar and seal it up and put it on the shelf i think heidi at rain country does that and she's clearly still cooking kicking so i you know the way she does it is is just fine for her this book here which is the dehydrating food guide it says dehydrated 140 until the jerky is leathery and then it says over here no matter how you make jerky consider it shelf life short keep it in plastic bags or glass doors jars so it will not absorb moisture and store the containers in the refrigerator or the freezer for maximum safe storage okay this one this one is preserving everything this one there are instructions too if you want to pre-cook the meat at 275 you could do that for raw meat it says dry four to six hours at 1 55 and then after that you could put it in the oven at 275. it doesn't tell you how they store it when they've done that so 160 seems to be the number that makes me feel comfortable and that's what the nesco dehydrator has for meat so i use 160 and then i stick it in the fridge freezer just just because i don't know for sure i don't know i don't know who knows for sure somebody i don't know somebody knows for sure but not me so this is what i do you do what makes you feel comfortable but this is a really good way we like it um you know when you get jerky out of a package it's it's a little bit pliable i like mine pliable which is why i cut it maybe a little bit thicker than some do i don't like it thin and and crispy so all right i have clean hands so i'm just going to stick a hand in and there's my piece of meat it's relatively dry so i'm going to pile up the dehydrator each tray i have one two three four five six seven eight trays with these little plastic thing covers on top so i'll get this one done and then i'll show you how close together i put things we love this jerky when my daughter comes in town she always asks me to make jerky and then she takes it back with her to california and my husband is like where's the jerky california so this time he gets he gets the jerky and i get the jerky i love it okay because i hand slice these some pieces are thicker than others so they'll take a little more time and that's okay i just pull out what's ready when it's ready actually i tend to eat what's ready when it's ready all right wash my hands off and i'll show you this all right so this is my tray of jerky maybe a few little parts touching in there but basically there's room for airflow to get around everything so i'm going to load this up and we're going to run it and i'll be back to show you the results six to seven hours it'll be just a minute for you but it'll be six to seven hours for me right back to second the jerky is done at least most of it i have a few pieces that are still in the dehydrator because they were a little bit thicker but this is what we have i hope it looks as good on camera as it does in person it is bendy but you can see it cracks it's hard i mean it's dry it's completely dry completely dry yet a little bit bendy it is delicious absolutely delicious just the right amount of marinade so i'm going to pack this into freezer baggies and stick it in the freezer where it should keep at least six months in my house it won't last that long it'll be gone but at least this way we can pull out small bags whenever whenever i need to without taking out the entire bag so you can see i'm setting up for the big grand finale for the everybody counts challenge behind me this jerky video you should be watching this on friday i'm a couple days behind on my editing because we went on vacation and i'm gonna film i'm gonna go
