so these are cremini mushrooms I tend to stay away from the button the white button mushrooms I just I don't know there's something about the flavor that I don't really dig here's what I do I take the mushroom I pull the stem out like that like this and then I cut them up like this right when they're big like this one I'll cut them in half first and then turn them we'll put the mushrooms in nothing has to go in quite yet I want to give them as the cooking people would say a hard sear so I'm gonna give it a tablespoon of olive oil and about a tablespoon of butter this is not gonna take very long take your time you don't have to rush these mushrooms will make almost everything better a hot dog burger for sure a steak oh my god these on top of a steak are heaven and I'm gonna take you up to the point where you could stop or you could add a little extra flavor make it amazing all kinds of things that you can add to this so you're hearing the sound right and the fact that you hear it sizzling is not insignificant because that's the amount of heat that we want going on here something about using the high heat for me that helps them give off the liquid that they've got and certainly the white mushrooms that you see in the store have a lot more moisture in them than like these guys well these are the EES cremini or baby Bella's baby portobellos that they call them okay I haven't seasoned them yet all I've done is given them this good sear okay let's remove I'm gonna add maybe two tablespoons of vermouth today you have to be careful when you add vermouth because it's alcohol and it could easily catch on fire I mean I could have taken it off the heat I just chose not to okay now garlic down it comes let it start to get super fragrant look how beautiful they are sizzling away okay we're gonna go they're gonna get about a tablespoon of soy sauce I'm telling you those on top of a burger will be insane cheese on top of the burger the mushrooms on top of the cheese now we'll do this we'll take parsley we'll throw it in there we'll mix it and then they'll go in the bowl this little combination right here is look how gorgeous they are can you imagine these mushrooms on top of a burger and sub a bite showing [Applause] oh my god [Music] [Music]
