How to Make Tomato Sauce from Fresh Tomatoes: Italian Style (THE EASIEST WAY)

Hi guys, welcome to my new video. Today I would love to share my recipe to make tomato sauce with fresh tomatoes using a few tips and tricks from my Sicilian grandma. So, let’s jump into it. I’m going to start by heating up some water in a boiler and while I wait for that I wash the tomatoes and put them in a big pot. Once the water is hot, I soak the tomatoes for about 5 mins. Meanwhile, I am going to peel and cut the onion, then I put it in a pot with 2 TBSP of olive oil to slightly fry it up for a few minutes at medium heat until it becomes more golden. Once the 5 min timer goes off, I drain the water and I start peeling the tomatoes. To do so, I make a cut across the tomato like this, and now you can see how easily the peel comes right off! I do the same for all the other ones too. Then, I cut the tomato in half to cut out the core, which is the greenish or whitish hard part of it and I chop them in pieces, not to small. Now, the onion will probably look slightly golden, so I am adding the tomatoes. I mix and press them around for a while and I add the salt. I advise putting the salt in gradually and tasting it every time to put the amount of salt that you like best, as it may be different from the one I suggested on this recipe. I Let them cook for about 25-30 min at medium/high heat without the lid on to allow the water to evaporate but don’t forget to stir them often. One little trick is to add a teaspoon of sugar, which takes away the acidity of the tomatoes and it adds such a nice touch of sweetness. Obviously this depends on how sweet your tomatoes are in the first place, so I am adding a teaspoon but you may want to adjust that based on the sweetness of the tomatoes you are going to use. After the cooking time, you will see that the sauce is ready. The consistency will look creamy and not as watery. From 2kg of tomatoes I got around 1 liter of sauce. If you prefer to have your sauce without pieces just blend it with A hand immersion blender. I love it both ways so I’m going to blend just half of mine. Last but not least, I am going to wash some fresh basil, dry it out with a clean towel, cut in pieces and add it to the sauce. And here it is, the tomato sauce from fresh tomatoes is ready. This is by far the easiest way I have ever done it. I pour it in glass jars and use part of it right away. To store the tomato sauce, you can obviously put in in the refrigerator for up to 4 days or you can freeze for about 3 months. Another option would be jarring however it is a delicate procedure and every country has their own safety guidelines posted on their websites.
