How to make soy milk (Duyu: 두유)

Ingredients (makes 4 to 5 servings):

1 cup dried soybeans (187 grams), soaked in cold water overnight (will expand to 2½ cups)

3 cups icy cold water

¼ cup unsalted toasted cashews (40 grams)

1 tablespoon toasted sesame seeds

1 teaspoon salt

Directions:

  1. Strain the beans and put them in a large bowl. Scrub the beans with your hands to remove the skins.

  2. Fill the bowl with cold water and remove any floating skins, then pour out the water. Repeat this a couple of times: scrubbing, adding water, pouring out the skins and water, until you are left with mostly skinned beans.

  3. Strain the skinned beans. It will be about 2½ cups.

  4. Put the beans in a large pot with 2 cups of water, cover, and boil for 15 minutes over medium high heat. If it boils over, cover pot halfway.

  5. Rinse the beans in cold water and remove the remaining skins floating on the top. Strain.

  6. Put 1 cup of the beans into a blender. Freeze the leftover beans for future use. Add the cashews and sesame seeds to the blender.

  7. Add 2 cups of water and blend for 2 minutes until the mixture turns creamy.

  8. Add the remaining cup of water and the salt. Blend for 10 seconds.

  9. Transfer the soy milk to 2 large cups and serve right away.

(upbeat light music) - Hi everybody. Today, I'm going to make really healthy and delicious drink. Only a few ingredients, you can eat it as breakfast or snack, it's called, Duyu, it's soy milk. It has nothing do with cow milk. Totally vegetarian drink. I learned this recipe from one of my friends, who is living in New York City. One day I went to her house, and then she made this for breakfast. And she told me she's eating this as breakfast for decades. She never gains weight, she never loses weight. Her body's like a hourglass. She's a little older than me, and pretty. If you are interested in healthy and delicious food, this is for you, let's start. We need soy beans. When I made Doenjang, Korean fermented bean paste, I use same beans, one cup is 187 grams. Use one cup. If you find some dead beans, brownish beans, pick it out. Wash this way. And put it in a large bowl, and soak. These dried soy beans are really hard. We need to soak this in cold water overnight. Last night, I soaked this already. Same amount, one cup, one cup. This guy is soaked already. And this is just now, I start soaking. You see, how difference this, isn't it? You can pick out some dead beans, when these guys were small, I couldn't recognize, so I find this way. These soy beans are very nicely soaked. I like to remove all the skins. Remove the skins, like this. It takes too long. So I'm going to use my hand, and scrub these, in here. Whatever method you use, just give them a little, little damage, but not too much. Don't crush everything. About one minute, let's scrub these guys. And then, pour water here. You will see, all the bean skins are floating to the surface. Beans, bean skins. And now I'm going to use this water again to save my water, come back again. Pour this. So when you scrub this, you feel that, kind of, sound is more crispy crunchy sound. And also not slippery. Water again. Now it's really clean, I like it! I'm going to rinse these, last rinse, and strain. Nice, these are raw beans. We need to cook these guys. Around two-and-a-half, Add two cups of water, two cups. And close, and let's boil over medium high heat, 15 minutes. No more than 15 minutes, no less than 15 minutes. Why? because if we cook too long, Smells like Meju, Smells like bean paste, kind of, so you are not going to like that flavor. If beans are not cooked properly, also not tasty. You can use high heat, over medium high heat for 15 minutes. 15 minutes. I don't want to miss the time. It's bubbling, so all beans are now vigorously boiling, just I'm going to half cover. (bell) 15 minutes passed, all the beans are well cooked. Ooh, wow! Beans skins are all on the top and center, you see, not much water. When you boil the beans, always lots of bubbles are coming up. Remove the skins, and let's strain. Tasty, sweet! Then, we are going to use one cup. One cup for two servings. We need to blend, let's add beans. We still have one-and-a-half cups left over. I'm going keep it in the freezer, and then tomorrow morning, I can make it. I'm going to freeze these guys. My friend's, she's making for one week amount, and then, she just keep in the freezer. Each freezer bag's for one week, seven bags she makes like this. I like to make them more nutty, nutty flavor, so I'm going to add cashew. This is roasted cashew, of course. Roasted cashew, but unsalted. Salt, you can add later. You guys can use almond or any walnuts, and any nuts, make it tasty and more nutty. Toasted sesame seeds are always available at home, so I will just add toasted sesame seeds a little bit, and this guy, cashew, cashew is good for your body also. a quarter cup, quarter cup, but a little kind of generously, add this. One tablespoon of toasted sesame seeds, very nutty. Two cups, very cold water. After blending all this, I will add one more cup later because my blender is not too big, so this is two cups of water, and turn on. (whirring) I blend two minutes, You can check out how this is creamy. What I want is very creamy and soft, so that when you swallow, no problem. Easily, you can swallow (laughing) And then, I will just add one cup of water. And one teaspoon, salt. (whirring) Transfer to your cup. So exactly two large cups. It looks like a latte. Don't skip the sesame seeds because sesame seeds smell really, really great. Really tasty! Mm, I love it! You can drink with a straw. Mm~, really delicious, it can be a good breakfast. I love to add a little salt here because it makes it enhance the taste. Nutty, savory, and delicious. Whenever I make a recipe, decide to which video I choose. Last time I made, pork. This time, maybe I should make some vegetable. always I like to make more diverse, but this time, I was thinking about one of my readers. My reader recently, she just sent me email, and very, very touching story. She's a cancer survivor. While she has cancer treatment, and she lost all appetite, and the doctor was worried. "You gotta eat something, you gotta eat something." "Otherwise, you can't, you cannot survive." But she lost all her appetite, but one day, she found, on the internet, my recipe. She just started making my one recipe, and then she could eat. Later, she decided, "okay, I'm gonna make every day, one recipe from Maangchi recipe." Yesterday she made this recipe, today is a different recipe, and she kept making. Her appetite came back, and then she gained weight a little. She went to the hospital, the doctor was surprised, "what made you, what made you gain a little weight?" She made her doctor so happy. Then, she recovered from treatment very quickly. She could go back to work, Now she's so happy, and she is really, gave me some thank you message, When I read this, I was so touched. Probably she's watching this video now.
