How to make Meat Sauce and Spaghetti

[Music] okay what's up y'all I'm Charlie today I'm going to be showing you how to make my wonderful meat sauce and spaghetti now this recipe basically mateus if you haven't had meat sauce and spaghetti before then you are missing out on some good food for real man so many memories of that when I was a teenager in the kitchen making this stuff it's just amazing you know this recipe serves about eight to ten people not only is it is this cheap you can buy all the ingredients we washed was probably less than like twenty dollars so it you'll be able to afford all the ingredients it serves a lot of people and it is delicious I must say it is really really good I'm telling ya so anyway but I prefer to do let's get started here is all what you need to make your meat sauce and spaghetti let's get start with our ingredients you will need two and a half pounds of ground beef 12 ounces of punch tomato paste no so egg now if you don't have the tomato paste you will need 24 ounces of hunt's tomato sauce no salt added you also need some unsalted butter and some sugar for your seasonings you will need one yellow onion garlic some fresh basil fresh oregano fresh thyme fresh parsley and bay leaves for your additional seasonings you will need some salt Tony saturates Creole seasoning now if you don't have this you can use a durian scrillz seasoning or to slap your mama Cajun seasoning you will also need some chef Paul phenoms Porter magic onion powder and garlic powder this is optional if you want you can use some grated Parmesan cheese and lastly you will need one pound of spaghetti and I could be thin or thick whichever one will work perfectly for this recipe okay and there we have it let's get straight to it we're gonna start by rinsing off our time I will basil make sure you can set off real good our oregano and our fresh parsley let make sure you rinse that off real good ok now we're going to chop one yellow onion make sure you chop that up real good here I have five cloves of garlic we're going to chop that up and tell it as mince as you see here okay here we have some fresh thyme we're going to start by removing the leaves off the stem at a time like that and this is one tablespoon at a time that we're chopping up here we're gonna chop it really fine okay here we have our fresh oregano we're going to chop the stem off the oregano and we're just gonna take the leaves and bunch those together and we're gonna chop that until resembles coarse crumbs okay here we have our fresh basil and we're just gonna chop that up until it resembles coarse crumbs okay here we have our fresh parsley we want to start by chopping off those stems and just discard that and we're going to take the leaves and bunch them together and we're gonna chop this until it resembles coarse crumbs very very very very fine like how you see here now let's make our tomato sauce in a medium-sized bowl add 12 ounces that's 1 and 1/2 cups of tomato paste no salt added and 1 and 2/3 cups of water stir all ingredients wouldn't whisk and tell combined that looks really nice pretty good and this is how it looks when we're done as you can see that's nice and smooth now let's get started on our ground beef treat your fire to medium-high heat in a large saucepan add your ground beef just add it in there all at once and this is 2 and 1/2 pounds of ground beef that we're adding in here ok now we're going to take our spoon we're just gonna spread that ground beef around our saucepan as evenly as possible [Music] now we're going to cover this with a lid and we're gonna let this saute for about 10 minutes now you want to make sure you stir this occasionally and after you stir it you want to make sure you take a spatula and you just want to break down some of those larger chunks of ground beef okay it's been about 10 minutes now and our ground beef is done oh look at that that looks really nice beautiful now we're gonna go ahead and turn our fire off add your ground beef into a mesh strainer with a medium-sized bowl underneath it now one let you know that those meat drippings underneath that you better not get rid of that that's flavor all right treat your fire to medium-high heat in a large saucepan add four tablespoons of unsalted butter spread the butter around your saucepan and let the butter melt add three tablespoons of your ground beef different from a lot so just say that all right add that in there now let's add some seasoning we're gonna add 1 and 1/4 cups of chopped yellow onion and 1 tablespoon of chopped garlic now you want to make sure you search you save some of that garlic and that chopped onion okay we're gonna give this a quick stir now we'll uncover this and gonna let this simmer for about six minutes stirring occasionally alright it's been about six minutes now and as you can see those onions and garlic it's starting to become nice and caramelized exactly what we want okay now we're going to add our ground beef let's add that just dump all that in there all at once give that a quick stir now we're going to add three and 1/2 cups of tomato sauce okay now let's add some seasoning y'all add a half a teaspoon of salt 1 teaspoon of Tony acessories Creole seasoning 1 teaspoon of Chef poppadoms fortune magic two teaspoons of onion powder two teaspoons of garlic powder now to cut the acid we're gonna add two tablespoons of sugar give this a quick stir now we're not done with seasoning not seasoned in part 2 coming up next stay tuned all right all right here we go part 2 add two tablespoons of fresh basil 1 teaspoon of fresh thyme 1 and 1/2 tablespoons of fresh oregano 1 tablespoon of fresh parsley and 3 bay leaves give this a quick stir cover with lid let this simmer for ten minutes stirring occasionally and while you add it you want to go ahead and taste it to see if it's at your desired taste and if not you can add more seasoning but be careful don't add too much alright alright it's been about 10 minutes now give this a quick stir and our meat sauce is now done look at how beautiful that looks now we're gonna go ahead and turn our fire off now at this time you want to go ahead and remove those bay leaves okay make sure you do that now let's get started on our spaghetti preach your fire to medium-high heat here we have two quarts of water into a large pot let this come to a simmer start of summer now here we have our spaghetti I'm gonna just break it in half and edit in there you get it in there whole do it however where you want to all right you might just give this a quick stir now we're going to let this simmer for about 8 to 10 minutes it's been about 8 to 10 minutes now and our spaghetti is done now you want to make sure that you taste test it to see if it's at your desired texture turn your fire off add your spaghetti into a strainer and that is hot hmm rinse off your spaghetti with cold water now if you don't like to rinse off your spaghetti you don't have to follow this step okay all right we returned our strainer back on top of our pot we're gonna place a lid on top of this and we'll let this sit for about 20 to 30 minutes okay any food processor add 4 tablespoons of melted unsalted or salted butter I prefer you use salted okay add 1 tablespoon of chopped garlic I'm that garlic that we chopped earlier earlier in the video you gonna add that in there and 1 tablespoon of chopped onion same onion every added early in the video just add that in there blend this for 1 minute and this is how it looks when we're done as you can see that's a nice stick pace exactly what we want okay pre-heat your fire to medium-high heat in a large pot we're going to add our onion and garlic butter paste right in there it's added in there all at once now once as it starts to melt you're just gonna stir that and let it sauté for about one minute after 1 minute turn your fire off now add your spaghetti add it all in there all at once now we're going to stir it just together now you want to continue to stir this until that spaghetti has been thoroughly coated with that butter you can add more butter if you like ok now add 1/4 teaspoon of salt now if you're adding salted butter do not add any salt to it ok add 2 teaspoons of onion powder 2 teaspoons of garlic powder 3 tablespoons of Parmesan cheese now you can add extra if you like totally up to you 1/4 teaspoon of fresh thyme 1/4 teaspoon of fresh oregano now if you adding basil you can add 1/4 teaspoon of that in there as well ok and 2 tablespoons of fresh parsley stir all your ingredients together and our mill is complete here is the final presentation and there you have it homemade meat sauce and spaghetti made from scratch by a New Orleans native if you like my channel hit that
