hey y'all welcome back to my channel in today's video I'm going to show you how to make these super easy super delicious loaded scalloped potatoes simple way so let's start by preheating that oven to 350 degrees okay you are going to peel three very very large russet potatoes now if you don't have potatoes this size that is okay just use about five or six smaller ones that should do okay so after you peel those potatoes go ahead and place them inside of some water so that they do not turn brown add three tablespoons of unsalted butter to your Skillet heat that Skillet to medium heat let that butter melt down next you'll add in one tablespoon of minced garlic now that's equivalent to about two garlic cloves now you are going to saute the garlic for just under a minute that is about all the time needed for that garlic to cook and become very very fragrant and add three tablespoons of all-purpose flour you're going to add this gradually this will help to prevent the flour from clumping up on you and you're going to let this flour cook until that flour taste is gone so that should only take about two minutes add one and a half cups of whole milk and a half cup of heavy cream okay and just stir this together now you want to make sure that both of these ingredients are room temperature the milk will begin to thicken okay and this should only take about three and a half to maybe four minutes and once that milk is thick go ahead and reduce your heat down to low add three ounces of cream cheese a half cup of mozzarella cheese and a half cup of sharp cheddar cheese now make sure that all of your ingredients are room temperature we don't want to have any fluctuations with the with the heat and you know within the pot we want everything to cook at a nice temperature okay we don't want no up and down okay so make sure everything is at a nice room temperature so once your cheese is melted you are going to season to taste okay so you can add some ground black pepper cayenne pepper and salt okay so start small stir that cheese sauce tasted and add more as needed okay then you are going to cover your pot we want to keep this warm okay so cover it turn your fire off and just let this rest foreign take a small amount of butter room temperature okay and spread some on the bottom of a casserole dish and this is going to help prevent your food from sticking so we want to make sure we butter our dish try not to do too much butter just a little all right so we are moving fast here okay so now we are going to slice our potatoes so I'm using a mandolin slicer now if you have one of these these will be very very handy when it comes to slicing the potatoes and I do recommend you guys dry your potatoes off really good we do not want our you know potatoes to be wet make sure you always use the holder to protect your precious fingers so that nothing will get sliced off so I'm gonna do very uh thin slices here you don't want your slices to be too thick because then it'll take longer pour your potatoes to get tender okay so this is about a quarter of an inch I would say cut your slices anywhere between a quarter of an inch and eighth of an inch okay and if you do not have a mandolin that's okay you can just take a sharp knife and go ahead and slice your potatoes just like this try to make sure they are all sliced the same size all right so once all of our potatoes have been sliced we are going to add them to our cheese sauce okay and we are going to gently stir we want to make sure that all of those potatoes are well coated in that delicious cheese sauce and since I had a little you know space in the pot I just went ahead and I peeled another potato so I use four potatoes total and I am going to just add a little more black pepper a little more cayenne pepper and a little more salt so now you can add your potatoes down into your casserole dish we are going to do just two layers okay so just add half of those potatoes into that dish then you're going to add your cheese so I'm using mozzarella and sharp cheddar cheese I graded a total of 10 ounces of mozzarella cheese and a total of eight ounces of sharp cheddar cheese okay so I just I'm just doing small sprinkles of sharp cheddar because I'm not a you know a big fan of cheddar cheese but I love mozzarella cheese so now go ahead and add the remaining potatoes then you'll top this off with some mozzarella cheese some sharp cheddar cheese and you can add any remaining sauce from your pot yeah so you want to make sure that you cover this tightly with foil this will ensure that the potatoes will cook all the way through and now go ahead and pop this inside of your preheated 350 degree oven so now we are going to chop some green onions and we are going to chop some bacon strips now these are optional it will make your food taste really really good so if you don't like bacon another good option would be to use turkey bacon you can use ham well if you don't like bacon you probably don't like ham Alexa off Alexa set a timer for 15 minutes starting now Alexa cancel the timer so now let's check on the potatoes these are just about done okay so I took the foil off once the potatoes were fork tender so that's what you want to do then you're gonna place it back into the oven and just bake it long enough to allow the cheese to get nice and brown okay so the total time for me was an hour and 15 minutes of baking covered and at 35 minutes uncovered and then I garnished it with the bacon and the green onions and yeah this is pretty much down from here so after you garnish make sure that you allow it to rest for about 15 minutes before cutting into it okay that will allow that cheese sauce to thicken up and you know it will allow everything to hold together this
