all right y'all today i'm gonna show you how to make some crawfish boudin balls let's go all right y'all check it out we got a tablespoon of parsley three stalks of celery we're gonna go ahead on y'all already know how we do this okay let's go ahead and give them all a good cut okay all three of them just make sure y'all that uh you take your celery when you're cutting all three sticks go ahead and uh cut them pretty fine all right so even if you get on some nice pieces like this go ahead on and dice them up okay all right y'all now of course we'll do the same thing with our velcro so down here new orleans y'all we got what's called the trinity okay that's a bell pepper celery and a yellow onion all right that goes into a lot of dishes your red beans uh boudin balls uh all kind of stuff it goes just about everything everything we make we normally use the trinity all right josh get your packing and green onions and go ahead on it let's disregard the ends and then we're gonna go ahead on y'all we need this whole pack right here okay and uh why why i'm doing this y'all i'll tell you what i did i just uh went ahead and uh got my deep fries started up at 350 degrees so i get that process happening okay john last thing we're gonna do we got a medium yellow onion go ahead and dice that up okay and then uh what we're gonna do next is we're gonna get our rice started and i'm gonna show y'all i got one pound of crawfish okay so that's what the right the recipe will call for uh if you can't get your hands on the crawfish down there you can just check it out call down a seafood shop in new orleans louisiana if not metairie louisiana and bucktown and it's probably about 15 a pound y'all and you can go ahead on down there and get them to mail you out next day mail y'all won and shipping is probably expensive you probably paid 15 for a pound of crawfish and 20 foot delivery but better than not having it all right also vegetables cut up let's go to the stove all right y'all heat that pan up throw in a tablespoon of butter all right y'all look check it out all the vegetables we cut up we're gonna go ahead and put them in the pan now and we're gonna take half the scallions that we cut up and we'll put those to the side everything else we're gonna get it in all right y'all take all the vegetables go ahead and saute them down until they translucent all right y'all now look you're gonna need to go with a cup of rice and just follow the directions however you normally cook it but go with a cup of rice up in that water my preference of rice all this prawn boiled rice for my cajun dishes that's what i go with but whatever you prefer you know what i'm saying you roll with it all right see y'all checks out my look we got the rice going vegetables are sauteing y'all and then i got my deep fry over here that's warming up to 350 degrees okay then we can move to the next step all right y'all so it's about almost done go ahead now throw in a teaspoon of minced garlic okay y'all already know the drill like i tell you all the time okay if you're going with minced garlic you always add that in at the end because we don't want to burn it okay all right y'all check it out i'm gonna show y'all show them in the pot at this point y'all we can go with just one pound of louisiana crawfish okay just like so and then what i want y'all to do is the main part now you already know going with your cajun seasoning a lot of people have been asking me where they can get my seasoning okay it's bakers101.com you go and check it out get yourself a look use a good couple spoons full in there at least okay don't be scared of that flavor and on top of that go ahead on in there with some salt and pepper okay as well to your taste however you like it all right y'all so now we put that one pound of crawfish towels in and go ahead on and get out of the mix around now look these come pre-cooked already so just go ahead on and let them steam you know cook up about a good two or three minutes now turn your fire all the way to low and go with a half a cup of chicken broth now go ahead y'all with a half a cup of shredded parmesan cheese okay go ahead and throw that in there get out a good mix around all right guys like at this point what i want y'all to do is heat that up right there until all that cheese we just put in there is all melted down okay all right y'all now so the fire's off on there go ahead in there with those green onions i told you to save it from really go ahead in with the rest of them okay just a little bit the rest will cook down okay i want you to do is get that damn mix around all right y'all so go ahead in there with that that rice i told you cook go in with two cups okay this is a half cup measure right here so i need to get about here four of them all right and then after we do that y'all we're gonna do let me get this last spoon real quick okay now look go in there with a little bit more cajun seasoning okay be nervous on that cajun season and trust me on that now go ahead and mix all that down now remember y'all are one cup of uncooked ratio that turned into two cups of cooked rice okay so now just go ahead on and get everything nice and combined okay take your time and just get it all together now i want you to go in there with another quarter cup of that shredded parmesan cheese okay and mix it in all right and finally yo a half a cup of bread crumbs okay that's gonna help it to hold it all together okay so go in with a half cup and get that all there a good mix up okay mix it all together make sure it's combined really well let's see all that cheese and the bread crumbs that we just added that's what's gonna help us to make it into a ball okay so now let's go ahead and make sure it's all mixed up real good and then what i want you to do is just go ahead and leave this alone for a second all right y'all so look we got the mixture in the bowl cooling down now we'll get together we need to do to bread it up okay three large eggs three large eggs in there going out with a quarter cup of milk all right once you do that i want you to take your cajun seasoning put some cajun seasoning in there for some good flavor right and just go ahead and make sure that's mixed up real real good then we move on to the next part now go in the other bowl y'all with about a cup of all-purpose flour okay on top of that throw in some more cajun seasoning all right all right y'all now it's time to take your mixture that we made and go ahead and make a ball out of it okay let's get you a nice little ball and then into the egg wash get you a good coat on there okay and then into the all-purpose flour right make sure like i said you got to make sure it's coated really well and once that's done go ahead and sit on your little wrap okay continue that process all right y'all check it out at this size right here you can get a good 25 to 30 of them show them the size that is up close right now we're gonna go down to the deep fryer y'all and we're gonna put them in let's go all right y'all now like i said it's preheated to 350. so go ahead on and drop some crawfish balls in there don't overcrowd you're frying if you're using a pan don't overcrowd that either okay either way you don't overcrowd it and uh like i said too is that they already cooked okay guys so keep that in mind all right we're just doing right now is getting some good old crisp on outside all right y'all after about three minutes you're gonna get that pretty little golden brown in there go ahead and put them on a cooling rack for about five minutes before serving all right y'all so now the crawfish bow down is done all i like to do is go ahead and put some lemon on top mine let me tell y'all something if you
