today we're here with my friend carolyn anderson and she's going to show us how to make butter the easy way okay this is heavy whipping cream that you just purchase anywhere and we're going to pour a little bit in our food processor here and we set the butter out yesterday you can set it out what caroline up to maybe two days before yes cream sets out it's real like what we used to call clabber but this is the easy way to do it it's beginning together together to make it gather up and look at the butter so we're gonna do the rest of it here what we do is just pour this up so when carolyn was young at home they had a cow so they churned butter the old way well today neither carolyn nor i have access to fresh cow milk we wish we did i guess letting it sit out makes it come together faster yeah just like in the old days you would have let your milk set or your cream set right before you right before you turned this is just regular whipping cream nothing added let it sit out and cloud we're gonna wash this so [Music] really doesn't take long no it doesn't so did your mother make uh butter once a week or every few weeks or how did you do it about once a week we had butter and my mother used to say i would stand with a cup waiting on her to get it finished because you liked it because i love buttermilk and that was my nickname buttermilk oh [Music] so it made quite a bit and moved quite a bit only several cups looks like ice cream almost it does now what we're going to do now is wash it we get all this buttermilk out of it and i will get another bowl and this is called washing it you just get all the milk out of it and you can use the milk for making bread or whatever it's not as rich as cows [Music] milk but it serves the purpose in it and it's good so this gets most of the milk out and then you start washing and this is cold water and we just keep kneading it and this we just throw out because we're getting rid of all the milk that's in the butter i tried making butter like this one time years ago i think i even had fresh cream but mine never firmed up and that's why because i didn't do this step is that why maybe yeah all the water and i didn't even get all the cream part out so all the milk part so this is the step that helps it be more like real butter yeah and the water when you're washing it needs to be cold and this is coming right out our whale so it is cold but you can use just ice water if you want see how the water is getting clearer now [Music] so you just keep doing this until you get clear water you do and then sometime during this process you can soften it a little you bit throwing all the water off the water's clearer now yeah it's basically just clear water now then you just start working and pouring up off all the excess water there's still a lot of water in it so so when you turn butter uh when you were young you still had to do this step two yes you still had to become gathering up all the butter you'd use the mold the one that you had i guess call it dasher and you just gather it up with that put it in a big bowl and you just go through the process just like this washing it and getting all the milk and the water out of it and you put salt if you want salt i think it's not ready for some song i guess you sawed it to taste i mean you sold it to taste yeah so you'd kind of have to just figure out what you thought was and with everybody's salt and take your conscious over it right now so try not to over salt yeah and i don't guess you'd have to salt it at all you wouldn't want to a lot of recipes call for unsalted butter so most of the water's still a little bit left there's your good rich butter so when you store it of course you put in the refrigerator how long will it last just in the refrigerator like would you put all that just in the refrigerator and then eat on it would that work no i i kind of divided it and put it in little containers and you can freeze it and it works fine this will probably you could put a cup in the refrigerator it would last a month okay it wouldn't last a month at my house it might not even last a day or a week [Music] but i do butter like this all the time and have fresh butter in the fridge it is a messy job but it's worth it i think oh yeah especially got a piece of homemade bread or a hot biscuit or something to put it on oh yes i make biscuits so my husband really likes this butter on a biscuit so we have containers to put this in yeah a lot of people like to mold it but i think you have to have it colder to put in the mold and i do have butter molds but i don't usually do it it is pretty in a book we always molded ourselves when we were home yeah and there's your butter
