y'all welcome back to the fire and water cooking channel i'm darren today i'm doing something a little bit different something i haven't done before but i get a lot of people that ask me what do i do with leftover brisket and since i just did a couple of uh brisket videos i figured i'd show you how to make brisket chili all right this is the way i make it i'll be right [Music] and back [Music] all right guys so this recipe it doesn't recall for any sous-vide or any barbecue because i'm using a brisket though that was soupy and barbecued but i always get these questions you know people who will buy a whole pack or brisket cook the whole thing and they'll only eat like half of it and i'm like what do i do with the leftovers so i'm going to show you what i usually do a lot of times i don't have leftovers because usually when i cook a whole pack of brisket i have a whole bunch of people coming over but when i do i happen to have a good size a piece of flat left over from the videos i did last couple weeks so i'm gonna go ahead and show you how to make brisket chili now this is the way i make it it's not you know set in stone as far as i'm concerned you can make chili any way you want with beans without beans people will fight over it just like barbecue but i like making it more like a stew so i put beans in mine i put a couple different kinds of beans i use regular peppers i don't make it very very spicy i make it just a little bit of kick to it but let me show you how i'm going to make it i'll be right back i got all my stuff cut up and ready to go so it's going to be really easy in a really quick video so i'll be right back i'll get my stuff all right guys i'm going to go over what my ingredients are here first thing i'm going to do is turn my pot on about 350 with a little oil but i got about two pounds of cut up brisket flat and about a cup and a half or so of sweet vidalia onion and about a little over a cup of sweet peppers i'm gonna have my seasoning mixture which i'll put in the description below i've got two cans one big can one medium can of petite tomatoes i'm gonna leave the moisture in them i got two different kinds of beans black beans and kidney beans and some beef stock so that's what i'm going to do first thing i'm going to do is actually get my peppers and onions sweated down and i'm going to use about a quarter of the seasoning in it before we get going i've got my spoon out here again just kind of want to get these stirred up some [Music] i said we're just trying to cook these down a little bit we'll get them a little uh sweat it out [Music] all right i'll let them cook down a little bit and then i'll be right back all right i'm gonna move you over a little bit just see more in the pot i'm doing pretty good [Music] i don't want them really to get translucent just want them to sweat down a little bit kind of release some of those flavors all right i think this is about good sorry if this is loud i know my microphone's right here try to be a little more conscious of that all right i'm going to go ahead and dump my brisket in that's good enough for me on that [Music] i'm going to add just a little bit more oil just to kind of coat some of this brisket the fats gonna start to render and melt here i want to mix these onions and peppers in [Music] i am gonna turn this heat down once we get everything in the pot and we're gonna let it kind of simmer for a while so um just so you know this it's on 350 now just to kind of get everything sauteed brought up the temp i want to put about maybe a cup of beef beef broth in here it's optional you don't have to but like i said i'm doing it more just to add a little bit more moisture [Music] [Music] now like i said with me with the chili i mean i'm i'm open to putting just about anything in it that you want to as diva q danielle says it's your kitchen you can do whatever you want this is how i do it so you can follow my recipe or you can adjust it and change it or make what you want but this is how i'm doing mine so as you can see the brisket's in there i got a little bit of the beef broth got some of that seasoning in there smells really good right now so i put just a little bit more i don't want to over season it because i know that my wife and kids don't really like it really really hot so i don't want to make it too spicy and hot that they won't eat it i can always put more it's really hard to take it out all right guys i'm going to put my cans of tomatoes in i did not drain them i'm using the moisture from the tomatoes to kind of make the the stew i'm also going to add a little bit more beef broth to this just so uh because i want to make sure it's kind of wet i don't want it to be really uh really dry i did drain the water and moisture out of the beans because i don't want that uh really starchy water in there at all so we're gonna go ahead and give this a really good mix and then we'll test it out see if we need to add any more seasoning right now i'm going to go ahead put the lid on and i'm going to drop the temp down on this like 250. we're going to let it simmer for an hour or so and then we'll be back to check it all right i'll be back guys this has been a little bit probably like 45 minutes or so i did turn the temperature down just a little bit because about 10 minutes in i came back and looked and it was kind of boiling so i turned it back down and remember everything in here is already cooked so all we're really doing is heating it up and melting the flavors together and take a look at that that stuff is look at that that's awesome looking smells good too boy i can smell the smoke from the brisket and the onions and the peppers and as you can see it's nice and nice and wet i don't think i have to add any more stock to it see the tomatoes floating around let me take one bite here double check on the uh seasoning hmm yep i think that's perfect it's got a little bit of kick not too spicy enough salt enough pepper and i think that's it i'm gonna let it just kind of sit here and melt for another 10 minutes or so and the way i usually serve my chili whether it's this kind of chili or any kind of chili i just put in a big bowl actually i cook up some white rice and i pour my chili on top of the white rice put a little cheese and maybe a little sour cream on it and that's it there you have it guys check it out it's a great thing to do with your leftover brisket if you make it like i just did it's really simple just a few ingredients doesn't take long to cook um you can let it cook actually just let it sit here like i'm gonna do for about maybe another 40 minutes or so and just kind of let it meld into the flavors i'll turn it down just keep it on warm so i don't um get off too much of
