welcome to "The Cooks Domain". and this video is  the gravy video that i made for the roast beef   if you haven't seen that video then click on the  link wherever it may be i don't know these days   and go go watch that and i'll show you  how to make a tender delicious moist   roast beef out of topside or silverside  which are notoriously tough cuts but now   let's get on with the gravy so for those  who haven't seen the roast beef video   we roasted our beef on a trivet of onions celery  carrots garlic and a little bit of red wine   and these are the juices left over after the roast  so we can now turn these into a delicious gravy   okay so with our roasting pan now over the heat  on a high heat what we're going to do now is just   try and get as much flavor out of those vegetables  so we can make a delicious gravy just want to   bring it up to temperature now we want to  sprinkle in two large sprinklings of flour and we're going to work it in now all depends how thick you want your  gravy this isn't going to be very thick   but if you want it thicker than by all  means add another heap teaspoon tablespoon   of flour okay so once it starts sticking we can  pour in our half a pint or more of beef stock just work that in now if you have a potato masher   what you can now do is just squish down the veg  just to get them to release more of their flavor before we finish this up just  do yourself a little taste test   just see if it needs any salt any  pepper and i would say no that tastes   absolutely delicious anything we want to do now is  to separate the gravy from you know the vegetables   that we've got in there okay so that's looking  ready to me we'll turn off the heat bring over our   saucepan with the fine mesh sieve and just  pour this over the top as you can see after   a few minutes of jostling it around most of  the liquid is now gone that's that's about done the only other thing to do now  is to put it on a gentle simmer and just simmer it down to a  thickness now level that you'd like   so you can make this gravy  as thick as you want it you
