yeah hi my name is jeff i help run operations at polyacy i'm going to teach you how to toss a dough today so the key to start out successful is to start with a round dough ball out of the tray this is how i do it i get my dough knife under the dough grab it and then scoop it up then covered in flour the side that was down is now going to be the side that's up on the table so the first thing we're going to do is we're going to define our crust put my fingers together and i'm going to go about an inch in off the edge of the double and push down so i'm going to do that all the way around the dough ball now the next step is to get the dough ball a little bit bigger you'll see my fingers fanning out in both directions and what i'm doing is really trying to make the dough ball bigger but i'm also trying to get some of the dough out of the crust okay so at this point you can see i have a nicely defined crust you can see there's a little bit more dough in the middle so the next step is to take this and make it about 13 inches or make it ready to be able to toss i'm going to do this by pulling in opposite directions you can see my fingers out at the edge and you can see my hands rotating so at this stage you can see my crust is clearly defined and i still have a little bit of dough in the middle so i'm going to go on to tossing the dough the key to successfully tossing the dough is to get rotation on the dough i do that by holding the dough with my left hand or anchoring it and with my right hand up i put it on the edge of the crust and the key is to come across your face and get that extension that extension is what gives you the rotation it's a little bit like shooting a basket where you come up you shoot and you extend so you can see i'm going to pick my dough up with my left hand i'm anchoring it with my right hand i've got it up and on the edge of the cross and i'm going to come across my face and extend out now that i've tossed it out i'm going to lay it down on the board now the side that i stretch with my hands is now the side that is up you
