hey I'm drew from Kingsford Charcoal back out here in my backyard we're going to do two kinds of salmon we have a sockeye and an Atlantic salmon and what I like to do is get a nice thick fillet and leave the skin on the skin itself is actually going to act almost like an aluminum foil we're never going to turn it on the grill we're actually just going to leave it down skin side down and let it cook all the way through and this is such a simple recipe and I love it so it's really easy take a little olive oil brush it on not too much just add a little bit of flavor a little bit of moisture okay and then I do brown sugar just kind of pack on a light coat just like that and then I do a little bit of chili powder chili powder you know I think there's a kind of a misnomer with chili powder that it's spicy and it's rocks it's not it's a great blending spice and it brings things together a little bit of salt and then just for a little bit of heat a little bit of texture some red pepper flakes that's it we're going to put that right on the grill so the salmon side up let's head around for a few minutes let the brown sugar kind of melt into it now it's ready to go on so salmon obviously has a thicker side that's either side I'm gonna put the thicker side towards the heat that's hot as a hot grill notice what we're doing is we have a two zone fire and so we're taking some of the bigger pieces putting the egg ensure that the bigger side is towards the fire and then we're using this void side in this case is kind of a little bit of a holding container for it so they're going to be on we're going to watch them these won't take more than about 10 minutes to cook we're going to put the lid on so we get any of the flare-ups from a little bit of fat in the salmon as well as the olive oil so let's put the lid back on let them cook what's great about cooking salmon this this cook is it's really cook easy to do and it's great on a weeknight I like to round it out and add some different flavors some different vegetables make it as a healthy meal this is the way I cook corn super easy so you know you'll see out in the backyard you got a husk this thing it takes a while nobody wants to volunteer to do that all I do is skip off the top soak them in water put them on the grill just like that that's all we're going to do so a charcoal grill unlike a gas grill where you just turn a knob and you get a the right temperature here it's all about air in underneath and air out the more open the vents the hotter the girls are going to get so if you love this video hit the subscribe button and for more great grilling ideas go to grilling dot-com
