hey thanks for coming by I'm Matthew Barlow this is Barlow barbecue tonight I'm going to be doing some lamb shoulder chops on my weber kettle grill and i'm going to be doing that over direct heat tonight so it's not going to be a long cook it's going to be actually probably pretty quick this is my first time doing this so we're all going to learn together as we go but I'm feeling like it's going to be pretty good so let's get started so here I've got four lamb shoulder chops and they're not to be confused with lamb chops you see these are a lot thinner and they've got a lot more kind of hearty connective tissue but look at the marbling on this lots of good fat so now the only thing I'm going to do with these I'm not going to marinate these at all I'm kind of going with a greek-inspired olive oil dressing then I get that I'm going to put on these when they're finished but to begin I'm just going to put some salt and pepper on them before we put them on the fire so I'm just going to use some regular cultures kosher salt and then some black peppercorn freshly ground is preferred okay so now I'm just going to flip these over and do the same thing to the other side okay I've got everything set up to get the fire going and using in charcoal chimney with about 20 charcoal briquettes in there and that should give me a hot enough temperature to sear those shoulder chops over and I'm using this slow and sear from adrenaline barbecue company I'll put a link to their website in the description box below okay now if you don't have this it's completely fine just set up but you've got some charcoal baskets or or even if you don't just set your charcoal up to one side and get enough going that it's going to give you a good high heat and to see everything with okay so it's not necessary that you have this so I've got these wax lighting cubes in the middle watch this stuff lights up super quick BAM it's lit so now I'm going to go ahead and kind of get some of these charcoal briquettes nestled around that cube just like that I'm going to let that go till it's ready and just should be about ten minutes or so all right so why the fire is warming up I'm going to go ahead and make the olive oil dressing that I'm going to drizzle on the lamb chops when they're finished okay for this dressing really easy you just need a few ingredients got about a quarter cup of some olive oil here teaspoon of some minced garlic I like garlic so I put a little bit more in there and then here I've got about two tablespoons of some fresh oregano rosemary thyme and sage now if you're using a dried spice like a dried oregano you're not going to want to use two tablespoons that will be way too much you're going to want to use a lot less you can always add more so we're simply going to take these I mix it in right with the olive oil mix that all together and we're going to set that aside until it's time to eat all right the charcoal is ready put that on got my grade on and throw this lamb on here and we're just going to give that a few minutes on each side and see how it turns out it's been about two minutes so I'm going to flip these and it's been another couple minutes so keep turning them want to let them get nice and crispy on the outside okay I'm going to call he's done I'm going to set them aside and we can get the next batch going you and we're going to do the same thing for these okay few minutes let's put these over all right so while these are cooking we've got some sides going right over here with campfire check this out that look good or what so we got a lot of Brussels sprouts going and then in the tinfoil there we've got some red potatoes cut up and seasoned cooking over this campfire on a beautiful night the Brussels sprouts are marinated in balsamic vinegar and soy sauce a little olive oil and some ginger mmm we're going to be great all right let's get back over to the lamb shoulder chops can't stray too far got to keep your eye on the grill these are looking great these are almost done spit all of them on you now so yeah when you feel like they're done they're good enough for use you might like them a little bit more on the medium rare you might like them a little bit more on the well-done you just cook it till you like it but I'm going to see again when these are done and we're ready to plate up and give them a try all right so we're back over about a campfire and looks like the potatoes are ready you can tell the potatoes are ready when you take something pointing it 5dr through like butter no resistance otherwise I mean how are you going to know so let's open this guy up you could throw like a mild butter in there or something those are perfect [Music] all right first things first eat a little red wine cheers to you and a little lemon squeeze right on here try it out rune rich savory and get all those fresh herbs in there and the garlic it's awesome you should try it super easy to do just do it over direct
