today we're at Pacific Seafood and Susie is going to show us how to break down a whole salmon so starting at the tail end she's going to come in above the anal fin keeping our knife against the bones there up to the spine break through the rib bones here and then grabbing the pectoral fin she's going to come at a nice angle to get the meat under the head switch Direction and take off that entire side in one Fell Swoop turning the fish over she'll grab the pectoral fin again and cut at an angle underneath the Head meat now she picks up the belly meat and slides the knife not sawing but sliding The Knife Down down to take that fillet off and we have two fillets ready to go next she's going to remove the pelvic Fin and the cartilage that's attached to it and then removing the rib bones slicing that knife up against the rib bones in order to take that off little bit more trim work flip that puppy around now watch her hands and the way that she keeps the skin taut will do this twice so you can get a different angle pulls the skin taut switches her grip here's another view and then pushes the knife through while pulling on the skin look at that almost zero meat on that uh skin now moving to the other filt again she'll remove the pelvic Fin and the cartilage attached to it next removing the rib bones keeping the knife tight against the ribs and then slicing through we'll do a second shot of this you can see the knife just going up against the ribs there little bit more trim then we'll move on to removing the skin again the trick here is to hold the skin taut pull the skin and push the knife at the same time now Susie's actually won a number of competitions for Speed and accuracy on filling salmon but I of course asked her to slow way down for this tutorial and there's the finished product awesome job
