[Music] hey guys what is up today I got a beautiful hole 7 4 kilograms I'm gonna show you how to fill up this puppy this is a font Norwegian salmon and we're gonna want to have a hole fill out of this salmon to get as much meat out of this salmon as we can we want to get all of this meat right here so go we're gonna start up top and cut into the seven until we hit the bone then we're gonna rotate around this fin and cut it open I'm gonna move this salmon around and what I like to do is get one of these towels to help me get a firm grip on the salmon because it's super slippery also I put a little towel under my cutting board so I'm sure it doesn't slip we're working with a sharp knife so we got to watch for safety now that we made our first cut we're going to slice around the back and get the first phillyd off so we're looking for that backbone I'm going to work our way through the salmon making sure that we're staying close to the backbone there we go and this is our first fill it will turn the fish around and make the same cut that we did in the beginning flip it back around and search for that backbone there we go now they're still a little bit of salmon left on these bones and we don't want to throw that away just scrape it off with a spoon this stuff will make for a beautiful salmon tartar look that's much better almost no meat on there anymore and that's what we're looking for so this is done you can use this for like a super or something like that roast it first in the oven then put it in your soup and you will make a beautiful fish soup now we're looking at a beautiful Filat there's still some bones here so we need to slice this off make sure that we get rid of all this cut underneath here remove that fin now to make this filter look a little bit better we're going to make a straight cut well now in the center here you have some fat and some hard bone and we still want to remove so we'll make a little V cut here that's a nice-looking Philip so I'm just going to take out these bones which are in here one by one look all the bones are out do one final check yeah no more bones in there now this is almost done I just want to get this little bit of back fat off because I will be cold smoking this salmon and I don't want that amount of fat to be in there if you're grilling this salmon you can leave it on there it will taste just fine oh that's a beautiful salmon fill it right there so guys like with anything this requires breakfast but if you don't do it the first time and work on it and practice you will never be good at it so give it a try and I'm sure you will get the hang of it and you will start enjoying cutting a filler like this thank you for watching see you guys next time Cheers [Music]
