hello and welcome to an episode of babish fishing I'm - and today I'm gonna teach you how to make my easy perfect smoked salmon recipe I love smoked salmon because there's something about taking my catches from the river and turning it into an actual dish a shareable dish that makes me love this outdoor life even more today I'm going to show you how to make my easy dry brine recipe and I'll show you everything from the brain itself to putting the fish in the smoker and enjoying it with your friends and family okay let's get going the tools you are going to need is salt pepper we're brown sugar a measuring cup gloves and a knife I like this one because it has a built-in sharpener thank you very all right let's make some smoked salmon the first thing you're going to do is grab out a piece of salmon I caught some ssin of the other day so that's what I'm going to use I'm gonna dip it in a bowl of water and I have some towels that I can use to pad it off dry I'm just going for each individual piece rinsing them and inspecting them to make sure there's no leftover guts blood fish slime or anything so it can be perfectly clean and ready for brining which is coming up next and again you just take your fish dip it in water or rinse it off on the sink set it on your paper towel and Pat it dry all right grab your measuring cup and your brown sugar now we're going to measure our brine mixture which is going to be 4 cups of brown sugar for every one cup of salt I like the Morton canning salt and we're gonna measure out some salt add it to our brown sugar and I will have all of these ingredients mixtures smoking times and everything ready for you and the information down below the video and so you can reference it there if you need to I'm just mixing this all up by hands breaking up pieces of brown sugar then we're gonna grab our pieces of fish this parts important cut it up to whatever size you want I cut it up into the sizes that I like to serve the fish in once it's smoked and make sure all of the pieces that you cut are the same size this is important because when you put it in a smoker you don't want some pieces coming done too fast because they're thin or small or other piece is not being cooked enough because they're larger thicker and so I throw these into the bowl cover them up with a brown sugar and salt mixture and really making sure I get to that mixture packed onto the fish leaving no raw fish exposed anywhere next I'm going to grab my Tupperware and start fitting bits of fish into this Tupperware I usually do about three or four pieces of fish per container but however you want to do it is just fine these are gonna sit in this dry brine recipe for six hours they're gonna go and dry but once you return to them after the six hours is over it's going to be a kind of salmon brown sugar syrup but you see and that's exactly what you want this piece is a little bit too big let me just cut this down really quickly from here we go into the Tupperware Bowl a little bit on top just to make sure there's enough and six hours this will sit here with a lid on once the six hours is over I'm going to take each of these pieces to the sink and rinse it off you'll notice that they have a hard and shiny layer over them that's exactly what you want here I'm just rinsing off extra brown sugar and salt I rinse them off and then I set them on a towel next to the sink just to dry up and then later out I'll put them out on a table but I want used to drive for one to two hours once I have them all rinsed off I use a fold-out table I put shopping bags cut out on to it and I lay these out to dry with a fan just in a cool place for about an hour from there we go into the smoker the temperature set at 160 for one hour and 140 for two to three hours until the desired texture and that desired texture will look a little bit like this firm oily delicious looking salmon and that is exactly what you want all right thank you so much for checking out my video smoked salmon is a fantastic holiday appetizer or even a fantastic holiday gift itself for more videos please subscribe to my channel share bye - fishing breakdown below and you can follow me on Facebook Instagram and Twitter and please send me your smoked salmon recipes I would love to know what you guys are doing at home as well and if you use mine send me a photo of it it would love to see how it turns up for you let me know what I can show you next time by commenting below thank you [Music] you [Music]
