HOW TO COVER A CAKE WITH CHOCOLATE GANACHE

hi there my lovelies if you're like me and you're not really a big fan of buttercream frosting or maybe you already just want to try something new chocolate ganache is a great way to decorate your cakes it's not that difficult but there definitely are some tips you're going to want to learn that will make your life a lot easier so let me show you how to do it to make the ganache add some heavy cream to a saucepan and bring it up to medium-high heat once it comes to a simmer add it to the chocolate make sure to not let your cream come to a boil go ahead and let your mixture sit for a minute and then with your spatula mix them together until the chocolate is completely smooth we're going to set that aside for a few hours to thicken up I have here my baked and cooled chocolate cakes if you want my chocolate cake recipe look in the description box below I'm taking them out of the pan and wrapping them in plastic wrap and freezing them overnight this helps lock in the flavor and makes them really easy to cut I have two cakes that I previously froze so I'm going to trim off the top to make my cakes flat you can save the top to either eat or make cake pops out of or whatever you like now to slice my cakes in half I have this nifty little cake leveling tool that I'm going to use but if you don't have one that's no problem take a roller measure halfway up your cake and place a toothpick in that spot as a marker you're going to want to put four or five all around your cake and with a serrated knife use the toothpicks as a guide okay so I'm going to cut both of my cakes in half so I have four slices place one of the bottom pieces of the cake on a cake board on top of a spinning decorating cake stand then a brush my cake with simple syrup to make sure that the cakes stay moist next layer your desired frosting onto each layer of cake I'm going to use peanut butter cream cheese frosting make sure to check out that video which I'll link down below if you want to use that frosting also you can also just use the same ganache that we will use to coat the outside of our cake if you want for the top layer of cake I'm going to use what was the bottom piece of one of the cakes and place at bottom side up so that we have a nice clean edge then give it a last coating of simple syrup now I'm going to place some wax paper on top of the cake and using a leveler I'm going to push down the sides of the cake to make sure each side is even I'm taking my icing and filling in any gaps in between the layers then with a bench scraper I'm going to run it around my cake to smooth out any frosting I'm just going to place that on a plate and put it in the refrigerator for 30 minutes so the frosting can firm up now that my cake is firmed up I'm going to add it back to my spinning cakes tin and it's time to add the chocolate coating you want your chocolate to be thick enough that it falls off your spatula in one clump and doesn't drip off your spatula just like this or even a little bit firmer so I'm scooping out a pretty generous amount onto the top of my cake and with my offset spatula I'm evening out the chocolate make sure to spread the chocolate all around it's okay if it gets over the edges of the cake then with a piece of wax paper starting at one corner of the cake and pushing down and smoothing out any bubbles place the wax paper on top of the cake you don't want to just pop the wax paper on top because it will create lots of air bubbles in your chocolate then slide the cake off the stand and gently turn the cake over give it another look with the leveler to make sure it's still even and push down on any sides if you need to then taking big scoops of the chocolate cover the entire cake all the way up to the cake board make sure that the chocolate is thick enough that it comes out all the way to the edge of the cake board you're going to need a bench scraper that is 90 degree angle you're going to place the bottom of the scraper directly onto the cake stand and the side against the cake board then you're going to drag the scraper turning the cake stand this will get your chocolate perfectly straight and smooth just scrape any excess chocolate back into the bowl I'm going to scrape any little excess chocolate that was on the board to clean it up then flip that over back onto a plate and peel off the wax paper if there are any little holes gently fill them in with chocolate and some of any edges out with your offset spatula then place that in the refrigerator for another 30 minutes to completely set and then it's ready to decorate I hope you enjoyed this video make sure to check out my chocolate and peanut butter drip cake which is linked down below along with the full recipe for this video for ideas on how to decorate this cake also don't forget to subscribe see and full access to all of my videos alright I'll see you back here next week bye my lovely
