[Music] welcome everybody to another episode of latiff's inspired today i'm going to be making one of my favorite dishes and it's so simple to make anybody can make if you follow this step by step this is the very famous dal bhuna such a humble little curry lentil curry also known as a very good vegetarian dish and a fantastic side dish as well and it's so beautiful in flavor it's absolutely gorgeous dish so today we're going to be making a very simple humble lentil curry dal bunner tarko dollar whatever you want to call it now let me show you some of these ingredients um right this is the actual masoor dal it's a red lentil so this is going to need a lot of washing three four four or five times this is just over a cup so if you've got about let's say measurement wise if you've got one cup of this you're gonna need about four cup of water lovely coriander i've got a nice blend of spices um which i'll go through with it shortly and a few other ingredients i'll go i'll explain as i go along now let's cook this wonderful dal bunner [Music] what a wonderful so bismillah to start off with that's four tablespoon of just normal oil vegetable oil and so on right the oil is nice and hot now now i'm going to be whacking in one diced onion this is guys so cut it as small as possible it's ju we just want it to become a nice thick paste i am the original firestarter you know i'm just messing around i did that on purpose right i'm just waiting for the onions to become slightly golden when it's slightly golden then i'm going to add ginger and garlic this is the ginger and garlic paste i'll put a link on the description box it's got ginger garlic coriander that's why it's sort of green and peppers i actually show you how to make that on the channel so we're gonna add two good heaped teaspoons all the waft of this is absolutely gorgeous beautiful love the smell of ginger and garlic when it hits the oil and like caramelized onions it's fantastic so let this all sort of that rawness go away right these are the bay leaf bangladeshi test fatter the dry ones these are got released some lovely fragrance and essence and a bit of sweetness as well in flavor so this is probably been about three four minutes right i'm just going to add some salt so this teaspoon is slightly a little bit bigger so i'm going to be adding one good teaspoon of salt the salt to taste you can add more or less to your preferred amount give that a little stir the onions at home should take about a good uh 10 minutes to soften up once it's softened then we're going to add the spices whereas in the restaurant uh we've got superpower burners that they're nice and um make it speedy for us to cook all the dishes so literally within five minutes our my ones are going to be done and then i'm going to add some amazing spices right as you can see the onions have caramelized wonderfully for me it's literally been about five minutes and now i'm gonna put the gas down to a very low gas there you go and i'm gonna add these colorful spices so um i've got here turmeric if you're adding a naught if you're making a general taco dal um you would basically just add turmeric as in spice but because this is a dal bhuna and this is more flavoursome you can all we're going to do a taco as well i'm going to add half a teaspoon or one teaspoon that is sorry of turmeric and i've got one heap teaspoon of coriander this brings out a lovely flavor and i've got two good teaspoons of curry powder you can use general curry powder mix from any supermarkets eastern brand is the one i recommend and just one chili powder one teaspoon of chili powder so this is your spice mix guys so this is going to build a wonderful flavor normally on a taco dal there aren't there aren't spices if you go to an indian restaurant but this is home style a dal right so this goes in and normally spices can get a bit damp so make sure you put it into the oil and cook it for a good minute or two and let the spices just come alive and it just and kicking basically so it's damp and now we're just bringing it alive check this out mama can you smell that yeah wonderful right now we're adding these gorgeous tomatoes so this is just two top uh medium sized tomatoes diced up um they going this is gonna create a nice little thickening sauce as if you follow my channel you know i love a good tomato and this tomato i don't like using the tomato puree i do use it but i i like for freshness i like these lovely tomatoes it brings out a nice little tangy sort of flavor freshness is always king so now this is called the boonering process so all we're doing we're boonering all the spices and letting those tomatoes sort of dissolve kind of thing so let all that liquid and everything marry up together become a lovely gravy guys as you can see this has bounded to help my desired liking and the oil has separated now the lentils i washed it was in a smaller cup over here it almost doubled in size when i washed it you have to wash this about three four five times even work that in gas is on low as you can see now all the spice and everything has mixed in i'm gonna get the water ready right the lentil um it was one of these cups so what i've done is i've put about four cups of these uh water ideally you want uh boiling water i just got cold water today so whack that in these are gonna become double up even more and break away and create a lovely thick gravy like sauce so there you go now you can whack up your gas to a high heat find a lid and let this cook for about 15 minutes or so just keep an eye on it i'll come back in about eight to ten minutes or so right the dow's been cooking away for me it's been about eight minutes or so so let's check it out uh at your homes at a normal gas power or electric power it should be about 10 minutes so this is how it's come to there you go look at that look at that guys the doll is sort of it needs to come to a consistency where it's sort of breaking away when it's that at that breaking away that's when we're gonna add the last technique now this is the dal booner so it's going to be nice and thick but if you like it a bit runny you can always add some water and what i'm going to do now for a bit of flavor we like a bit spicy so i've got three green chilies just sliced up i'm going to whack them in keep it whole so you can see it the seeds and all the flavors going to come out now and this is towards the end we're going to do a nice little tadka when we're going to do a bit of tampering this looks beautiful there you go be careful it's bubbling away it's going to be spitting at you wonderful so as i said this needs about 15 minutes cooking time when we're at the restaurant we just sped up everything so put the gas back down and give it another three four minutes and then i'm gonna come back to it to finish off right it's been a good 12 minutes or so 12 15 minutes for you guys at home look at this that's the thickness consistency now the dal you can see the whiteness sort of um al dente sort of style that means it's not ready so it needs a good three four minutes so if you're at home 15 to 20 minutes is perfect you'll have to judge it with your cooking knowledge to get it right but if you cook it for 20 minutes there's no problem whatsoever but if you've got a hungry family then it's better to just sort of double check it there you go just a few few of them is a bit opaque like it just needs to and then you can see the tomatoes have broken away and created a lovely thick gravy at this point as well get a teaspoon taste the salt oh yeah lovely now you can have this dal as it is as it is just like this but we gonna elevate the flavor and we're gonna take it to a next level by adding a lovely tarka in fact i'm just gonna add about half a teaspoon of salt at this point this is ready when you that thick custard consistency as i always say and bob's your uncle done see the green chilies is whole so you can take it out but the flavors have come out it's nice and spicy there was a teaspoon of chili powder in here and these green chilies is going to bring a lovely fragrant sort of spice to it my cooker's in a bit of a mess but that's what that lentil does for you so now we're going to start making the tampering inshallah so now this lentil is done um now i'm going to create put the gas as low as possible and we're going to create a wonderful tadka right so this is two tablespoons of pure ghee you can add three or four if you're not watching your beautiful figures but two tablespoons should be sufficient you can add mustard seed in bengali household they add mustard seed i'm going to add a good heap teaspoon of to cumin whole cumin seeds now it's going to snap crackle and pop this is dry kashmiri chili um i'm going to add for these this is four cloves of garlic just slices wonderful all that flake that's fragrance of the ghee beautiful absolutely gorgeous phenomenal flavor lovely fragrance there you guys really hot the garlic has colored to perfection and now we're going to whack this in to the dark yo check that out check that out wicked beautiful now you have to do this fast as possible put a lid on let that smoke and everything sort of um infuse into the dal i'm gonna let this simmer for two minutes and i'm gonna put the coriander and then another couple of minutes oh check this out that layer of ghee coriander the mordom area wonderful this is a work of art mama how does that look gorgeous beautiful yeah i think we need some snaps get some shots of this i'm gonna yo ladies and gentlemen check this out this is dal bhuna at its best lovely fresh coriander the green and the yellow the vibrant colors this is the colors of south asia and the spicy red chilies green chilies now yeah this is amazing turn the gas off give this a nice little mix mama zoom into this this such a humble curry oh wow the cumin look at that the cumin the coriander those booner onions tomatoes beautiful absolutely stunning phenomenal curry there you go that's a bay leaf there the lentils thick thick dal gorgeous there you go put a bit of green chili [Music] the kashmiri red chilies another these wonderful now all it needs is a wedge of lemon right ladies and gentlemen taste the time cameraman zoom into this this is dal bhuna at his best look at the thickness this is nice thick um oh there you go like a thick porridge type of consistency still steaming away now the wedge of lemon has gone into my so give it a nice little there you go ah there you go how does that look yeah look it up this with a bit of rice or naan bread beautiful let's try this bismillah um i'm not just saying this mashallah this is very nice even though if i say it myself lovely spices in there because if you have a taco dal it's normally the turmeric powder whereas this this had a lovely curry powder coriander powder chili powder and all these amazing whole spicy like the cumin the bay leaf it all brings out and it smells wonderful as well but just before you eat it put a drizzle off fresh slice of lemon juice and have that with dip it with your tandoori roti naan bread or just chow the
