How to Assemble 3-D Cookie Wedding Bouquets (Part 2)

[Music] hi Julia sure as I said it's wedding season and we've got another wedding project here I'm today I'm making wedding bouquets like little bridesmaids or bridal bouquets you'll see finished examples of them here I've got a lovely floral arrangement all done with sugar or various forms of edible things on top the under liner to it is the eyelet lace doily that we did in a previous video and then the stem is actually all cookie - and I'm gonna show you how to put that together I've talked about that briefly in my case pedestal video as well for now they're actually stuck into styrofoam for storage purposes I will probably lean them on their sides later you know and they'll get handled and picked up later but we're safekeeping for now this is how I like to store these so have some styrofoam handy for this project for both assembly and for later storage okay what will you need to do this project it's a multiple component project and I would say it's rather advanced so you know plan ahead if you're gonna choose this particular project you will need for the stem which will start assembling first about ten one and a half inch or so round shapes with the hole cut in the center and I cut the hole in the center with an ax Tico one quarter in it one quarter-inch pastry tip and those will get stacked together you'll also need a dome of some kind that will sit on top of the doily to create some height for the bouquet in another video I talked about contouring cookie dough and also dipping it to cover it so you can actually contour dough and dip it with royal icing this one's been dipped in white royal icing and use that as the dome alternatively if you want to save steps you can also shape the domes fondant this is rolled fondant which dries hard in hemisphere shaped molds and I'll have the source for those molds in my video description to create a shortcut dome and this is the one we'll actually use is a little bit smaller and it covers less of the doily and then the the final thing that you'll need is actually the finished eye that lace doily so refer back to that video you can do a planar under liner if you'd like I just happen to love the elaborate lace look of this so we'll set that aside the first thing we're going to do is put the stem together then we're gonna come back do the arrangement on the doily and then stick it all together okay so let me get my clasp is on for this so for the stem again I said you need 10 to 12 pieces just to have enough handling room if you actually want to pick this up and the structure I've got is I've got a lollipop stem in here and you want to leave enough on the bottom so that you can stake this up later while you're assembling it you want to definitely have it stuck into something and have some some there a little piece of parchment down so that you're not gluing onto the styrofoam and then we're just gonna stick them all together with a thick royal icing glue this is brown to match the gingerbread down they go I'm also filling in around into the hole in the center so they're stuck to the lollipop stick as well I like to do this part first because it requires the most drying time before I can handle it and you want this super secure before you start loading the flower bouquet on top you could conceivably do this without the dowel in the center but I think it keeps it gives it more stability especially if you plan to without the lollipop stick in the center especially if you plan to pick this up and move it around later I have done it without and I'm gonna leave a little bit also on top if you have a hole in the center of your door your doily leave a little on top to stick through the center of the doily you don't need one in this kit because this will be lying pretty flat I don't have a hole in the center of this one so I'll need to cut off the extra lollipop stick once this is completely dry okay set that aside to dry for about a half an hour then we're gonna come back in fill in the gaps and file it down so it's nice and even all the way around so this is when I glued together a day ago actually you don't need to wait that long let me get that dome out of the way we're not ready for it yet you see it's got a lot of gaps in it and we want to fill those with it's been filed down I just used my micro planer ran it up and down my micro planer to get it nicely leveled off all the way around but I want to fill it with a little bit of white we're gonna actually wrap the this with a frosting sheet in a very special way and it was just look a lot nicer if these holes in between the disks are covered to some extent so I'm gonna just this is a thick royal icing white and it looks really messy now I'm just trying to get it into some of these holes here and it'll clean it up I'll take an offset spatula and just really smear it so those are completely filled and it's pretty smooth all the way around so you go a little bit more white in here and all these these little gaps filled and this will just make that frosting sheet that we're gonna put on it by that much platter now if you're not gonna wrap this immediately with with a frosting sheet you want to really make sure this icings wiped flat and smooth because otherwise it'll be able to create a lump when you put the frosting cheese down on it later we're gonna wrap immediately so some of that lumpiness will actually smooth itself out okay so we're gonna cover it with the frosting sheet I've measured the height of my my stem and it's about three and a quarter inch tall so that's the height I cut it and I didn't need just enough to go around I've got a little bit of extra we'll trim that extra when we do that then I'm gonna put some stripes of wafer paper on top of it to kind of simulate ribbon wrapping around the handle so got my sponge brush and just enough to make this tacky I don't need a lot I don't want to see through it and if you get too much corn syrup on it it will actually show through I see that looks like a lot there somebody try to spread it out it'll actually seep through and leave a little spot we won't be seeing the handle too much because it'll be underneath the bouquet but I'll try to make these as perfect as possible so just tacky that ought to be close to enough okay the easiest thing to do it's actually to kind of roll this on to it though you can do it different ways you want to press it in make sure it's made solid contact wiping corn syrup off my hands because they'll get on the face of this and I don't want to handle the rest of it too much because I don't want to over accentuate any lumpiness that may remain in the cylinder so most of my pressing is happening in the back where there will always be a seam I'm trying to keep dirty corn syrup e hands off of it because the corn cereal gets on it it'll be the shiny spot that you may not necessarily want to see I just trim off the extra light at the seam and the white handle could be just fine got some pre-cut wafer papers that can go down wait for paper is a different type of edible paper it's a little more sheer and if you don't want to see through it which I don't really want to in this case I've backed it with an extra frosting sheet so I'm just going to stick a couple of those down equally spaced apart same kind of concept it's a little bit of corn syrup now I pre measured these and pre-cut them and had them stored in an airtight bag a resealable bag because if they're exposed to the air they will get brittle and dry and they will then break when they go around this something this this circular so I want to make sure my seams all end in the same place so I kind of Center the middle point of the strip on the opposite side of the seam so that when I wrap it around the back the seams coincide in the same place because we're going to be putting you could be putting some dredge A's or little sugar beets up and down that seam to simulate pearls okay see you up there tack it down and again not press it too much other than on that back seam you can't go too crazy with corn syrup and get wafer paper to wet in which case it'll dissolve so again just tacky so there you have a covered handle on the example that I have in the front I actually took some tiny brown royal some I made some tiny beads with brown royal icing a beadwork consistency and dressed it up I also lined the back seam with gray Jays to simulate pearls but this is going to suffice for today because I want to move on to decorating the dome which is really the fun part and I'm gonna choose this smaller dome here it was made out of fondant you want to make sure you use a fondant that has a large amount of tylose in it so it dries overnight into this shape if it doesn't dry solidly you won't be able to mount these flowers on top because they'll curious they carry a certain amount of weight and the flowers will collapse the dome but I know these work because I've used them before the other thing I did before mounting it as I filed down the bottom with my micro planner just so it sits a little more flush against the doily oops I'm gonna take now I'm working with white icing glue because I'm gluing onto white I'm just gonna mount that right in the middle I have a whole nother series of videos coming one very shortly about how to make wafer paper leaves and flowers and we're working with wafer paper leaves today really sheer and delicate and I will have a subsequent video that talks about how to make royal icing transfer roses like these these are all made out of royal icing piped in advance left to dry and then they peel off the parchment paper that they were pipe once piped on when you're ready to use them this was when I piped in two tones of royal icing light in the center dark on the outside and these this one was done all dark and shimmered it up with a spray of pearl dust using the PM a pearl PME brand pearl spray so there are different ways you can treat those royal icing transfers once you've done in them I find that a mixture of flowers kind of different tones and shimmer often look nice decorated on top of these I've also got some smaller royal icing transfers little white flowers they will use to fill in some of the holes and then lastly some bows made out of wafer paper that are also good filler material so I'm gonna just start by arranging them this is a process of a trial and error for me I use white so that I can also you know I can shift things around quite a lot as I like you know as I need to without you know messing up the underlying lying icing or cookie so I'm gonna I usually start with an anchor rose you know just positioning one all right like it and then I'll work from there actually most often I'll start arranging things just kind of putting them down without gluing anything down and just getting a sense of the visual layout you know before I start anchoring anything down I'm gonna probably decorate the front face of this and then go ahead and mount it usually this whole decorating process on this particular project might take me half an hour or more depending on how fussy I am so I like that there I kind of like that big bow where I placed it so I'm just going to put a little bit of glue here to hold that that way for paper bow in place I have another video coming up it's sometime in the future about how to make these bows they're really an extension of making way for paper flowers you get them a little bit of wet just a little bit wet and then they then they've they've been nicely into shape I think I want a two-tone flower here because I've got or a different color flower here because I've got that yeah maybe not maybe we'll use the small rose here cuz I've got that one town rose there and then I'll just go ahead just make sure you know you're anchoring it to the dome itself and leaving enough of the doily face showing did you want to see some of that this is where I start filling in with leaves just tucking them into little spots I think I need a smaller leaf and the foreground here go in between here and will keep on going in this manner until the whole dome front and back are completely decorated little flowers on top tend to look best so I think what we'll do a little white filler flower in here it's kind of like a puzzle so I've got the front half of it largely decorated I love using a white dome because I'm using white icing and if there are gaps it's just less likely you're less likely to see the gaps because of the white background on white however where I have them this is where a small dredge a is these are a four millimeter dredge a come in handy they can fill little holes quite handily and I'm tucking them down that quite the same way as I do the other I have a little flaw in the icing here you know I could cover that with a flower but I kind of I think that's distracting so we'll leave that be I'm gonna put a few more little gold beads down just to kind of even out the shimmer so they're little highlights throughout the front here maybe I need another one right on on this leaf let me turn it right here some hold dab of icing will do you find you've got too much tweezers are handy for this task as I just discovered if you have your I have too much icing here so let me let me clean this out take that off with my trusting needle too much on under the beef and then put that leaf back down another handy use for the trusting needle is to get into small places like that to really stick those pieces down in addition to cleaning out extra icing like I'm doing right now but this completely dry at least a half an hour and then will before you attempt to put it on top of the stem so I've got my stem or handle it as it we're now back in front of Minh for this step it's nice to make sure that it's sitting as flush against the styrofoam as possible and not leaning to one side or the other I think I'm cleaning a little bit so I'm gonna try to move it because we're gonna be mounting the piece on top and if it's leaning it just everything will look a little wonky that way so I'm back to my brown glue you could use white here - it's not gonna be seen and I'm just going to take put a little bit there if you had a piece of the stem sticking up and a hole and your doily perfect that would add extra security if you don't this is fine too as long as you don't go waving the piece around now I want to set this on here make sure it's centered both this side to side front to back the way I'm looking at it now and then also side to side so that way it'll be nicely balanced I think I can come forward a little bit if you had wanted to do more detail on your handle you would have wanted to do it before putting this piece on top like dots and things like that cuz it'll be hard to decorate underneath it at this point now what I want to do is do a little detailing on the side because the sides are now more visible than ever so I'm just gonna mimic what I did up front I'm going to put a little gold bead right in the middle of each of these areas and that takes just a dab of dab of glue and then I'm going to do some white dots right along the edge I'm just going to do a part of this you get an idea of how it's going to look that's not my glue that's my dot icing doing the front face for you as an example I'll get those gold beats down first because then you can do the white beats afterwards on the edge without without messing them up because the gold beads will already be in place you can leave it like that if you want but I like it to have a little detail on the edge because they had just so big and visible and here's where my icing a beadwork consistency comes into play I'm gonna hunch a little bit because I want to get down and see what I'm doing here I could elevate this piece or I could get on my lower chair for this task it's nice to be at eye level for this I think I can fit about five or six dots on each little loop and I'll rotate this around so you can get a better view as I go and of course you'd want to go all the way around there you have a detail on the edge and you can do any number of things as far as detailing on the edge and then there's the last finishing touch I want to attach some wafer paper ribbons to the bottom to give the sense that the ribbons on top and those that are wrapping around the bottom are actually you know part of the same part of the same ribbon so I'm going to attach some pieces down here to kind of suggests that these winding up the sides are tying off and the ribbon making of these were wafer paper ribbons is a subject of another video really easy to do I like them because they're so delicate I'm just going to attach a few of a little bit of royal icing glue to the underside here back to my thick white icing and I kind of kind of like how that looks so we might just leave it like that there you have it a
