what makes a good bang me sandwich for me it all starts with the bread itself the perfect bread for bagni has a very thin and very crispy eggshell-like crust that shatters when you bite into it the crust is so thin that sometimes cracks will appear when a freshly baked bunny starts to cool down after it comes out of the oven buying me is a lifelong passion of mine so a few years ago I decided that I really wanted to learn how to bake it at home I started this channel to share the knowledge and techniques I've learned over the years so if you're ready to get better at baking by me with me then consider hitting that like button and subscribing to my channel so let's get started the recipe I'm sharing with you today is meant to give you the highest chance of success with common ingredients first off bread flour we're using a strong flour here with 12 to 13 protein content we're also using cold water because the dough temperature during mixing will rise slightly instant yeast sugar salt we're also using ascorbic acid which is the Acid found in citrus fruits like lemon it's a vital ingredient in bang me because it strengthens the dough and makes the dough more tolerant to over mixing and overproofing most buy me breads baked in Vietnam also include various dough improvers some of which may not be available to the home Baker instead of that we'll use an egg which is a natural dough improver all of this ultimate results in buying me with greater volume and thinner crust which is what we want [Music] thank you foreign [Music] foreign [Music] thank you [Music] thank you [Music] hard drive [Music] foreign [Music] the oven with two pans as you see here for phase one place the bunny in the oven pour boiling water into both pans to generate Steam for phase two let the steam out to create a dry environment [Applause] [Music] [Applause] [Music] thank you [Music] foreign [Music] [Applause] [Music] [Applause] [Music] hey stupid [Music] [Applause] [Music] [Music] foreign [Music] I hope you enjoyed the video and I hope it inspires you to bake buying me at home I just had a few notes on the recipe itself so it's not a typical bun me recipe it's definitely geared towards the home Baker so one thing I failed to mention is that if you want to save the buy me for later you can actually store it in a sealed container when you're ready you can just pull it out and put it into a warm 350 degree oven for three minutes and the crispiness comes right back even on Fresh bakes sometimes I'll just put the bread back in the oven for a little bit and get an extra bit of crispiness there um it's a pretty challenging recipe as well you don't need to be a baker but having some baking experience definitely helps you here if you run into any problems or any issues let me know in the comments if I see start seeing a pattern then maybe I'll create a some content around that I plan to follow up with a like a tips uh collection of tips and troubleshooting because by me is quite challenging so let me know what what problems you run into okay and I'll be glad to help um finally uh buying me recipe baking at home isn't for everyone so if you have a bun me shop that is close to you definitely buy bread from them and make sandwiches from there go out and support the local bakeries local Vietnamese sandwich shops because they're doing some amazing work my secondary goal for this video was actually to show people like the craft and knowledge and the technique that takes to actually make a bread like this it's not easy so um I I really appreciate the Bakers out there doing it on a day-to-day basis so with that I hope you enjoyed the video and uh Happy baking everyone thank you bye
