I regret that I regret that so much in today's video we're going to revisit freeze-drying a watermelon to see how much of the water we can actually pull out of it guys this is a big watermelon that Callie is spinning around and we want to do an experiment in the past we did do an experiment for watermelon we put it in our freeze dryer and we freeze-dried part of it but we didn't have it in really good contact with the trays and we didn't have very much of it there's only a few slices in there and so the result we got was interesting but very inconclusive today we have a new watermelon and we're gonna use five trays in our freeze dryer and see how much of this we can freeze dry at once here's the basic idea we've tested small-scale freeze drying on watermelon slices before today we want to scale that up and see how much of a watermelon we can put in our freeze dry out once and see what happens to it how much water are we really extracting from a watermelon and are there other methods that work well - the goal here is to measure the watermelon slices going into the freeze dryer before and after the process to see exactly how much of the weight of the watermelon is from water also we want to see what a lot of watermelon slices look like after you've just pulled all the water out of it so it's not watermelon mmm Ellen membrane waterless melon here's my thought I don't know how much of this watermelon we're actually going to be able to fit on the tray so we should just get the trays lay them out and just start slicing and putting it on once the trays are full then wants to take all of it back off of the trays and weigh it so we have a total weight of all of the melon going into the machine so we can compare that to after we've freeze-dried it we can weigh everything again and see how much weight it's lost after measuring everything we have thirteen point two eight four pounds of watermelon sliced up on these trays so we're gonna put in the freeze dryer and see what happens to it probably for like 48 hours to make sure it really sucks everything out [Music] I'm just gonna call it liquid yep say it's not frozen mango is closed it's called the watermelon yeah so in theory that's going to freeze for about 11 hours and then dry for about 24 we may add even more drying time on to that to really get it to suck all that moisture out because one thing we definitely do know is that there is a lot of moisture we've got a little over 13 pounds of watermelon in there we need to find out how much of that is water [Music] maybe on the inside there's something but for the most part that's dry let's take some quick measurements here to see how much weight we have left so every tray still has the original weight on it so this one was four point three five pounds and we are down to two point one eight nine pounds this was four point eight four one it is now two point two five three four point two six one down to two point two three three four point seven five seven down to two point three one seven this was a heaviest at 5.15 is down to two point three three five we had we had thirteen point two eight four and we're down to one point two five yeah almost exactly 11 pounds lost now to 13 that's bizarre but also the strangest thing about this to me is the smell I really was expecting this to smell good this smells like veg like rotting vegetation almost I really think it's the rhyme the lorry drying out is not really Pleasant it does it just smells like you you know if you've opened the bin we throw your guard work yeah smell bits it's not pleasant it's not like a bad strong smell it's overpowering but that is pretty intense um so my so just I refer I did my math right it means 85% of the was lost to water so we have only 15% of the watermelon that is 85 is water and 15 is melon what is the percentage of water in a human body we're not going to freeze-dry a human body about disaster sorry okay an important test what does it taste like [Music] I don't like it No do you nope it stuck to the roof of my mouth don't do that very strong I can't get very strong flavor and then the texture of course is like so many things that we freeze dry it just turns to powdery dust and it's not like it went bad it froze while it was still fresh mm-hmm you know we have to try to rehydrate it right yeah gross Oh looks like maybe didn't quite dry that because that was one of the big pieces oh yeah a lot of rind yeah that does look suspiciously flesh like suspiciously flesh like oh no it feels suspiciously flesh like it feels like raw meat [Music] even worse much much work yeah floats of course but we're just going to let it float in the cup for a little bit and see if it absorbs any water back in like dried plant huh nobody actually eats that part I just wanted to know if I could bite you up the answer is yes and I regret it all right we've got here a little magic bullet style blender we're gonna see what happens to all our extra dry watermelon slices here in our blender ooh [Music] you know what 95% of the comments are gonna be now right we're not making cotton candy out of it it's not gonna work not even a little bit you could hand that to anyone and say guess what that is just by like looking at it and none of them would come up with watermelon just by looking at it and tasting it me it smells like alfalfa when I had a pet bunny this is what it smelled like that is 100% watermelon I would like some watermelon on my watermelon please [Music] the fresh watermelon almost masks the taste of how bad the powdered watermelon II but not completely I'm trying to figure out why it's bad - what yeah cuz watermelon good watermelon without the water strangely not even close to good there's a taste in the freeze-dried watermelon that isn't in the normal watermelon yeah honestly fat and it concentrates the plant flavor and this doesn't happen with everything because I've tried freeze dried peaches we've made freeze dried pineapple which is amazing like I love unfreeze dried pineapple but freeze dried pineapple might even be better I don't know they're just different but equally good kind of thing what watermelon is so clearly better if you don't freeze dry it or water not has been rehydrating for a bit in the cup did you just light watermelon on fire I did oh oh oh it kind of looks like the watermelon now but like oh no it's sad here is regular watermelon what with it holding its shape and all that this looks like a weird tongue that I pulled out of something cool what I am gonna try it oh oh I don't want it here I'll give you a you a choice it's like accordions you can either try the sake water boil and squeeze water back out of it would you like to try the soggy watermelon or the lightly posted watermelons [Music] I made it work me too it's like wet spongy consistency like nothing with this consistency has ever been food that I know of it shouldn't be mine Julie all right I have another thing you want to try so this is a slice of fresh watermelon and by our measurements we removed 85% of the water I'm curious if we can remove 85% of the water just by like squeezing the juice out of this I'm gonna try 296 to get as much water out as we did with the freeze-dry are we to get this down to forty four point four grams that we'll be removing 85% of the water [Music] I'm gonna see what wait I ended up with here with all the juice that I managed to squeeze out I should also point out that what the Machine took was not this watermelon flavored juice that like water it was just the water itself so we already have too much in there okay we were going for forty four point four grams or something like that and we got 152 so when they not even close Wow so yeah this pulls out an alarming amount of water all of it overall I'm just gonna save it my favorite way to eat watermelon is the fruit just cut into pieces with no juicing no freeze drying definitely not turning into a powder definitely not lighting it on fire just it had to happen guys that's not all you know we've always got more for you see hit that box up at the top to check out our most recent video and we will see you in the next one and talk to you then [Music]
