[Music] [Applause] [Music] [Applause] [Music] good day everyone this is Tim and this is Singapore it's looking like rain but hopefully the weather will hold because uh later today I am heading off to a wonderful place called The Colony restaurant and it gets better because I heard it is an amazing Buffet one of the best if not the best in Singapore but we'll find out lot lots of lobsters lots of roasts and many many other stations and of course the drinks and what a way to celebrate the holiday so thank you so much for joining I can't wait to uh give it a try and uh we can try it together but first uh although I'm uh it's not raining but sometimes I look a little wet and uh this is a photo of me recently on a 99-minute walk to the subway it's not the rain it's the humidity so before we go I think I'm just going to change go to the hotel uh and then uh we'll take you along and hopefully the weather holds up and unfortunately the rain did not hold up so it was hot and more humid than [Music] ever so it is raining again and uh glad to be in here where even though it's raining outside it is still pretty warm so nice to be in here where it's nice and cool and the buffet hasn't started yet but there's already a line but the nice thing is it is moving quickly thank you Kelly million views right oh that'd be wonderful thank you so nice to get a table here and uh I'm still uh recovering from the heat so if I look a little bit sweaty uh my apologies there but this is such a gorgeous space here let me show you the room here just like the entrance the grand ceilings and uh they are celebrating the festivities and I think people are already getting started and I did a bit of reconnaissance already checking out the cold station and more importantly the hot food station with the wonderful roasts the grilled lobster and the wonderful barbecue here so I can't wait and while I was uh doing the reconnaissance a drink has come this is the colony version of a whiskey sour called the long journey and I guess in some ways it has been a long journey all the way from Canada cheers to you that is so good and refreshing a bit of whiskey a hint of sweetness and uh little bit of citrusy notes this is a good start and uh let's check out the buffet so I think I avoided the first Rush of the buffet and this is the calm after the storm all right and starting off a wonderful salad station and a little bit of potato salad is a nice way to start things off not too much with a little bit of mushrooms all over the plate that's okay let's see what they have next ooh tacos so this is a live station and they have Sirloin tacos and cheesy nachos and all that good stuff with chicken I think I'll go for one of those when it's less busy but uh let's take a look oh my goodness so this is the ice cold seafood station so amazing ginormous shrimp and I think those are mantis shrimp so let's go for one of these right here and the shrimp of a crayfish and and a ginormous crab and some muscles and oysters and after that oyster pancake at the Hawker Center I think I'm going to have a little bit of a pause to oysters from now on they were very good mind you uh just a lot of it and look at this although it is tempting as Chef is hard at work keeping everything restocked thank you so much little bit of sweet prawns and Yellow Tail a scallop Sushi and it is such a busy line but I have done Justice to the plate but wait as they say there is more a new section here so this is a shakery section and I think there is something steaming away in here let's see oh that is a C and Mushi and sorry if I steamed you up over there let's see a wonderful chakery area a lot of cold cuts some cheeses and what is this this is sea perch with a curry mayonnaise and oh smoked salmon right that is a lot for the first round and the beauty of doing a reconnaissance is that uh you know where all the food is and given that I have a lot of cold sea food think I'm going to go for some warm dip and I know exactly where it is come on let's go check it out for a preview of the hot food so this is looking quite festive I'm just going to grab a bowl and all I'm after is that wonderful orangey golden liquid over there wonderful elixir just a little bit and look at this Chef preparing all the Lobster thank you chef and I will definitely need to come back for that but for now I have my bis so that is an impressive first round and uh really grateful here because they are so attentive with extra napkins and wet wipes cuz they know I messy and his scissors that was a bit of work oh m very nice and as much as I would love to dig into this I was tipped off by Lyle that out there they have a more festivities with cocktails as well so uh really grateful of the tip uh so I think we can put this on hold and let's go check it out rightful for that so one for the road and I think they are beginning their ceremony so this is pretty interesting and uh the appetizers are not getting any colder so uh we have some [Music] time 2 [Applause] 3 good [Applause] job well thank you so much oh thank you beautiful tree lighting ceremony and uh it was uh it was pretty warm there I didn't realize I was standing by the door and uh even that little bit of Heat and the humidity got me so this wonderful holiday sangria would hit the spot and I am glad they did not have mold wine happy holidays very nice and with that I think we will start with the sushi or the Sashimi because this is not getting any colder it is actually getting more warm maybe a little bit of scallop Sashimi or sushi it's a one biter but very good and the Yellow Tail looks so refreshing a little bit of soy nice and fresh this is like chicken of the sea or tuna of the Lamb whichever one fits and closely related to Sashimi I'm going to try this wonderfully plated dish here I think this is a perch with curry sauce and this is the salmon rad give the ruad to try oh rich and smoky and creamy salmon is luscious and fresh and to cut all that richness little bit of dill and cream very nice and that Birch is looking delicious in a mosaic kind of away and oh I think it just comes apart so a little bit of seaweed I think little bit of the curry sauce oh that is heaven settle fresh perch with the Umami of the seaweed and uh a nice savory kick from the creamy curry sauce so now let's get to business let's try the crab extremely grateful that they give you the utensils a little bit of painbrush in the lobster bisque mop it up prevent any drips which is a hard thing to do oh very good all right let's break into this further pull out the [Music] cartil give it a crack and hopefully if it's perfectly cooked and gently hopefully it will come out almost but using our hands more dip oh oh very good I want to try the soup on its own oh a little cold but that was user error well worth it for the Christmas lighting and I think we'll need a little bit of bread this is an olive fuka let's give that a try in the soup maybe just a [Music] spoonful very nice so I think I'm going to finish this up and uh we'll go for the hot food station cuz it does look pretty amazing with all the lobster and the wonderful roast and that ginormous fish and I got to give that a try so we'll take your back once all this is done and it's always nice to have a couple of cocktails to choose from good start to the buffet a so that was a good first round and so nice to enjoy a buffet at your own pace no need to rush and you can just enjoy Sashimi is always a nice way to start off a buffet the clams nice and succulent and fresh but the crab in the shellfish always a little bit of work but I must say that mantis shrimp is probably the best I've had I've had many in Vietnam and they were kind of mushy this one had a perfect texture and a little bit of soup makes it even better and I notied a bit of redundancy the unagi sushi well I could have just gone with the unagi itself and again with a little bit of potatoes a good thing even better oh Ali well thank you so much for the tip it was wonderful to see the everyone celebrating and the light being lit up I hope you're enjoying the din oh absolutely and I think I'm going to go for round two enjoy all right thank you so much l okay so the buffet I think this has died down a little bit because people have taken all they can eat and they are enjoying which means it's a lot easier to go for uh the hot food stations so so many items to choose from and let's see we'll grab a plate first and wouldn't you know it this brings us to the Lobster station so I will definitely go for a few of those but I'll save them to the end while it's nice and hot so we're just right in the center of the buffet think a little bit of octopus a little bit of chicken and as they say this is tuna of ban asparagus and oh maybe a little bit of potatoes and this is healthy because it's vegetarian up are you okay and continuing on wonderful squash some Russell sprouts and ah the lobster bis oh thank you chef and I can imagine a more perfect pairing with the potatoes than that wonderful Tom is it a tomahawk tomahawk all right let's go for a little bit freshly grilled nice and medium number one which is a bit lean and number two which is not lean and a lot bigger and going a little bit backwards I think we got to try a little bit of this salmon with a crispy skin right over here and Chef is cooking up a storm as they say little bit of ham little bit of turkey beautiful sauces I think we will go for a little bit of morel sauce not a lot all right let's see what else they have okay this is the Italian station hi chef guon I saw you have the truffles here oh wonderful can I get a um maybe a truffle pasta or risoto yeah thank you [Music] oh thank you Chef Justin so I can't believe how much truffle Chef Justin shaved on that risotto and uh with all the meats and the risotto I don't think it can wait think I'm going going to grab a lobster and we'll call it for round two okay a nice looking round two and I got to go for the uh long journey drink and Lyle was telling me that there is a story behind this drink called the long journey and it was named after uh Mr Jones who was exploring the colonies and bringing back the whiskey I think uh name is Mr Jones first name Indiana cheers I'm kidding so all these items here are time sensitive from the risoto to the steak and the lobster as well so I can't wait to give that risotto a try let's see oh this is going to be good oh and it is good beautiful Truffles and I think it's tasty because Chef Justin when he was cooking the risoto put knobs and knobs of butter in it extra creamy extra rich and wonderfully heavy-handed with the truffles all right Lobster next so it's really nice to have lobster all prepared and uh let's see and I'm glad I did not go overboard on the cold section ction pull this out was the flicker ah wonderful cut a little bit and it has loads of butter in there already very nice and it's always fun to start combining the flavors so a little bit more Lobster with a little bit of the Truffle risoto I can't think of a more decadent dish so good but that steak is getting cold and it is time sensitive oh this is kind of a a butter knife and it's just cut through it like butter and a little bit of the morel sauce it just melts in the mouth so tender and flavorful perfectly cooked and I think I will scoop up a mound of potatoes with the [Music] meat perfect bite got to dig into that salmon and hopefully the skin is still nice and crispy which I think it is and uh wow usually with fish I stay away from that at the buffet but this is nice and tender and Flaky a perfect translucent Rosy blush perfectly tender and to contrast that let's try the skin delicately balanced crispy and Saucy so you know round two is a quick one and I'm going to finish this up and I'm actually getting a little bit concerned because I didn't realize how many stations there were from the dimsum to the traditional Singaporean dishes especially the array of lacka so I've got my work cut out for me m one down many to follow round two done and dusted in the most enjoyable way and that Lobster I had to use a lobster bis wonderfully rich and creamy and flavorful and I don't think I did Justice to the mashed potato those were the fluffiest creamiest richest potatoes I've ever had heavy and light at the same time and uh still amazed how they do that but let's go for for the next round it's going to be a wonderful evening come on all right I think I am slowing down but uh oh look at this so this used to have all the Ducks and the rose hanging and I think now they are being topped up but there are still quite a few hi chef sorry [Music] oh can I get a little bit of the highand chicken oh thank you Chef so that was a pretty looking plate of food and a large one at that think Chef was just as heavy-handed as Chef Justin was with the truffles let's see I don't know why I've been taking my time Chef's here have been uh keeping the this all soft and let's see maybe a chicken sa just one it's actually harder using the tongs with the skewers little bit of peanut sauce some Falafel beautiful Basmati and the butter chicken lamb and the wonderful nuns and a strawberry Lassie harder to extract than you would think and what is this we've got some tendor chicken but next to that we have some Tandoor Lobster this is the first time I've seen Tandoor Lobster all right and moving on we have I think this is the Asian side ah this is a hearty soup which I'll make sure to get some later with TR and fish Maul and gko nuts kind of like the Asian manoodle and let's see some veggies and this is Clay Pot rice with a wonderful fatty sausages not too much and on the plate you won't tell I won't tell and let's see beautiful prawns I think this is a noodle dish and uh oh look at this those those are salted egg yolk chicken wings and as full as I am I cannot resist the egg yolk brings a Sandy rich yoky flavor and I got to try the fish just as pristine as it was uh at the beginning dig in here Sor I knock you around a bit okay just a little bit Ah there we go all right and as much as I love Singapore crab they're too much work so I think I'm going to go for the sauce and these wonderful fried buns just a bit and the crispy fried bun next to it uh touching the sauce hi Chef Wong hi can I get a lxa please oh thank you so I think a little bit of qu eggs Lobster balls fish cake and these are cockos cockos in your sure let's try [Music] it all right thank you Chef it's my pleasure enjoy your dinner Locka doesn't wait for you you wait for it and I just had to hurry back to give the Locka a try but look at this this is the plate I put together and this is the plate chef put together notice a little bit of difference much more elegant but we got to dig into that Loa all right right and let's see oh the wonderful sauces the spongy tofu uh I think this is the lobster ball and I have to give this a try first they have a lot of lobster here and it's wonderful they incorporate this into the laxa very nice but I got to go for the noodles let's dig in a little bit of fish cake and I'm glad Chef did not put too much noodles in here just enough and a rich laxa broth not too thick just enough the broth is Rich and silky a little bit Smoky little bit of Tang but so much depth of flavor and a little bit of heat perfectly balanced very good got to try the spongy tofu even more flavor of that laxa broth and since we have the lobster ball let's try the tendor lobster looking really good M nice and perfectly roasted a dry heat with some Indian spices and I think a little bit of the laxa broth very nice but I'm kind of interested in the duck or the uh salted duck egg yolk chicken wing let's give this a try it is very nice crunchy coating juicy chicken wing and that luscious egg YY Sandy sauce or powder on the top very good and since my hands are messy this is a perfect time to go for that deep fried uh bun here or the manto what I'm trying to say with the trilly c yeah can't even speak with the chili crab sauce as much as I would love to go for the crab I think this is a near second place because there's just too much work with the crab and speaking of a lot of work I got to try the duck and the chicken that Chef has prepared and plated perfectly oh let's go with a luscious chicken it's probably the best chicken I've ever had this is a chicken breast but tastes just as tender as the dark meat and uh the wonderful Herby Sesame flavors it's Indescribable and indescribably good oh if I had more room I would definitely go for a bowl of rice with that but we have to deal with the circumstances as they are and just go for the duck oh look at these feathered duck so to speak unintended very nice and uh unfortunately I have quite a bit of work left to do too so I think I'm just going to leave you for now while I finish this up and we'll take you back for dessert a little bit of that mango Lassie [Music] cheers a beautiful mangol Lassie in the taste of strawberry I think I am moving to a crawl and uh I think I'm going to crawl over to the dessert line grab a plate first and this has been quite the meal and uh on our left I couldn't fathom to entertain a bowl of uh heavy Rich ice cream but I think I might have room for these wonderful desserts over here and at the very start this was nice and pristine and I got a chance to show you the before and now this is after which is looking still pretty good oh let's see so many many things to choose from maybe a mango pudding and this isn't just mango this is mango with mellow and a birds sest inside H let's put it here and an Earl Gray Cru what a nice way to have your cup of tea and eat it too so this is a chestnut shoe and let's stay away from the bread these are hard to resist gingerbread in the form of a parfait and Layer Two oh this is a pear tart with chocolate mousse all right I think I'm going to start to worry cuz I'm not sure if I can finish all these but we'll give it a try a pistachio macaron and eaten mess and let's see this is a white Christmas sphere kind of reminiscent of the Vega sphere with a flat top and apologies I have no idea what I'm saying sometimes times all right and now we reach the cake section and this I need to try a pandan Gula Mala cake malaka cake hope I'm saying it right all right moving on o look at this this is a beautiful mango cake kind of reminiscent of uh a wonderful Bakery in Manila I think it's called cantis with their signature cake and I think this is Ritz's interpretation of that right here on its side and finally some nice chocolate hazelnut Prine over here and look at this no chocolate fountain but a tower of Truffles and some traditional desserts some Indonesian inspiration and I think this is one of the I think it's a can't pronounce this let's give this a try number one and number two and while I can't pronounce it I think it is Quay and uh please correct me if I'm wrong but this is all I can handle my goodness so really enjoying this Buffet because you can enjoy at your leisure and everything is done perfectly and uh you can take your time and it's not a Sprint it's not even a marathon it's an ultra marathon Maron and uh I'm really feeling the effects but uh we are nearing the home stretch it is the last 20K and we can go for our Just Desserts as they say oops and a thinging of the cutlery and I remember this is reminiscent of the iconic mango cake from cantis but let's see if it tastes as good as can's cakes are the proof of the pudding is in the eating very nice different flavors from cantis but just as good layers of flavors and textures and mango and cream just missing the chocolate but speaking of chocolate we can go for the hazelnut Prine cake a little bit of crunch and just as many layers oh and as you're eating it the wonderful hazelnut crine crunch is all around mingling with the many layers of different flavors and textures very nice and very rich and again the folks here are so attentive a little bit of coffee very nice and I think instead of coffee we can go for this Earl Gray mousse type of dessert let's dig in I think we'll give it a crack maybe not think we'll set this on its side and let's dig in an Earl gry moose oh it's got a little bit of a crunch and some fruit compost on the inside beautiful bergamont flavor oh very nice a lady mentioned over at the dessert section that this was her favorite cuz she likes chocolate and uh I think this is a chocolate and pear tor oh and it cuts so easily and it's just a Chocolate shell on the outside little bit messy and let's see what's on the inside ah I believe there is a bit of [Music] care this is like Christmas cake in a chocolate Tor form wonderful mousse and uh I think that's Paar on the inside with a bit of cloves and ginger and all those warming spices and finally let's go for the sphere and I think we're going to give it its own room a little bit of Leverage so we can crack the top there we go let's cut into this ah ah and I know at the Ritz Carlton there's always the Spheres always have a little bit of surprise and I dropped a little bit of cookie crumb but that's the way the cookie crumbles let's just try it on its own when you're here well go for a lot of the dishes Lobster and the the steak but that Dome is delicious so thank you so much for joining this is Colony at the Ritz Carlton really nice very leisurely Buffet very elegant lots of stations everything is uh well prepared and it's kind of festive to see the tree lighting and uh all the people celebrating so again thank you so much uh for keeping me company as I explore Singapore and uh have the great meal so until we see each other again I hope you're keeping well I hope you're eating well and I hope you're traveling well and uh just a little bit of coffee and all the best to you and yours God bless and after that wonderful meal I decided to take a walk to enjoy the beautiful lights of Singapore and of course the Heat and the humidity
