anything got left over from Christmas Day can go into above and sweet and some recipes have been developed to use up foods that weren't finished so don't get wasted and out of these out of these moments came some classic classic dishes and bother this week is one what I've done here is I've cooked some potatoes but to the point where they're starting to break up so cook them drain them and then just let them cool down top those just on the side now for the rest of the bubble and squeak pan on the heat it's a medium to high just to start off with and into that pan I'm going to add some butter and some chopped shallots so I've actually chopped the relatively small some garlic just roughly chopped the important thing here is in fact and make sure that the shallots and the garlic don't catch so now I'm going to turn the pan down so they just sweat just leave those cooking gently for three to five minutes so I've got some savoy cabbage here so I'm now going to add those into the pan let's say just make sure the cabbage is nicely coated in the bottle so now just make sure that heats nice and low while that's gently cooking we're going to crush the potatoes that the thing with problems Creek I think is the potato needs to be it's not just a coarse texture but some irregular sizes of potatoes or something a little bit more mashed up than others now so that is now ready very complicated to mix it in and then I'm going to add to that so neat sound finally slice and just blogs in water and then just mix that in I'm now going to add some grain mustard and this is what as a mustard flavor this will also bring nice acidity to the mixture this is really a rough guideline I like my mustard somebody about this much mix it until you can see that the mustard seeds have been evenly distributed through the mix because you don't want a big mouthful of mustard seeds the mustard makes them it is one of the key things the mustard generates alive and that makes things juicy and mustard has a wonderful ability to do that so the mustard in the mix is really important now I'm going to make the sauce I'm what I've done here is I've put on cream in the pan I'm just going to bring it up to the boil or simmer so to this I'm going to add some lemon juice it's from Dijon they use grain mustard in the actual bubbly sweet mix the sauce I'm doing about the same quantity of Dijon this is just a light whisk I'll leave that another two to five minutes that sauce will be ready so I've got its tart ring a small baking tray so take the mixture and then just push it into the ring just the back of a spoon and just from the middle out that way you'll force the potato to the edges to the insides of edges of the Ring so now here I've got some panko or Japanese bread crumbs just wipe them in a pan and just fry them in little bit just to crisp them up but give a real nice textural contrast with the softness of the potatoes and then some parmesan right so all I need to do with that is going work it under the grill [Music] so now as you can see it's got a really beautiful crust on the top but also I like bubble and squeak where the actual bubble sweetmeats itself has been fried so what I'm going to do here is just pop this into pop and spit of oil in it and then just put that on a medium heat a couple of minutes and then that would be to be nicely gone okay so chop some parsley right the bubbler sweets ready it smells fantastic little drain and little plate now to finish the sauce with the parsley chopped parsley back into jug I've got in here poached egg over the top and then just girl of generous dollop just be in the moment we cut your leg and then that moment when it is and then golden beautiful golden yolk erupts over the side of the pattern that's pretty special it's fibrin beautiful and mmm it's all mine [Music] you [Music]
