I'm going to show you how to make a spiced sausage roll imagine blending a pancake with an onion bhaji that's exactly what this nice little twist is I think when most kids start to like bits of a curry house menu onion barge is one of them is one of the very first things because it's easy to eat it's deep fries and it's got the sweetness and the spicing is nice and it's very delicate tape some onions slice them salted them for about half an hour and then just squeeze the excess water out of them because you don't want these two to wex it'll interfere with the batter when you put it into the pan now for the mix flour some rice flour then to that the teaspoon of ground cumin then 1/2 a teaspoon chili flakes and then 1/2 a teaspoon of curry powder in the mix then I'm going to add some ghee in there I've put some finely chopped garlic and crushed ginger okay all right so now for liquid add some lemon juice some water I see the mixer will just start to thicken I'm going to add just a chopped coriander red a tablespoon of that and then finally the onions that's the batter mix done I'm going to leave that just to sit for at 10 minutes it'll just help the batter relax they'll get a lighter texture and put it into the pan low medium heat and then into the pan I'm going to put some ghee or clarified butter I'm looking for a thickness of something like that this is when I start regretting what I'm going to do next okay that's ready slide onto some parchment or disability - paper something about so there's my onion body pancake now it's time to assemble the sausage draw as this is a spicy sausage roll I've decided to use some spicy going sausages spice mixes is fabulous too soft they've got a very little bit of a kick but not much at all you can just use sausage meat and add some your own spices or you might want to play around with them or play around with different sausages what I've done is just remove the casings and this is detriments itself put a sheet of puff pastry take the pancake just lay there now if you handling mints that's quite useful just to wet your hands and then one stick as much I'm looking at some something about that length that should determine the thickness so that I want this meats to be to each end just roll it like that then just a quick hand wash roll pastry and then should just about just have enough of an overlap of the pastry to stick and then just gently push just be careful with the pastries quite soft and then just timber the excess pastry off I'm going to give it a nice glaze this is just an egg wash give that a nice glaze I've got some cumin seeds here just give a light sprinkling all I've got to do now is pop it the oven off of that right so while the giant sausage roll is in the oven I'm gonna make how I can it's basically a curried mayonnaise really simple in here I've got some mayonnaise I'm going to add to that the zest and the juice of half a lime here I'm going to add some curry powder give it a mix and then finish with some chopped coriander okay so now I'm just need to go and get sausage rock pop this onto a wire rack for about ten minutes just to leave it to call it a little bit one big family size the sausage right or one sausage rod big enough the hungry chef good eats also draws with your fingers cheese there is my spiced sausage roll
