so now going to show you my version of monkey bread monkey bread is basically it's a cinnamon roll in caramel sauce why no it's called monkey bread I don't know but it is delicious for me what works so was you've got this beautiful rich caramel a little bit of acidity from apple puree and caramelized pecan nuts as well so to begin with I'm going to show you how to make the dough place warm milk in a bowl add the sugar and the yeast I'll just leave this to stand for about 5 minutes now add the butter the egg yolk the vanilla and then just stir everything to combine it combine the flour and a pinch of salt in a big bowl pour over the milk mixture and using a spatula mix the flour and the liquid until well combined now using a mixer fitted with a dough hook knead the dough for seven to eight minutes or until it's soft and sticky to the touch place the dough in a lightly oiled bowl and cover it with cling film and leave it to stand at room temperature for about an hour then remove the cling film and press down on top of the dough with the palm of your hand the reason for doing this is to push out the gasses that have built up while the dough's been fermenting for that hour then seal the bowl again with the Keane film and pop it into the fridge for about 4 hours ok so with the dough resting in the fridge I'm now going to turn my attention to the caramel sauce to make that just pop a pan on the heat take some sugar I'm using refined castor sugar and then as the sugars heating up with a brush cold water just brush the inside of the panel now then so basically what you do with the water is you're actually calling down the outside of the caramel otherwise if you look carefully it will start to burn on the outside if you see it getting a bit too dark on one side you can just move the pan off the heat a little bit and give it another little brushing of water so this should take about five minutes and if you're looking for the in the pan now see it's nearly there also resist the urge to get a spoon and start stirring because it's quite likely if you do that that it will crystallize okay so that's now nice golden dark caramel now I'm going to add some Bramley apple sauce but just be careful when you're adding anything that's got moisture in into camera it will splatter so you're right on cue just have a smell if you add the Apple and the camera are still really hot the camera might start to burn the Apple if you can can smell that just a few drops of water just a really temperature down a bit so now I'm going to pour some of this apple caramel sauce into couple ramekins and just stir them brush them with butter I'm going to put the rest of this aside for finishing the bonds probably nice sauce to pour over them now going to add some chopped peak in the sand you can you can use walnuts almonds you can use hazelnuts writes and these can now be set aside and left a call so now to make the cinnamon butter just take some of the softened butter add some cinnamon and sugar and stir to combine until nice and smooth the dough's been in the fridge for four hours and went from surface we're going to do is that to cut this in two pieces and then just roll it out a rough kind of rectangular shape you want each piece to be under half a centimeter so that that kind of thickness the next step is to take the cinnamon butter and just put half on each piece of dough then with a palette knife spread butter any other dough and then on the top so once both peaks of the dough been rolled these are pop them in the fridge just for sort of 10-15 minutes to harden them up because the next stage of that is to slice them into segments about three centimeters stand these pieces in the ramekins on top of the caramel you will need approximately four to five pieces per ramekin place the ramekins in a warm place to prove for 20 minutes once they prove they're ready to go into preheated oven for half an hour so these have now been in the oven for half an hour they're ready to turn them out just to finish off and pour over some more of this beautiful Apple caramel sauce so there is my cinnamon roll in caramel sauce delicious you
