Hasselback Potatoes on the Pellet Grill

[Music] hey this is mark williams of swine life barbecue today i'm going to show you how we do hasselblad potatoes out here on the pellet grill now we're going to get them in this cast iron skillet get some butter some garlic some onion on top of them and let them get good and tender in that pellet grill it's gonna be a quick and easy dinner option let's get started so the first thing we have to do to get these household baked potatoes made is get them cut so what we have is a good sized baking potato all i'm gonna do is slice a little bit of this bottom off so it'll lay flat on this cutting board and in the skillet i got two wooden spoons here i put them on each side it's kind of a cheating method and just take your time and go down through here and just cut them up get all your slices cut in you can cut these about a sixteenth or eighth inch thick the thinner you cut them the quicker they're gonna cook as these potatoes cook these are gonna open up we'll be able to baste them with butter get a little bit more salt and pepper on them and just start building them flavors and that one's ready to go in the skillet now that we've got the potatoes cut up it's time to get them in the skillet all we're going to do is take this stick of butter and get a good coating of butter in this skillet just to get a little oil in the bottom keep them from sticking and then we'll start placing our potatoes in giving a little bit of room between each one that way they can kind of start opening up what i'm gonna do just add a little bit more flavor i'm gonna take a white onion and let it cook down with these potatoes right in the middle that's just gonna be additional topping for these potatoes once we get them in the skillet they're gonna need a little bit of salt a little bit of pepper so all i'm gonna do is hit em with a little bit of mississippi grit just right over the top and we're gonna place a pad of butter on the top of each one of these just to add one more layer of flavor got a couple of cloves of garlic we're just gonna sprinkle them throughout this butter is gonna cook down it's gonna roast this garlic really good just another layer of flavor on these potatoes so we'll get these over on the pellet grill i got it running about 350 today should be about an hour hour 15-minute cook we'll get it on keep a close eye on it and we're going to basin with butter throughout the entire cook the silverback's right up to 350. all we're going to is place this cast iron skillet right on the wreck and let the pellet grill do the work for us we'll get the lid shut here in about 15-20 minutes we'll come back out here we'll baste them potatoes with a little bit of butter touch them up on rub and just see how they're cooking so these hasselblad potatoes has been on the pellet grill for about an hour and 15 minutes we basted them about every 15 minutes as you can tell that onion's not caramelized down that garlic's cooked down the potatoes started opening up we're fixing to get them on the cutting board and get these toppings put on so we're ready to top these hasselblad potatoes first thing i'm gonna do is get all this buttery goodness out the bottom of that skillet brush them one more time of course that garlic and onions just soaked up a good bit of that butter butter starting to brown a little bit smells great and now it's time for the cheese so we're gonna go a heaping portion of some cheese this is a little bit of colby jack we shredded ourselves just because that cheese seems to melt a lot better than already pre-shredded we got some bacon bits go right over the top got a little bit of chopped ham i told you this could be a meal in itself right here come back my favorite a little bit of black olives spud max ain't got nothing on this and we got some chopped green onions bring a little color of course you can't have a baked potato without green onion and then one more time we're going to top it with just a little extra cheese and it's time to get this back on the pit all we're going to do place it right back on the grate let it go a few minutes we're just looking for that cheese to melt everything to get good gooey and happy and then we're gonna be back on the cutting board guys i think these potatoes are ready that cheese everything's good and bubbly we'll get it put on this cooler mat on my cutting board and come in and check that out man all that cheese is bubbly that butter's done brown i didn't say anything about this potato being healthy because that's a mighty fine looking potato we went ahead and removed one of these hasselback potatoes and got it on a plate so we get some good shots of it and start letting it cool off just as a quick recap we start off a good-sized bacon potato got it cut up just for them hasselbacks and got it in that cast iron skillet let the grilla grills do its job and then once they got good and tender with the fork we went ahead and put all these toppings on it and you can see what we got that is a feast in that skillet so now's the time i've been waiting on let's go in and see what this house is back potato is all about go ahead and break me off a little small piece right out of the middle of course i gotta get a little bit of extra cheese that's a pretty good looking bite where's the ribeye that's ready for steak right there you get them black olives of course i love black olives get a little bit of that garlic note believe it or not i guess that butter when we baste it went through and threw on that potato that's a heck of a hasselback potato you got to get in on this camera lady that's a good supper that's a wrap forced to date swine life give these hassle back potatoes a try they'll be great by their self or heck it'd make a heck of a sign for a good rib eye
