[Music] so the first thing we're going to do is saute onions and garlic with a little bit of oil over a medium heat you're going to cook the onions for just about two or three minutes until it's softened and then we're going to add the garlic we're going to cook this for about 30 seconds or so just until the garlic becomes fragrant and then we're going to add the ground beef I use my fingers to separate the meat before Sophos into the pan it makes it a little bit easier and it doesn't clump while it cooks so we're at it's finely chopped pepper you can use scotch bonnet weari pepper any pepper with a bit of heat I also added chopped thyme black pepper and salt and give it a good stir we're going to let this cook down and Brown and once the liquid has evaporated we're going to add a little bit more water and allow to cook for about 15 minutes on to the sender once that is done and we're going to add scallions give it a good stir and it's pretty much done at this point remove it from the pot and place it on the side to cool next we're going to make the pastry and we're going to do this by mixing together flour butter and shortening now this is a half to half butter shortening ratio I really wanted a pastry to have a little bit more of a buttery flavor but also still be very flaky I just want to do with my hands and roast it apart until it starts to resemble coarse cornmeal you could also do this by placing all the ingredients in a food processor and giving it a quick Oh except we're going to add ice-cold water and we're going to give it a good stir but we don't want to overwork it so let's just mix it until it comes together now the recipe with measurements will be linked below in the description box we're going to form this into a ball and then place it into a ziploc or cling wrap and place it into the fridge and allow it to cool once the pea tree house has no refrigerator for about half an hour we're going to divide it in half take the half we're not using and place it back into the refrigerator while we work with this half on a floured surface we're going to roll it fairly thin but not too thin I find that a little bit of a thicker crust works really well with this patty it's all about the filling to cross ratio now once we have rolled out the desired thickness we're going to use something like a glass or a biscuit cutter to cut it in circles I'm using a glass and this is actually the perfect size for the cat fat pan that I'm using now do not throw away the scraps we're going to form that back into a ball and repeat the process this recipe makes approximately 16 to 18 patty so we'll need twice as many of these circles place the pastry into the tart pan I know someone is going to ask so I'm going to leave the information on we're supplying a similar pan to this in the description box next we're going to place the cooled beef into the crust and don't overstuff this you do want to help your mom but do not over stop it next we're gonna make an egg wash by mixing one teaspoon on water with an egg yolk and we're going to use this to seal the corners of the patty lightly brush the edges of the pastry and then we're going to take another circle pastry and place it on top and press it gently to form a seal using a fork we're going to seal the edge together now this is going to ensure that the top and bottom cross our to be nicely sealed together and would not separate while it's baking [Music] now give it one little prick in the middle and this helps to release steam as the paddy is speaking once it's all done and just before it goes into the oven we're going to use the egg wash again to brush it liberally on the outside now this is going to give it a nice golden glossy color once it bakes place into a preheated oven and bake until golden now place onto a baking rack and allow to cool for just a few minutes before removing the base patties from the baking pan the pastry is still going to be warm so it's going to be fragile so please do this gently and that's all there is to making this patty now the crust is going to be light and flaky and the salient building nice and juicy the full recipe with measurements will be linked below in the description box if you like this video please give me a thumbs up and please be sure to subscribe to my channel see you next time [Music] you [Music]
