This looks fucking insane, I'm just so annoyed that short ribs are basically non-existent in Irish butchers because I want to try this so bad.
Also nice move with the beef fat in the potatoes, are you worried about impurities present in the fat at all? Your demiglace video has made me cautious of using fat like that but would love to know your input. Cheers for the video.

Does anyone know if this will work with boneless short ribs? Costco sells strips of boneless short ribs and I want to try it with this recipe. I don't know where the hell I would fine bone in like his.
Oh my, didn't know until now that Adam comments on here! This is a great recipe, and I can't wait to try it--I've been making tons of Adam's recipes in big groups with my friends (turkey, pot roast, cornbread, etc) and they've all loved it.

I cringed when he scraped off the soft connective tissue. That's the best part!
Made this last night with about 3.5 lbs of short ribs for 5 people and it was just the right amount of ribs. Replaced mashed potatoes with polenta since thats the way a restaurant we like does it and it was really good!
