[Music] so [Music] hello hi guys welcome to stefanie's for another episode uh and yeah today what we're gonna do actually is originally i actually have a friend who just started uh cool up baking business and it's all about filipino desserts and i was thinking well you know what we haven't really other than the blockchains we're really focused on uh filipino food in vancouver so yeah today welcome to our filipino food day but because of the new restrictions you're probably wondering why we're still doing food videos well we both live alone so we've decided to just see each other and i'm pretty much only seeing david and my mom so uh yeah baseball i'm kidding you're cool you're cool so let's head over to this uh little filipino gem and uh we're gonna get a whole bunch of stuff and see how it tastes let's go so our first three courses have come the first one is this beautiful chicken right over here classic in a south so it's just a normal roasted chicken oh and more stuff to come perfect oh wow nice beautiful thanks we've uh the chicken right over here now we have the beautiful i've never tried this before it's an eggplant omelette and apparently you dip it in this banana ketchup then you have the i think it's pansit yeah pancake panabak so this is pretty much a noodle dish with some anchovies some shrimp some eggs and some calamansi on the side then you have one of my faves is a sea sig so these are normally pork parts normally part of the pork head and on top of that i think you might even have chicken livers in there with an egg and then you mix it all together and it normally comes when it's kind of bubbling and crispy and it's crisping at the bottom so it's all about a texture dish and the rice is really cool too it's uh this one is actually uh seasoned with anato uh anato seeds which is what makes it yellow look at this beautiful piece over here i'm gonna dig right into this guy look at this beautiful wing and of course we're going to do is we're going to take some of this vinegar vinegar is one of my favorite parts of filipino cuisine oh let's put that back there so anyways let's try this chicken just like that to start off with but yeah with this nice little color on there oh yeah very nice seasoning a little bit sweet still very nice and tender we're gonna do a bit of a chicken bite actually i'm gonna grab this guy right here look at that whoa yes look at that and a bit of the rice and that's a heavenly bite right there beautiful now next up we're gonna do this beautiful eggplant omelet here now this is something i've never had before i've seen it on menus what we're going to do is we're going to dip it in this banana ketchup so anyways let's break off a piece oh yes and i love the presentation look at the little kind of end just in case you didn't know what you were eating you have an eggplant end at the end there oh look at that wow know that color too that color is really interesting yeah and dip it in this beautiful banana ketchup there you go all right perfect let's go oh yeah i like that a lot you get the beautiful kind of creaminess uh from the eggplant the eggplant's done really well so it's to the point where it's pretty much just a very nice creamy eggplant and then that ketchup is a nice little touch i just love that beautiful buttery creamy eggplant it almost looks like a filet of soul fancy palabak so this is you're gonna mix the whole thing together look at that so yeah you're mixing the sauce all together and then the calamansi is going to be squeezed on top at the end and it's supposed to be a very oh it's so fragrant and garlicky you can just smell that the egg just melting into it too oh beautiful absolutely beautiful yeah so here you go and a bit of that egg on there stupid thumbnail all right beautiful light right over here [Applause] oh yeah yeah nice saltiness to it you get a bit of creaminess that egg and a little bit of fishness but these beautiful kind of crispy shallots and crispy bits that mix with the really nicely textured noodles the noodles are perfect consistency that sauce is so good and yeah until white needs a calamansi because it is a bit of like a thick fishy but also a rich dish on to one of my faves and this is sisig so let's just break the egg eggplant here you go oh oh yes oh look at that wow there's gonna make oh this is coming off the bottom there wow uh the first time i tried sisig it changed my life i i never will look at a pork face the same way again and i'm french we like pork face a bit more of the calamansi on there yes look at that oh and it's really hot beautiful yeah all the bits of the pig with that egg and a bit of that chicken liver absolutely amazing yeah nicely salty mmm and it's all about the texture you get a little bit of fat a little bit of the onion in there a bit of creaminess from the eggs the calamansi adds a nice little acidity to it this with some garlic rice will for sure be fire so anyways let's look at this garlic rice right here and yeah let's do this bite right there and you know what just because we have to put some more vinegar on there yes the essence of life vinegar beautiful yeah don't hesitate to put the vinegar on there because it adds another dimension of flavor very classic just some lechon some egg and some more rice got the garlic rice of course why would you get plain rice if there's garlic rice available i don't know i have to reconsider your life choices but yeah so here you go i got the lechon right here and of course look at the egg just the way it's moving now i'm going to ruin this eggs today i'm going to put stick this pork right into its face oh look at that oh yes look at that a bit of the rice too oh yeah oh yeah never gets old yeah crispy pork belly egg and garlic rice how can you go wrong so this is kind of like a street food in a nice little brochure form these should be pork intestines and of course with the vinegar on top of that a bit full but i will always find space in my stomach for other animals stomachs or intestines i guess but yeah anyways i highly recommend it to go with the vinegar on top of that so intestine and vinegar let's go look at that beautiful char too i love that char very nice marinade of course it's a little bit sweet so it definitely needs that vinegar to go with it the char on the outside adds a nice little crispiness to it so we are not done there are a couple more things we're gonna do so now we're gonna kind of explore a bit more modern uh filipino food and after that i have a friend who makes the most amazing desserts we're gonna pick all this up and then we're gonna go right back to my house to try all these delights out let's go [Applause] [Music] we are back home now we have both our meals we have our beautiful giant bag from culinary and we have these three boxes which smell really good we took a took a sneak peek and uh ava's big shop look at this how beautiful this is so first of all the crispy pig ear like we just said ah beautiful onions on there we have all the sauces the crispy pata it's a giant pork leg and it's gonna normally come with uh we're gonna kind of pour this on top this one is called a gina tang calabasa so it's kind of a coconut stew with green beans and uh some uh pumpkin pumpkin yeah pumpkin and a bunch of other stuff and then look at this this one is outstanding looking just such a beauty and i love the presentation too coming with the banana leaf this one is called iniha napo and it's pretty much just a giant squid stuffed with tomatoes onions all the good stuff let's go let's dig right in and i'm gonna dig right into this crispy pork skin whoa look at that wow and you know what we have to do obviously too is yeah for sure some of that vinegar and i love how they give us lots of vinegar look at that look how it's gonna break oh yes oh beautiful [Music] oh yeah well it's a crunch on it because it is a pork here and a bit with the vinegar oh one of my new favorite snacks wow oh i wish i had beer right now very nicely crispy you get a nice texture and a bit of that cartilage right from the ear and then with that beautiful vinegar i love their vinegar crispy hotter now let's see oh i don't know how i i don't know how to attack this guy oh look at that oh look at that no way okay let's just do that i'm gonna break you off oh wow it even comes in its old bowl look at this beautiful skin on the outside yeah look how tender that is oh wow and of course one thing that's going to complete this 100 oh yeah of course so anyways we're going to pour it just over here oh man oh man oh i'm gonna give myself a pata on the back for this one anyways let's go okay okay this is legit really good wow must try for sure definitely try their pata it's so tender it's so crispy on the outside that vinegar is fire it is fire sauce wow and you get the nice bit of fat i mean just look at that look how the fat and the meat and the skin just the textures the fattiness but also the beautiful juiciness of the pork this is perfectly done mmm now let's move on to this stew [Music] because we've got to eat our vegetables now this looks really beautiful i love the color too and you know one thing i completely forgot we don't have rice but we do have something we can use the garlic bread so let's look for this garlic bread yes here you are so ava's bake shop uh so we used to work together and of course with the pandemic a lot of people have lost their jobs and especially in the travel industry which we were both in and a lot of us have found other things to do and you know what we have to make things work and in some way it's cool because you kind of do things that you really like to do and this is the example such a cool place i've seen amazing reviews everybody is just raving about these amazing breads wow look at the size of the garlic bread what really excites me is the cream cheese look it's like a volcano of cream cheese waiting to erupt so i'm going to try a little bit of this by itself but then i'm going to have to put some of that in there and yeah this is a once again called guinetan calabasa i know calabasa is a spanish word for pumpkin so i'm almost there so i'm making it anyways look at this pumpkin so much pumpkin and yeah let's just give this a bite right here oh oh wow that's amazing oh it's so complex you get so much of the green bean but that curry is amazing it's so rich so creamy a little bit of sweetness very coconutty beautiful texture and get that that natural sweetness from uh yeah nachos from the pumpkin and then of course these green beans over here maybe with some garlic chips on top of that potentially wow i'm blown away that's really good look at this so you have the garlic bread with the cream cheese inside and it's so soft and pillowy and i'm gonna break it just like that wow okay we're gonna try it by itself first of all oh a super pillowy a bit of the garlic you get this beautiful that cream cheese is amazing in there it's kind of softer than usual so it's almost acting like a butter custard in some way yeah let's just dip you right in there oh that sound yes wow look at that oh so good look at this squid wow all right i'm gonna grab this side right there absolutely perfect look at that this beautiful bit of squid [Music] oh yeah oh very fresh in there now to see all the vegetables the onions maybe some garlic definitely some green onions too maybe a bit of a vinegary bite i'll grab another one look at that and the texture is really nice you got a bit of bounce so it's not completely kind of tender but that's good because you need a little bit of textures in there and then the beautiful crunchy textures of the vegetables in there if you're planning to kiss your uh your significant other uh maybe do it before this one this one is onion central for sure just had an idea i'm gonna do a crispy pata garlic bread sandwich yeah that sounds really good i in theory it sounds really good so anyways let's open this up oh wow [Music] and let's get some of this pasta here oh man you can just tear it off with your hands it's so tender look at that a bit of that skin yes look at that wow and there you go the sandwich of geniuses [Music] all i can say is that definitely works we got these desserts from ava's bake shop now i think what uh oh apparently you're supposed to heat them up for about 10 seconds oh let's unwrap you oh yeah look at that wow oh okay okay i see how you are and let's open you up oh yes okay now it's just all creamy and gooey and beautiful so let's give it a shot oh what this tastes like a guilty pleasure yeah wow incredibly pillowy soft you have that cream cheese you have cheese double cheese yeah delicious look at that beautiful makes it this color and we're just going to open this up oh look at that middle too might be some custard potentially i'm not quite sure actually what's inside didn't really ask but anyways look at that look at that beautiful dark color wow and look at that dark middle too oh wow if the earth was like this we'd all be saved so good no not sure what the middle is all i know is it tastes really good so yeah just came up with an idea and i think it'll work so we're gonna open it up like that look at that beautiful color oh i love the color booby and then [Music] let's put you there look at that right in there another scoop yeah [Music] look at that so a pandasal ice cream sandwich hey sometimes i have good ideas you know oh just saying if you have vanilla ice cream laying around and you have ava's big shot panda sauce just saying you know maybe maybe you want to put them together maybe you want to make an ice cream sandwich with that last one in there you know it's really good amazing [Music] ava's big shop also chose a croissant for their logo yeah great minds they think alike yeah that'll do it for our ultimate filipino day
