I do love the look of the steak at the end, but those potatoes looked amazing while they were cooking.

[Music] so today I'm gonna make steak not just any steak oh no this is a two inch thick porterhouse steak from a Cole's meetin fish and the port house has the strip loin on one side and the tenderloin filet on the other side and I took this out of the refrigerator about an hour ago to let this come up to temperature because you really don't want to put a cold steak in the oven because it won't cook evenly and to cook this beautiful steak I'm gonna use this this is one of my favorite things to use in the oven this is called a Tuscan grill that's great because you can get this up to a very very high heat and it's great for cooking steak chicken fish vegetables all kinds of things on this when I first got the Tuscan grill it comes with four each legs on it and I found that was a bit too tall in the oven it didn't make the food very accessible so I cut them down to two inches and I find this much more manageable size to use in the oven so when you're cooking steak inside the wood-fired oven you should really take into account all the different heat that's going on inside there so firstly you've got the radiant heat and that's going to be the heat from the fire itself and then from above from the dome but then you got the conduction heat from the floor underneath and from the heat has been transferred to the grill and then you've got the convection heat which is the hot air that's flowing around inside the oven so because of that this steaks gonna cook really quickly I want to do it medium-rare and it's only going to take about eight minutes tops to cook the steak so to get things started I'm going to pull coals on to the floor of the oven and then place the Tuscan grill on top of the coals so that gets really nice and hot [Music] and while that's heating up I'm going to generously season the steak with plenty of salt and I like lots of pepper on it too [Music] when the Tuscan grill is searing hot I'll pull it out of the oven and you'll know it's ready because you'll hear that sizzle as soon as you place the steak on it even before I turn it over you can already see how much the top of the steak is cooked just in the first few minutes [Music] it's been about five minutes the steak is getting nicely browned I'm gonna turn it over for the last few minutes that's about eight minutes and the steak is ready it's got this beautifully even crust on both sides and the edges it's really important that you let it rest so the meat relaxes the juices in the steak will evenly distribute and it will be more flavorful tender and juicy to eat and while the steak is resting I'm gonna make some smashed potatoes to go with it these are potatoes that have been parboiled in either water or olive oil then you gently press them down until they split I'll heat up a frying pan in the oven then pour in some olive oil and then heat the oil until it's smoking hot I'll add the potatoes to the oil and put the pan back in the oven for about five minutes turn the potatoes over and then back in the oven for another five minutes or until they're golden brown and crispy time to cut the steak cut the meat from both sides of the bone [Music] then evenly slice each piece [Music] then arrange the slices around the bone and there's my medium-rare porterhouse steak with fried smashed potatoes [Music] [Music]
